The pumpkins are carved, the pies are baked, but how should you toast those pumpkin seeds? My favorite variation by far are these sweet pumpkin pie-spiced seeds. I've tried the stovetop method for coating the seeds, but they were too sticky and hard for my tastes, and easy to burn too. Try this baking method instead and they'll turn out perfectly toasted and crunchy.

1 cup raw cleaned pumpkin seeds (preferably from a sugar pumpkin)
4 cups water
4 teaspoons salt
1 tablespoon unsalted butter
1 tablespoon white sugar
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
⅛ teaspoon ground cardamom
1 tablespoon white sugar, or to taste

Steps:

  • Place pumpkin seeds, water, and salt in a saucepan, bring to a boil, and reduce heat to medium; boil seeds for 10 minutes. Drain seeds but do not rinse. Pat seeds dry with paper towels and spread out onto a work surface or a baking sheet for 30 minutes to dry.
  • Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with aluminum foil.
  • Melt butter in a large microwave-safe bowl until melted, about 1 minute. Toss seeds in the melted butter and mix in 1 tablespoon sugar, cinnamon, ginger, nutmeg, cloves, and cardamom; toss again to coat seeds thoroughly with spices. Spread seeds out onto the prepared baking sheet in a single layer.
  • Bake in the preheated oven until toasted and crunchy, 45 minutes to 1 hour. Stir several times during baking. Sprinkle toasted seeds with 1 tablespoon sugar or as desired; cool before serving.

1 cup pumpkin seeds, rinsed and dried
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
6 teaspoons sugar
1 tablespoon vegetable oil

Steps:

  • spread the pumpkin seeds in a single layer on a large baking sheet and roast them in a 250 degree oven for 45 minutes or until the seeds are completely dry and lightly browned (large seeds may take longer).
  • In a large bowl, stir together the pumpkin pie spice, the salt and 2 teaspoons of the sugar and set aside.
  • Heat the oil in a large non-stisk skillet over medium-high heat,.
  • Add the seeds and the rest of the sugar to the skillet, stirring constantly with a wooden spoon until the sugar melts, about 45 seconds.
  • Scrape the seeds into the pumpkin pie spice mixture and stir to coat.
  • Allow the seeds to cool before eating and store in an airtight container.

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.

Sweet pastry dough
1 tablespoon anise seeds
Pumpkin filling:
1 1/2 cups pure pumpkin (from a 15-ounce can; not pie filling)
3/4 cup sugar
1 teaspoon ground ginger

3/4 teaspoon grated nutmeg
Pinch of ground cloves
1/4 teaspoon salt
3 large eggs, lightly beaten
1 1/3 cups heavy cream
Equipment: an 11-by 1 1/4-inch fluted round tart pan (1 1/4 inch deep) with a removable bottom; pie weights or dried beans
Accompaniment: lightly sweetened whipped cream

Steps:

  • Make tart shell:
  • Prepare dough, adding anise seeds to dry ingredients, and chill as directed in dough recipe. Roll out dough into a 14-inch round on a lightly floured surface with a lightly floured rolling pin, then fit into tart pan and trim excess dough. Chill until firm, at least 30 minutes.
  • Preheat oven to 375°F with rack in middle.
  • Lightly prick bottom of shell with a fork, then line with foil and fill with pie weights. Bake shell until side is set and edge is pale golden, about 15 minutes.
  • Remove foil and weights and bake shell until golden all over, about 15 minutes more. Cool completely in pan. Leave oven on.
  • Fill and bake tart:
  • Whisk together pumpkin, sugar spices, and salt in large bowl. Whisk in eggs, then cream.
  • Pour filling into cooled tart shell and bake until puffed about 1 1/2 inches from edge and center is just set, 40 to 45 minutes. (Cover edge of tart with foil if browning too quickly.) Cool in pan, about 2 hours. (Tart will continue to set as it cools.)

Steps:

  • Wash your pumpkin seeds (get all of the pumpkin off them).
  • Boil 1 quart of water.
  • After water has boiled, place the clean seeds and 1/8 cup of salt into water for 10 minutes- stir the whole time.
  • Melt 2 Tbs of butter.
  • Drain the seeds and mix them with the butter (add some salt if you want).
  • Place the seeds on a 2 layer tin foiled pan and place in oven at 350 F for 30 minutes.
  • Do not refrigerate seeds- put them in a sealed bowl and leave them on the kitchen table.

I love pumpkin pie so much that I've requested it as my birthday "cake" every year since I was about thirteen. I happen to have been born in October, so that helps my choice make some sense. I am also fortunate enough to be married to Dave, whom I refer to as a pie guru. The point is, I've eaten a lot of pumpkin pie, so I know what I'm talking about when I say that this is the best pumpkin pie ever. If someone feels otherwise, I am ready for a throwdown, because I can guarantee that their version does not have a grainy cornmeal crust and salty, crunchy pumpkin seeds on top. And without those elements, there's just no match.

1 1/4 cups all-purpose flour
1/4 cup cornmeal
1 tablespoon sugar
1/2 teaspoon table salt
8 tablespoons (1 stick) cold unsalted butter, cut into pieces
3 tablespoons ice water
1 large egg yolk
Pepitas
1/2 cup raw pumpkin seeds
1/2 teaspoon table salt
1/4 teaspoon canola oil
Filling
1 1/2 cups half-and-half
2 large eggs
1 15-ounce can pumpkin puree
3/4 cup packed light brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon table salt
Pinch of ground cloves

Steps:

  • 1. To make the crust, combine the flour, cornmeal, sugar and salt in the bowl of a food processor and pulse to combine. Add the butter and pulse 4 or 5 times, until the mixture resembles coarse crumbs.
  • 2. In a small bowl, mix together the ice water and egg yolk. Add the egg mixture to the food processor, and pulse until the crumbs begin to climb the side of the bowl and hold their shape when pressed together. Turn the dough out onto a lightly floured work surface. Using your hands-and a little muscle-form the dough into a 5-inch-diameter disk. Wrap it in plastic wrap and refrigerate it for at least 1 hour before rolling.
  • 3. Unwrap the dough, and using a rolling pin, roll it out on a lightly floured work surface to form an 11-inch circle. Working quickly and carefully, line a 9-inch pie dish with the dough. With your fingertips, make sure that the edge of the pie is smooth and even. Refrigerate it for 20 minutes.
  • 4. Preheat the oven to 350°F.
  • 5. Remove the pie dish from the refrigerator. Line the crust with tin foil, making sure to cover the sides, and fill it with dried beans or pie weights. Bake for 15 minutes. Rotate the dish and bake for another 15 minutes, or until the sides are somewhat firm and hold their shape. Remove the foil and bake for 6 minutes, until the bottom of the crust looks dry and the shell is a very pale golden color. Remove the dish from the oven and let the crust cool. Leave the oven on.
  • 6. To make the pepitas, stir together the pumpkin seeds, salt, and oil in a small bowl. Scatter the seeds onto a small baking sheet and toast in the oven for 12 to 15 minutes, until the seeds are slightly toasted. Remove the baking sheet from the oven and let the pepitas cool.
  • 7. To make the filling, mix together the half-and-half and eggs in a medium bowl. Add the pumpkin puree and mix well. Then add the brown sugar, cinnamon, ginger, salt, and cloves, and mix well. The filling will be very runny. Pour the filling into the pie shell. Sprinkle the pepitas on the filling.
  • 8. Bake for 25 minutes. Rotate the dish and bake for 20 more minutes, or until the center of the pie jiggles just a bit when you touch the oven rack. Transfer the dish to a wire rack and let the pie cool completely.
