Today's recipe is an Italian style basa fillet with lemon and olives: an incredibly quick recipe that will satisfy your tastebuds!

4 basa fillets (white fish)
1 lemon
garlic
parsley
1 glass of white wine
50 gr flour
80 gr kalamata olives (pitted)
olive oil (extra-virgin)
salt and pepper

Steps:

  • Heat some extra-virgin olive oil in a pan with some garlic cloves and the parsley stems;
  • Flour the basa fillets and let them fry both sides for 2-3 minutes;
  • Pour the white wine in the pan and let it evaporate;
  • Add salt, pepper and the zest of 1 lemon;
  • Squeeze the lemon juice and let it cook for a minute or 2;
  • Add the black olives in the last minute of cooking time;
  • Serve immediately;
  • ENJOY!

750g waxy potato , such as Charlotte
6 sea bass fillets, skin on, 175-200g each
250g pack cherry tomato
handful black Italian olives
4-5 tbsp fish stock (preferably from the chiller cabinet)
4-5 tbsp dry white wine
basil , to serve

Steps:

  • Heat oven to 190C/fan 170/gas 5. Slice the potatoes and boil for 6-8 mins until just tender, then drain.
  • Butter or oil one large or two smaller shallow ovenproof dishes that will fit the fish fillets in one layer (a couple of roasting tins would work well). Scatter the potatoes over the base of the dishes, then halve the tomatoes and scatter on top, along with the olives. Set the fish fillets among the other ingredients then pour over the stock and wine, then season to taste.
  • Cover the dishes with foil and seal the edges. Bake for 15 mins until the fish is tender. Serve each portion on warm plates and scatter with basil.

Steps:

  • Preheat oven 190 C / Gas 5. Spray a baking dish with non-stick cooking spray or line with foil.
  • Rinse basa fillets under running water, and pat dry with kitchen paper. Place in a baking dish.
  • Combine the garlic and lemon juice with the melted butter. Pour the butter mix over the fillets, the sprinkle with parsley, salt and pepper to taste.
  • Bake the basa in the oven for 15 minutes, or until the fish flakes easily with a fork.

  • Melt butter in a silver saucepan over low heat. Continue to cook at a low temperature until butter starts to foam and then begins to turn brown. Remove from heat as soon as it browns and transfer into a bowl. You may run it through a sieve when you transfer the butter to the bowl, if you desire. Place a sprig of rosemary in the bowl and the lemon juice and let sit.
  • Pat fish down with a paper towel. Salt and pepper fillets on both sides. In a flat bottomed dish big enough to fit a fillet, sprinkle flour evenly. Place fillets in the dish one at a time, flipping on both sides to ensure they are evenly coated with flour.
  • Heat a couple tablespoons of olive oil in a skillet. Place breaded fillets in the skillet. Cook on both sides for about 4 minutes or so. Cooking time will vary depending on the thickness of your fillets.
