OLD FASHIONED PINTO BEAN PATTIES - PINTO BEAN PANCAKES

Steps:
- Drain pinto beans well.
- Mash pinto beans to coarsely or to desired texture using a potato masher, fork or pulse in a food processor.
- Add diced onions, egg, flour, salt and pepper. Mix.
- Form into patties and fry in hot vegetable oil in a large skillet over medium high heat. Fry for approximately 5 minutes or until golden brown; flip and fry the other side.
- Drain on paper towels, and serve hot.
REFRIED BEAN CAKES
I adapted this dish from a Cooking Light recipe for black bean cakes. It packs a nice, spicy punch and can be made in about 30 minutes. Plus I've included a recipe for leftovers, that just might be better than the original.

- 1. In large bowl combine all ingredients except canola oil and mix well. If the mixture seems a little loose, cover with plastic wrap and refrigerate for about 10 minutes.
- 2. Separate bean mixture into 4 portions and shape each portion into a 3/4 inch patty (it is a rather loose mixture, not like sturdy burgers). Dredge each patty in remaining panko and get ready for a quick saute.
- 3. In large non stick skillet add 1-2 T canola oil and heat on medium. Add patties and cook 3 minutes on each side. Remove from skillet and serve with fried eggs and a salad, or salsa, sour cream and some spicy sriracha sauce.
- 4. If you have any cooked cakes leftover, make a spicy corn tortilla melt the next day. It's quick and delish. For each melt, take 2 corn tortillas (I use the 6 inch) and spread equal amounts of low fat mayo and srirscha sauce on inner side of each tortilla.
- 5. Sprinkle a T or 2 of low fat cheese over the mayo mixture.
- 6. Cover the cheese with a bean cake topped with pico de gallo. Top the patty with a little more cheese. Cover with second tortilla (mayo/sricha side down) and press down lightly so the bean patty will spread to almost the size of your tortilla.
- 7. Spray cooking pan with PAM or similar product, heat burner to medium and add tortilla sandwich to the heated pan. Cook about 3 minutes on one side, and right before you're ready to flip the tortilla, spray top with a little more PAM. Flip and cook another 2 or 3 minutes. Let cool a bit and serve with anything your little heart desires.
SOUTHWESTERN BEAN PATTIES

- In a large nonstick skillet, saute onion and red pepper in 1-1/2 teaspoons oil until tender. Add garlic; cook 1 minute longer. , In a large bowl, combine the refried beans, bread crumbs, chilies, cilantro, cumin, pepper and onion mixture; mix well. Shape into six patties; coat in cornmeal. , In the same skillet, cook patties in batches in remaining oil over medium-high heat for 2-3 minutes on each side or until lightly browned. , Place patties on bun bottoms (save bun tops for another use). Top each with 4 teaspoons of guacamole and 4 teaspoons of salsa.

Steps:
- Heat broiler.
- Place 1 1/2 cups breadcrumbs on a baking sheet and toast under broiler for several seconds or until browned. Remove; let stand 5 minutes.
- Mash beans in a mixing bowl. Add cheese, chile, toasted breadcrumbs, chili powder, cumin, oregano, and salt and pepper to taste.
- Form mixture into 4 patties about 3 inches across. Dredge patties in remaining 1/2 cup untoasted breadcrumbs.
- Heat oil in a medium sauté pan over medium heat. Cook patties until crisp and golden brown, 3 to 5 minutes per side. Serve hot with 2 tbsp fresh salsa.

FRENCH STYLE GREEN BEAN PATTIES
Steps:
- Drain green beans and empty into a large mixing bowl. Beat eggs slightly and add the eggs into the bean mixture and stir with whisk. Add the parmesan cheese and stir.
- In a small bowl combine flour, baking powder, salt and pepper and mix well. Then add to bean mixture. Stir well.
- In a large skillet or frying pan pour about 1 or 2 tablespoons of extra virgin olive oil into pan. When oil is hot add about 1 tablespoon of green bean mixture into pan and flatten into patties with back of spoon. When slightly golden around edges, flip over and cook other side about 2 or 3 minutes each side. Remove patties with spatula and place patties onto a plate and sprinkle them with extra parmesan cheese and serve warm.

PAN FRIED SOLAR SIMMERED BEAN PATTIES

- Soak beans in a large bowl overnight. Set Global Sun Oven out to preheat. Combine beans, onion, celery, and clove in a large pot. Add enough water to cover by two inches. Cover the pot and place it in the GSO. Cook until beans are tender, about 1 1/2 hours. Drain beans, remove and discard clove. Mash bean and vegetable mixture, add salt to taste. When mixture is cool and you're ready to fry the patties, mix in the egg yolks, bread crumbs, and parmesan cheese. Heat the oil in a large frying pan. Shape bean mixture into small patties. Dip each patty in the egg whites, coat with bread crumbs and fry in batches. Drain patties on paper towels and keep warm as you continue frying. Just before serving squeeze lemon onto the warm patties. Serve with lemon wedges.
