Risi e Bisi -- Italian style rice and peas image

This is one of the first solid food entrees for many Italian children. It is one of my favorites and I continue to eat it today, at 35 years and counting!

1 quart chicken stock (recommended: Kitchen Basics brand) available in paper box containers on soup aisle
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 cloves garlic, chopped
1 rounded cup Arborio rice
Salt and pepper
1 cup frozen peas
1/2 cup grated Parmigiano-Reggiano or Romano cheese, a couple of handfuls

Steps:

  • Place chicken stock in a small pot and warm over low heat.
  • Heat a medium sized skillet over medium heat. Add extra-virgin olive oil 2 turns of the pan, and garlic. Saute garlic 1 minute, then add Arborio. Toast the Arborio rice 2 minutes, then ladle in 1/3 of the stock. Bring to a bubble. Stir rice occasionally, allowing the rice to get starchy and the stock to cook into the rice. Add more stock when rice starts to become dry. Continue stirring and ladling broth until rice is al dente, 22 minutes. Stir in peas and cheese and season with salt and pepper, to your taste. Serve immediately.

Risi e Bisi, Italian Rice and Peas image

A classic Italian comfort food of rice with peas and chunks of ham.

2 tablespoons extra virgin olive oil
3 shallots, minced
3 garlic cloves, minced
1/4 pound diced prosciutto or other dry ham
1 cup Arborio or other risotto rice
2 cups vegetable or chicken stock
2 or more cups water
1 cup fresh or frozen peas
1/2 cup parsley, chopped
1/4 cup grated parmesan cheese

Steps:

  • Sauté shallots: Heat the olive oil in a medium-sized pot over medium-high heat. When it is hot, add the shallots and stir to combine. Let these sauté for 2-3 minutes.
  • Heat stock and water: Meanwhile, heat up the stock and 1 cup of water in a small pot. You want this at a simmer while you make the rice.
  • Add garlic and prosciutto to shallots: Add the garlic and the diced prosciutto to the pot with the shallots, stir well and cook for another 1-2 minutes.
  • Add rice: Pour in the rice, stir again and sauté for 2-3 minutes, stirring constantly.
  • Slowly ladle in stock: Ladle some of the hot stock into the pot and start stirring. Risi e bisi is cooked like risotto, and is supposed to be pretty soupy, so you need a lot of water and you need to stir it constantly. Let this first ladle of stock cook down before you add the next. Keep adding stock, letting it cook down and stirring until you're done with the simmering stock. It is likely that you may need at least one more cup of water to finish the dish, because all that stirring in an open pot means you evaporate more liquid than you would when you cook rice the normal way, i.e., covered. If you think you are going to need more water, add more to the simmering stock.
  • When you get to this last cup of water, add the peas: Keep stirring until the water has almost cooked away. Taste some rice and test for salt and doneness: Add a little salt and some more hot tap water if the rice is still crunchy - you want the rice to be a little al dente, but not so much you're gnawing on raw grain.

1 1/2 lbs fresh peas, shelled (you can use frozen but fresh is better)
2/3 cup long grain rice, uncooked (Basmati)
1 onion, finely chopped
1 stalk celery, finely chopped
1/2 cup dry white wine
3 cups boiling water
2 chicken stock cubes
3 ounces butter
2 tablespoons parmesan cheese, grated
salt and pepper

Steps:

  • Melt 2 oz of butter in a saucepan.
  • Add chopped onion and celery, cook until just translucent.
  • Add rice, cook a few minutes more, stirring to coat the rice with butter.
  • Add wine, 1 cup of boiling water and crumbled stock cubes.
  • Bring to a boil, add peas.
  • Reduce heat, simmer uncovered until the water has evaporated.
  • Add another cup of boiling water, cook until evaporated.
  • Add the final cup of boiling water.
  • Keep cooking until the water is almost absorbed.
  • Overall cooking time is about 20 minutes.
  • Stir in the Parmesan cheese and 1 oz butter.
  • Add salt& pepper to taste.

1 cup fresh cilantro, stems reserved
2 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
1 garlic clove, minced
1/4 teaspoon chili powder
Coarse salt and freshly ground pepper
1 cup long-grain rice
1 1/2 cups water
1 pound fresh peas, shelled (1 1/2 cups)

Steps:

  • Tie together reserved cilantro stems with kitchen twine.Heat oil in a medium pot over medium heat. Cookonion and garlic, stirring occasionally, until tender, about8 minutes. Add chili powder, and season with salt andpepper; cook for 1 minute. Add rice, and stir to coat. Addcilantro-stem bundle and the water; bring to a boil.Reduce heat to low, and gently simmer, covered, until wateris absorbed, about 15 minutes.
  • Remove from heat, and add peas (do not mix). Cover, andlet stand for 10 minutes. Discard cilantro-stem bundle.Season with salt and pepper. Stir in cilantro leaves.

5 cups reduced-sodium chicken broth
1 garlic clove
1 medium onion, quartered
1/4 pound sliced pancetta
2 (2- by 1-inch) strips lemon zest
1 tablespoon extra-virgin olive oil
2 tablespoons unsalted butter, divided
1 (10-ounce) box frozen baby peas
1 cup Arborio rice
1/3 cup grated parmesan

Steps:

  • Bring broth to a simmer in a saucepan, then keep at a simmer.
  • Meanwhile, turn on a food processor and drop in garlic, processing until finely chopped. Turn off processor, then add onion and pancetta and pulse until finely chopped.
  • Cook onion mixture with zest in oil and 1 tablespoon butter in a 12-inch heavy skillet over medium-high heat, stirring once or twice, until onion is softened and just beginning to turn golden, about 6 minutes.
  • Cook peas in broth 2 minutes. Strain broth into onion mixture, reserving peas, then stir in rice. Cook, covered, over high heat, stirring once after 5 minutes, until rice is al dente, 10 to 12 minutes. Stir in peas, cheese, remaining tablespoon butter, and 1/4 teaspoon pepper.

I love this recipe. You can use fresh or frozen peas with this. Using fresh peas, add them at the beginning. If you are using very young and tender fresh peas or frozen- add at the end. 1 tablespoon olive oil
1 tablespoon unsalted butter
1/2 cup shallot, minced (or use mild onion)
1/2 cup celery, minced
2 tablespoons dry white wine
1 cup medium-grain risotto rice (superfino Arborio, Carnaroli, or Vialone nano)
2 tablespoons medium-grain risotto rice (superfino Arborio, Carnaroli, or Vialone nano)
3 cups meat stock or 3 cups vegetable stock
1 1/2 cups peas (fresh or frozen)
2 teaspoons unsalted butter
2 tablespoons heavy cream
1/4 cup parmesan cheese

Steps:

  • Set Rice Cooker for the quick cook or regular cycle.
  • Place the olive oil and butter in the rice cooker bowl.
  • When the butter melts, add the shallots and celery.
  • Cook, stirring a few times, until the shallots are softened but not browned, 2 to 3 minutes.
  • Add the wine and cook for a couple of minutes.
  • Add the rice and stir to coat the grains with the hot butter.
  • Cook, stirring occasionally, until the grains of rice are transparent except for a white spot on each, 3-5 minutes.
  • Add the stock and peas, if you are using fresh, mature peas; stir to combine.
  • Close the cover and reset for the Porridge cycle, or for the regular cycle and set a timer for 20 minutes.
  • When the machine switches to the Keep Warm cycle or the timer sounds, stir the rice with a wooden or plastic rice paddle or wooden spoon.
  • The rice should be only a bit liquid and the rice should be al dente, tender with just touch of tooth resistance.
  • If needed, cook for a few minutes longer.
  • This rice will hold on the Keep Warm cycle for up to 1 hour.
  • When ready to serve, add the peas, if you are using frozen or very tender fresh ones; stir just to combine.
  • Add the butter and close the lid or 2-3 minutes to allow to melt and the peas to heat through.
  • Stir in the cream, cheese and salt to taste.
  • Serve immediately.

400g can kidney beans , rinsed and drained
400ml can low-fat coconut milk
½ tsp dried thyme
½ tsp ground allspice
6 spring onions , sliced
200g long grain rice

Steps:

  • Put the beans, coconut milk, thyme, allspice, 4 of the spring onions and 100ml water in a pan, and bring to a simmer. Season with plenty of salt and black pepper.
  • Rinse the rice a few times in a sieve until the water runs clear. Tip into the pan and simmer for 10 mins over a medium heat, stirring occasionally, before lowering the heat. Put the lid on and cook for another 5 mins until the grains are tender and the liquid has been absorbed. Fluff up the rice with a fork before serving and scatter with the reserved spring onions.
