Giada De Laurentiis' Fried Zucchini, from Everyday Italian on Food Network, are crispy and vegetarian, covered with crunchy panko breadcrumbs and Parmesan.

Provided by Giada De Laurentiis

Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 6

Olive oil, for frying
1 3/4 cups freshly grated Parmesan
1 1/2 cups panko (Japanese breadcrumbs)
3/4 teaspoon salt
2 large eggs
3 medium zucchini, cut into 3-inch long by 1/2-inch wide strips

Steps:

  • Pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 350 degrees F.
  • Stir 1 1/2 cups Parmesan, the panko, and salt in a medium bowl to blend. Whisk the eggs in another medium bowl to blend. Working in batches, dip the zucchini in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the zucchini in the panko mixture, patting to adhere and coat completely. Place the zucchini strips on a baking sheet.
  • When the oil is hot, working in batches, fry the zucchini sticks until they are golden brown, about 3 minutes. Using a slotted spoon, transfer the fried zucchini to paper towels and drain.
  • Arrange the fried zucchini on a platter. Sprinkle with the remaining Parmesan and serve.

Time 12m

Yield 4 to 6 servings

Number Of Ingredients 6

Vegetable oil, for frying
2 large egg yolks
1 cup ice water
1 cup all-purpose flour
12 zucchini flowers with stems
Kosher salt and freshly ground black pepper

Steps:

  • Pour 3 inches of oil in a deep fryer or large, heavy pot and heat to 375 degrees F.
  • In a deep mixing bowl, lightly beat the egg yolks and pour in the ice water; mix to combine. Add the flour and continue to mix until the batter is the consistency of heavy cream. Dip 2 zucchini flowers at a time in the batter to coat completely, letting the excess drip off. Fry the flowers in the hot oil for 2 minutes until crisp and golden brown. Drain the fried flowers on a platter lined with paper towels, season with salt and pepper while they are still hot. Repeat with the remaining zucchini flowers.

ITALIAN FRIED COURGETTE FLOWERS

Italian Fried Courgette flowers image

Provided by Jamie Oliver

Time 43m

Yield 4 servings

Number Of Ingredients 9

1 cup self-raising flour
1 cup beer
Sea salt
1 egg white, whisked
8 baby courgettes (zucchini) with flowers
Vegetable oil, for frying
2 red chiles, finely chopped, seeds removed
A handful of fresh mint leaves, finely sliced
A drizzle of good quality herb vinegar

Steps:

  • Mix the first 3 ingredients for the batter together in a bowl. Whisk the egg whites until firm and fold into the batter.
  • Cut each courgette in 1/2 lengthways, but not cutting all the way through, so you still have the flower intact on the end. Heat oil for deep frying to 375 degrees F (190 degrees C). Dip each courgette with its flower into the batter, and fry in the oil until crispy and golden brown. Drain them on kitchen paper, then place them on a serving plate, sprinkle with salt, chiles and mint, and drizzle with vinegar.

STUFFED COURGETTE FLOWERS

Stuffed courgette flowers image

Though a little fiddly, stuffing courgette flowers with ricotta cream filling and serving with tomato dressing looks dazzling

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 50m

Number Of Ingredients 14

8 courgette flowers , with small courgette attached
sunflower oil , for frying
1 large egg
100g plain flour
pinch bicarbonate of soda
200ml iced water
250g tub ricotta
150g block soft goat's cheese
zest 1 lemon
½ red chilli , finely chopped
small handful mint leaves, chopped
2 large ripe tomatoes , deseeded and finely diced
2 tbsp olive oil
small handful mint leaves, finely chopped

Steps:

  • To make the batter, whisk the egg, flour and bicarb together in a wide bowl. Gradually pour in the iced water, whisking continuously, until you have a smooth batter the consistency of double cream. Set aside.
  • In a separate bowl, beat all the filling ingredients together with some seasoning until well mixed. To make the dressing, mix all the ingredients in a third bowl with some seasoning and set aside.
  • Gently open up each flower and remove the stamen if there is one. Place spoonfuls of filling inside. Close the flower, twisting the ends of the petals to seal. Heat a deep-fryer to 180C. (If you don't have a deep-fryer, see right.) Working in batches so you don't overcrowd the pan, dip the flowers in the batter and fry for 2 mins, then use a slotted spoon to carefully flip them and fry for another 2 mins until crisp. Drain on kitchen paper and leave in a warm place while you fry the rest. Sprinkle with a little salt and serve 2 flowers on each plate with a circle of dressing around the outside of the plate.

  • Make the batter by putting the flour and salt in a bowl or tray where you can dip the flowers into. Add the milk, then gradually add the water a little at a time and beat with a whisk or fork. Keep adding the water until a thick consistency is reached. Whisk for at least 2 minutes and set aside.
  • Remove the pistil and stem of the flowers, then rinse gently and dry on paper towel. It’s okay if they tear a little or you open them completely. It’s easier to make sure there’s no dirt or bugs inside this way.
  • Place a piece of cheese inside each flower. It's okay if a little sticks out, but it's better if the cheese is completely covered. (Add an anchovy on top of the mozzarella, if using.)

  • Remove the male stem and gently rinse and wash the zucchini blossoms, being careful not to tear them too much. Use a bowl of water if that helps, as I mentioned within the post.
  • Mix the flour and water until a good consistency like pancake batter is reached. Add more if you have a larger quantity of blossoms.
  • Add the oil to saute pan and bring to a medium high heat. If you add a drop of water, it should sizzle.
