Steps:

  • Heat oven to 375°F; place cookie sheet in oven to preheat.
  • In medium bowl, beat brown sugar, butter, corn syrup, salt and eggs with whisk until well blended; stir in pecans. Pour into frozen crust.
  • Bake on preheated cookie sheet 35 to 45 minutes or until center is set. After 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Cool 30 minutes; refrigerate at least 2 hours until chilled before serving. Cover and refrigerate any remaining pie.

1 1/4 cups all-purpose flour
2 teaspoons sugar
1/8 teaspoon salt
1/2 cup cold butter (1 stick), diced
1 large egg, lightly beaten
Flour, for rolling the dough
5 tablespoons unsalted butter
1 cup packed light brown sugar
3/4 cup light corn syrup
1/2 teaspoon fine salt
2 cups chopped toasted pecans
1 to 2 tablespoons bourbon
2 teaspoons pure vanilla extract
3 eggs, lightly beaten

Steps:

  • Make the dough by hand: In a medium bowl, whisk together the flour, sugar, and salt. Using your fingers, work the butter into the dry ingredients until it resembles yellow cornmeal mixed with bean-sized bits of butter. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture.
  • Alternatively, make the dough in a food processor. With the machine fitted with the metal blade, pulse the flour, sugar, and salt until combined. Add the butter and pulse until it resembles yellow cornmeal mixed with bean-sized bits of butter, about 10 times. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine. (If the dough is very dry add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade, and bring the dough together by hand.
  • Form the dough into a disk, wrap with plastic wrap, and refrigerate until thoroughly chilled, at least 1 hour.
  • On a lightly floured surface, roll the dough with a rolling pin into a 12-inch circle about 1/8-inch thick. Transfer the dough to a 9-inch pie pan and trim the edges, leaving about an extra inch hanging over the edge. Tuck the overhanging dough underneath itself to form a thick edge that is even with the rim. Flute the edge as desired. Freeze the pie shell for 30 minutes.
  • Set separate racks in the center and lower third of oven and preheat to 400 degrees F. Put a piece of parchment paper or foil over the pie shell and fill with dried beans or pie weights. Bake on a baking sheet on the center rack until the dough is set, about 20 minutes. Remove from the oven and lift sides of the parchment paper to remove the beans. Continue baking until the pie shell is lightly golden brown, about 10 more minutes. Reduce the oven temperature to 350 degrees F.
  • While the crust is baking make the filling: In medium saucepan, combine the butter, brown sugar, corn syrup, and salt. Bring to a boil over medium heat, and stirring constantly, continue to boil for 1 minute. Remove from the heat and stir in the nuts, bourbon, and the vanilla. Set the mixture aside to cool slightly, about 5 minutes. (If the crust has cooled, return it to the oven for 5 minutes to warm through.) Whisk the beaten eggs into the filling until smooth. Put the pie shell on a sheet pan and pour the filling into the hot crust.
  • Bake on the lower oven rack until the edges are set but the center is still slightly loose, about 40 to 45 minutes. (If the edges get very dark, cover them with aluminum foil half way during baking.) Cool on a rack. Serve slightly warm or room temperature.

1 cup granulated sugar
4 tablespoons flour
1 cup sour cream
1/4 teaspoon lemon juice or 1/4 teaspoon extract

Steps:

  • Mix all ingredients and cook in double boiler for 45 minutes, stirring every 10 minutes for the first 20 minutes, then stirring every 3-5 minutes,or until thickened.

1 cup light brown sugar (if you want a more mollases flavor you can use dark brown)
1/2 cup Clear Jel®
4 cups apple juice non-sweetened
1/4 cup bottled lemon juice
1/2 t. ground coriander
1/2 t. ground cinnamon
1/2 t. ground ginger
1/2 t. walnut extract (optional)

Steps:

  • Combine apple juice, sugar, Clear Jel®, and spices andextract in a large kettle.
  • Stir and cook over medium high heat until mixturethickens and begins to bubble. To keep a smooth consistency use a wire whisk if available. Add lemon juice and boil sauce 1 minute more,stirring constantly.
  • Fold in pecans. Fill hot jars without delay, leaving1-inch headspace. Remove air bubbles and adjust headspace if needed.

Steps:

  • Preheat oven to 400 degrees F. Beat the eggs until well combined and light in color, about 5 minutes. Mix the sugar and flour together and gradually add to the eggs using low speed. Add the corn syrup, vanilla and salt and blend well, again using low speed. Fold the nuts in by hand and pour the mixture into the prepared pie crusts. Bake at 400 degrees F for 10 minutes and then reduce the heat to 350 degrees F. and bake for 1 hour longer. The pie will rise up and form cracks on the top, and the filling will be set when baking is complete. Remove pie and let it cool before cutting.
  • Combine the butter, shortening, 2 cups of the cake flour, and 1 cup of the all-purpose flour. Blend together. Stop mixer, scrape the sides and add remaining 2 cups of cake flour and remaining 1 cup of all-purpose flour. Blend to combine completely. Mix sugar and salt into 1/4 cup of the water and add it to the flour mixture. Blend briefly and add the remaining water if needed. The dough should not be overworked and should make a solid piece when held in your hand. Turn the dough out onto a lightly floured smooth surface and knead it several times. Divide the dough into portions and flatten it. Wrap unused dough in plastic. Roll out the dough to fit a 9-inch pie pan. Re-roll any scraps for a second pie crust.
  • Preheat oven to 475 degrees F. Prick bottom and sides of pastry with fork. Bake 12 minutes or until light brown. Cool on wire rack.

½ teaspoon salt
1 unbaked pie shell

Steps:

  • Grease a deep-dish pie pan or pie dish and add the pie crust to it.
  • Use a fork to poke holes in the bottom of the dough so the pie crust can vent when cooked with the filling in it.
  • Optional - Here is where you can crimp or flute the pie crust if using dough crust or homemade crust.
  • Bake the pie crust in the conventional oven at 350 degrees F for 7-10 minutes or the Instant Pot Omni Plus oven for 5-6 minutes.
  • Set the pie crust aside.
  • Open the Instant Pot lid and turn on the sauté setting for 5 minutes, although you may need all of this time.
  • Pour the sugar and corn syrup into the stainless-steel inner pot and let the mixture come to a boil, simmering for 1 minute. (If you're not using an Instant Pot, you can do this step on the stovetop.)
  • Turn off the Instant Pot and set the mixture aside to cool.
  • Stir the butter into the warm mixture so that it melts.
  • Next, add the vanilla extract and salt, and stir to combine.
  • Then when the mixture is cool enough to add the eggs without the eggs scrambling, whisk the eggs in a small bowl.
  • Slowly pour the eggs into the syrup mixture, constantly whisking until blended.
  • Now add the chopped pecans, slowly stirring them into the mixture.
  • Pour the finished pie filling into the pie crust.
  • Cover the edges of the crust with foil to prevent them from overcooking or burning.
  • Bake at 350° F in the conventional oven for 40-45 minutes, in the Instant Pot Omni Plus oven for 30-35 minutes, or until the pie filling sets and is firm and not liquidy when you give the pie a jiggle.
  • Allow the pecan pie to cool off and set for about 4 hours at room temperature before slicing, then serve and enjoy this Southern homemade pecan pie!
