Steps:
- Put the broth, ginger, soy, wine, vinegar, sesame oil, sugar and salt in a soup pot and bring to a boil over high heat. Adjust the heat so the broth simmers and cooks to lightly flavor with ginger, about 10-15-minutes.
- Add the carrots, and simmer until tender and cooked through, about 5 minutes. Just before serving, add the dumplings, cook for 3 minutes, stir in the scallions and spinach and cook until the greens wilt, about 1 minute. Divide among warm bowls and serve. Serve with chili sauce on the side if desired.

- Rinse and drain the rice.
- Put the rice in a pot with the chicken stock and bring to boil. Give the rice a good stir, scraping the bottom of the pan to prevent sticking, then lower the heat and half-cover the pan. Simmer gently for 1 1/2 to 2 hours, stirring every 15 minutes, until the grains have burst open and you have a thick congee. Keep an eye on the pot to make sure the rice doesn't stick to the bottom. Toward the end of cooking, when the stock has become integrated with the rice and is the consistency of oatmeal, season lightly with salt to taste.
- Serve the congee with a sprinkling of soy sauce, spring onion and ginger and a few drops of sesame oil to taste.

ASIAN CHICKEN NOODLE SOUP
Steps:
- Mix soy sauce, mirin, 1 teaspoon of the sesame oil, garlic, ginger, sugar, vinegar, and chile paste in a small bowl.
- Heat the broth in a medium saucepan. Add the soy sauce mixture, the chicken, and the vegetables and bring to a boil. Simmer for two minutes or until chicken is cooked through. Add the remaining 1 teaspoon sesame oil. Taste and adjust seasonings.

- Cut chicken into strips.
- Toss chicken, cornstarch, salt and pepper in medium glass bowl.
- Cover and refrigerate 20 minutes.
- Cut green onions and carrots into thin slices.
- Mix black bean sauce, garlic, gingerroot, and sugar together.
- Spray a 12-inch skillet with nonstick cooking spray.
- Heat until spray bubbles, add chicken and cook until chicken turns white.
- Remove chicken from the skillet.
- Reheat skillet and add chicken broth.
- Add broccoli and carrot; cover and cook 1 minute or until vegetables are crisp tender.
- Add chicken, brown bean sauce mixture and green onions; cook and stir 2 minutes.
CHINESE STYLE BROTH
I have been looking for a good recipe for a good chinese broth like the one served in a local restaurant. They add spinach and bean curd (tofu) and I just love it. I hope this is what I am looking for. I guess you could add any number of things, chinese vegies, wontons, use it as an eggdrop soup base, whatever. I haven't tried it yet, just placing it here for safe keeping. I'll update when I do try it and let you know what I think, good or bad.

Steps:
- Trim fat from the chicken and ribs and chop them into large pieces.
- Place them in a large pot with the water. Add the ginger and scallion knots.
- Bring to a boil, and skim off the scum from the top. Reduce heat and simmer uncovered for at least 2-3 hours.
- Strain the stock, discarding the chicken, pork, ginger and scallions and return broth to the pot.
- Add the wine and return to a boil, simmer for 2-3 minutes.

- Add the raw chicken drumsticks and bones, ginger, and scallions to your Instant Pot. Add 12 cups of water. (We have an 8 qt. Instant Pot. If yours is smaller, scale down the recipe accordingly. Make sure your liquid levels do not exceed the max-fill line.)
- Seal the lid of your Instant Pot. Set it to manual high pressure for 45 minutes. Once it beeps, it’s on, but it will take about 15-20 minutes to come up to high pressure, in addition to the 45 minutes of cooking time.
- When it’s done, allow the Instant Pot to release pressure naturally for at least 30 minutes and carefully turn the venting knob to “venting” to finish releasing pressure. Alternatively, just let the pressure release gradually until the float valve/pressure indicator drops.
- When it’s safe to do so, carefully remove the lid. If you’re using the stock right away, carefully ladle the broth out to ensure it’s clear. If you’re planning on storing it, remove the chicken, let the broth cool, and let the sediment settle. Then transfer it to reusable freezer containers for later use.
