Love Irish soda bread with raisins with a good cup of tea or coffee. You can add an egg wash to the top of the bread and then sprinkle with sugar before baking, if desired.

¾ cup white sugar, or more to taste
2 tablespoons baking powder
2 ½ teaspoons baking soda
1 teaspoon salt
2 ¼ cups buttermilk
1 cup butter, softened
2 eggs
1 ½ cups raisins

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Mix flour, sugar, baking powder, baking soda, and salt together in a bowl. Add buttermilk, butter, and eggs. Knead together with your hands or use an electric mixer; add raisins. Split dough in half and form into 2 loaves. Place on the prepared baking sheet.
  • Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, about 45 minutes.

1 1/2 teaspoons salt
1 teaspoon baking soda
1/2 cup (1 stick) unsalted butter, cut into cubes, at room temperature
2 1/2 cups raisins
3 tablespoons caraway seeds
2 1/2 cups buttermilk
1 large egg

Steps:

  • Preheat the oven to 350°F. Generously butter a heavy ovenproof 10- to 12-inch skillet with high sides. Whisk the flour, sugar, baking powder, salt, and baking soda in a large bowl to blend. Add the butter; using fingertips, rub in until coarse crumbs form. Stir in the raisins and caraway seeds. Whisk the buttermilk and egg in a medium bowl to blend. Add to dough; using wooden spoon, stir just until well incorporated (dough will be very sticky).
  • Transfer the dough to the prepared skillet; smooth the top, mounding slightly in center. Using a small sharp knife dipped into flour, cut a 1-inch-deep X in the top center of dough. Bake until the bread is cooked through and a tester inserted into the center comes out clean, about 1 hour 15 minutes. Cool the bread in the skillet 10 minutes. Turn out onto a rack and cool completely.

1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 1/2 tablespoons sugar
6 tablespoons solid shortening (recommended: Crisco)
2/3 cup raisins, brown or golden or mixed
2 teaspoons caraway seeds
1 cup buttermilk

Steps:

  • Preheat oven to 375 degrees F.
  • In a large bowl sift together the flour, baking soda, salt, nutmeg, and sugar. Using a pastry blender or fingertips, work the shortening into the flour until the consistency is the same as that of small peas. Stir in the raisins and caraway and mix to distribute evenly. Gradually stir in the buttermilk, 1/4 cup at a time, using only enough to allow the dough to come together. Knead the dough for 1 to 2 minutes. Shape the dough into a round loaf and place on a greased baking sheet. Cut an X on the top and over the sides of the loaf. Bake for 45 minutes or until the bread sounds hollow when tapped. Cool on a rack.

1 1/2 tablespoons caraway seeds
1 cup raisins
1 3/4 cups well-shaken buttermilk
2 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 375°F. Butter and flour a large baking sheet, knocking off excess flour.
  • Sift together 4 cups flour, baking soda, and salt into a large bowl and stir in sugar, caraway, and raisins. Add buttermilk and stir just until dough is evenly moistened but still lumpy.
  • Transfer dough to a well-floured surface and gently knead with floured hands about 8 times to form a soft but slightly less sticky dough. Halve dough and form into 2 balls. Pat out each ball into a domed 6-inch round on baking sheet. Cut a 1/2-inch-deep X on top of each loaf with a sharp knife, then brush loaves with butter.
  • Bake in middle of oven until golden brown and bottoms sound hollow when tapped, 35 to 40 minutes. Transfer loaves to racks to cool completely.

1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
3 tablespoons sugar, divided
1 cup warm buttermilk (110° to 115°)
2 tablespoons butter, softened
1/2 teaspoon salt
1/2 teaspoon baking soda
3-1/2 to 4 cups all-purpose flour
3/4 cup golden raisins

Steps:

  • In a large bowl, dissolve yeast in warm water. Add 1 tablespoon sugar; let stand for 5 minutes. Beat in the buttermilk, butter, salt, baking soda, 1 cup flour and remaining sugar until smooth. Stir in raisins and enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 40 minutes., Punch dough down. Turn onto a lightly floured surface; knead for 2 minutes. Shape into a round loaf. Place on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. With a sharp knife, cut a 1/4-in.-deep cross on top of loaf., Bake at 350° for 30-35 minutes or until golden brown. Remove from pan to cool on a wire rack.

  • Preheat oven to 375°F
  • Spray 8-inch-diameter cake pan with nonstick spray.

  • Add butter.
  • Using fingertips, rub in until coarse meal forms.
  • Make well in center of flour mixture.
  • Add buttermilk.
  • Gradually stir dry ingredients into milk to blend.
  • Mix in raisins.
  • Using floured hands, shape dough into ball.
  • Transfer to prepared pan and flatten slightly (dough will not come to edges of pan).

Our family favorite Irish soda bread recipe! Also a tasty tea-time snack served with butter and a dab of marmalade or a drizzle of honey, or with a slice of smoked salmon. Enjoy!

Number Of Ingredients 10

1 cup raisins (or dried currants)
4 tablespoons Irish whiskey (1 shot glass full plus 1 tablespoon)
1 teaspoon honey
3 1/2 cups flour
1/2 cup sugar
1/2 teaspoon baking soda
2 teaspoons baking powder
3/4 teaspoon salt
1 pint sour cream
2 eggs

Steps:

  • Preheat the oven to 350°F.
  • In a small saucepan or in the microwave, bring the whiskey and honey to a boil and add the raisins or currants. Cover and off the heat. Set aside and let steep.
  • Butter a round 1 1/2 to 2 quart baking dish, set aside.
  • Add the flour, sugar, baking soda, baking powder and salt together in a large bowl; use a wire whisk to combine.
  • In a small bowl, beat the eggs and stir in the sour cream, mixing well to combine.
  • Add the egg mixture to the flour mixture, stir well with a wooden spoon (batter will be thick).

The reason for this submission is that this was a favorite recipe from Chef Jerry O'Leary, who worked in the corporate dining room at Cantor Fitzgerald's in the World Trade Center.
