Steps:
- Cook the onions in the 3 tablespoons butter in a skillet over medium heat for a few minutes. When the onions are brown, turn off the burner temporarily so you won't ignite your kitchen. Or yourself.
- Pour in the whiskey. As soon as it evaporates, turn the burner on medium-high heat and pour in the beef stock. Add salt and freshly ground black pepper to taste, then allow the mixture to bubble up and reduce by half.
- Whisk in the remaining tablespoon of butter, then reduce the heat to low. Whisk in 1/4 cup to 1/2 cup cream, according to your taste. Allow the sauce to simmer and thicken for a few minutes.
- Serve with beef, baby!

SALMON AND WHISKEY SAUCE
Here is a great way of of getting that special taste of Scotland with salmon (or many other fish). The quantities given below are sufficient for six people. As with most cooking, it is best just to use blended whisky rather than more expensive malt. Found at www.rampantscotland.com

Steps:
- Place all the ingredients for the poaching liquid in a pan and gently poach the salmon for 7-10 minutes or until the fish is cooked. Strain and reserve the poaching liquid.
- Place the salmon on a warm serving plate, cover and keep hot.
- Make the butter sauce by whisking the egg yolks and lemon juice together. Place in a heat-proof bowl and set over a pan of hot but not boiling water on a very low heat. Whisk until the mixture begins to thicken. Stir in the butter gradually, allowing a small amount to melt at a time. If any lumps appear in the mixture, remove the bowl from the heat and add a teaspoon of cold water before placing back on the heat.
- Once all the butter has been mixed in and the sauce is to the required thickness, remove from the heat and add in the three tablespoons of whisky and the three tablespoons of poaching liquid. Pour over the salmon and serve with fresh vegetables.

IRISH SALMON WITH WHISKY CREAM SAUCE
Steps:
- Mix together the crushed peppercorns. Smear the salmon steaks all over with the mustard and then press the peppercorns into the cut sides of the salmon - just enough to give it a nice thin coating. Season with salt. 2 Heat a frying pan until hot. Add the butter and, as soon as it starts to foam, lay in the salmon steaks. Reduce the heat to medium and fry the steaks for about 3 minutes on one side to brown them. 3 Turn up the heat, flip the steaks over, then splash in the whisky. Boil fast until the whisky has almost disappeared, then pour in the cream. Carefully scraping up any bits that are sticking to the bottom of the pan around the steaks, bring to a fast bubble. 4 Boil for 1 - 2 minutes until the sauce starts to thicken, then taste and season with more black pepper if necessary, and some salt. By this time the salmon should be just cooked - test with the tip of a knife; if it is still a wee bit pink, simmer over a low heat for a further minute. Stir in the chopped chives and serve immediately, garnished with the extra chives.

- Combine the water and salt and stir until dissolved. Place the salmon in a pan that's just large enough to put them in a single layer. Add enough water to barely cover the salmon. The idea is to use a minimum amount of water to preserve maximum flavor. If you need more water, stick with the ratios mentioned above. Discard any unused salt water.
- Quickly bring the salted water to a boil, then reduce the heat to maintain a simmer and gently cook, uncovered, for 20 minutes.
- While the salmon is cooking, prepare the butter sauce. Add the egg yolks and cold water to a small heavy-bottomed sauce pan. Whisk until blended. Cook, whisking constantly, over very low heat. Add a pat of butter and whisk continuously until melted, then add another. Repeat until all the butter is incorporated and the mixture is slightly thickened. If it starts to become too thick or "scrambles," remove the pan from the heat and add a few drops of cold water. Remove from the heat and add the lemon juice.

- Seasoning Pork Chops: Season generously with salt, pepper, garlic powder and Italian seasoning to prepare them for searing.
- Cooking Pork Chops: Heat 1 tablespoon butter in a large skillet over medium-high heat.Once hot, add seasoned pork chops from Step 1 and sear them by cooking for 4-5 minutes per side for a total of 8-10 minutes. Remove pork from heat and transfer to a plate. If the pork chops are thick, they won't be cooked through at this point (hence the need for the oven later on).
- Cooking Mushrooms: Return skillet to heat, add second tablespoon of butter, wait until it melts and then add mushrooms. Cook them for 5-6 minutes on medium heat. Remove them from the skillet and transfer to a plate.
- Creamy Irish Whiskey Sauce: Add 3rd tablespoon butter to the pan, wait until melted and next add flour. Cook for about 1 minute on medium heat until well incorporated into the butter mixture. Next start pouring in whiskey while still on medium heat - about 1 minute. Next add beef broth and heavy cream, followed by Worcestershire Sauce and Italian seasoning. Add salt to taste and taste it to make sure it's to your liking. Simmer the sauce for 2-3 minutes only.
