WHITE BEAN TUNA SALAD

2 (6-ounce) cans dark meat tuna, packed in olive oil
2 (15-ounce) cans cannelini white beans, drained and rinsed
1/3 cup small capers, nonpareil in brine, drained and rinsed
6 tablespoons red wine vinegar
Sea salt and fresh ground black pepper
1 medium red onion, thinly sliced
1 1/2 cups cherry tomatoes
2 cups fresh arugula
6 fresh basil leaves

Steps:

  • In a large bowl, add the tuna, reserving the olive oil in a separate small bowl. Break tuna into bite-size pieces with a large fork. Add the beans and capers. Into the bowl of olive oil, add the red wine vinegar. You should have 1 part vinegar to 2 parts oil - add more extra-virgin olive oil if necessary. Season with salt and pepper. Pour dressing on the tuna, bean and caper mixture and allow the flavors to infuse while slicing the vegetables. Add the onion and tomatoes to tuna mixture and toss gently.
  • Place the arugula on large decorative platter and top with tuna mixture. Tear fresh basil leaves over the top and serve immediately.

2 tablespoons lemon juice, from 1 large lemon
1 tablespoon capers, drained and chopped
1 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
Kosher salt
One 15-ounce can cannellini beans, drained and rinsed
One 6.35-ounce jar olive oil-packed tuna, drained
2 cups baby arugula
2 small treviso, cut into 2-inch pieces
1 Belgian endive, cut into 2-inch pieces
1 small bulb fennel, shaved on a mandoline or sliced thinly with a knife
1/2 cup fresh Italian parsley leaves

Steps:

  • Whisk together the lemon juice, capers and Dijon mustard in a large bowl. While continuing to whisk, drizzle in the olive oil in a steady stream. Whisk in 1/4 teaspoon salt. Add the beans to the dressing and mash gently with a spoon. Add the tuna, flaking it with a fork into bite-size pieces. Toss lightly to coat. Top the tuna mixture with the arugula, treviso, endive, shaved fennel, parsley leaves and 1/2 teaspoon salt. Using your hands, toss the salad together, bringing the dressing up from the bottom of the bowl until everything is coated evenly.

Salt and pepper, to taste
1 can (15oz) cannellini beans
1/2 red onion, preferably Tropea variety
7 ounces canned tuna in oil, drained
1 tsp minced parsley

Steps:

  • In a large bowl, whisk together lemon juice, olive oil, salt, and pepper to create a vinaigrette.
  • Drain the beans and rinse well under running cold water.
  • Slice the red onion as thinly as possible.
  • Flake the canned tuna with the help of a fork.
  • Add all the ingredients to the bowl, leaving parsley for last.
  • Gently toss everything together to make sure every bit is evenly coated.

1 clove garlic, minced
6 tuna steaks (1-1/2 lb.), 3/4 inch thick

  • Combine first 8 ingredients; refrigerate until ready to serve.
  • Brush fish with A.1.

1 garlic clove, minced
2 teaspoons fresh thyme leaves, minced or 1/2 teaspoon dried thyme
3 tablespoons red wine vinegar
1/4 cup olive oil
1 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
3/4 cup red onion, coarsely chopped
8 1/2 ounces tuna in vegetable oil, drained

Steps:

  • Drain beans and rinse well.
  • In a large bowl, combine garlic, thyme, vinegar, olive oil, salt and pepper. Beat with fork.
  • Add beans and red onion to bowl , toss to coat.
  • Break tuna up into medium-size chunks and toss lightly with beans.

4 (19 ounce) cans cannellini beans, rinsed, drained
3/4 teaspoon salt
3/4 teaspoon fresh ground pepper
4 scallions, thinly sliced on diagonal
3 stalks celery & leaves, halved lengthwise, sliced
1/4 cup shredded fresh basil
1/4 cup chopped fresh parsley
1 1/2 teaspoons chopped fresh thyme
3 tablespoons olive oil
4 large ripe plum tomatoes, halved, seeded
3 -4 tablespoons fresh lemon juice
6 -7 leaves romaine lettuce
2 (7 ounce) cans tuna in olive oil
1/2 lemon, cut into wedges
12 oil-cured black olives
olive oil, and
red wine vinegar (for serving)

Steps:

  • Season beans in large mixing bowl with salt and pepper.
  • Add scallions, celery, herbs, and oil.
  • Dice 2 tomatoes and add to beans. Toss gently to combine. Add lemon juice to your liking. Taste and adjust seasonings.
  • Transfer bean salad to serving bowl or platter. Tuck lettuce leaves around edge.
  • Drain tuna, leaving just enough oil to moisten it, and place in large chunks on center of salad.
  • Cut remaining 2 tomatoes into wedges. Arrange tomatoes, lemon wedges, and olives around tuna.
  • Pass cruets of olive oil and red wine vinegar.
