¼ cup mayonnaise
¼ cup sour cream
6 tablespoons freshly grated Parmesan cheese, divided
1 tablespoon prepared horseradish
2 teaspoons dried dill weed
1 pound fresh asparagus, trimmed and chopped
½ cup water
2 tablespoons panko bread crumbs

Steps:

  • Combine mayonnaise, sour cream, 4 tablespoons Parmesan cheese, horseradish, and dill in a large bowl. Add asparagus and stir to combine. Transfer mixture to a round 1.6-liter casserole dish (approximately 7 1/2 inches) and cover with foil.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®). Place the trivet inside and add water. Place casserole dish on top of the trivet. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 5 to 10 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Let sit for 2 minutes. Using pot holders, remove the casserole dish and uncover.
  • Combine remaining 2 tablespoons Parmesan cheese and bread crumbs in a small bowl. Sprinkle mixture over the asparagus.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low. Broil asparagus until breadcrumbs are starting to brown, about 5 minutes.

2 each shallots, finely chopped
2 cloves garlic, minced
1 pound asparagus spears, trimmed and cut into 1-inch pieces
½ cup dry white wine
1 ½ cups Arborio rice
3 ½ cups chicken broth
½ cup heavy cream
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon dried thyme
½ cup shredded Parmesan cheese
2 tablespoons lemon juice

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter and melt. Stir in shallots and garlic; cook for 2 minutes. Remove shallots and garlic with a slotted spoon and set aside. Add asparagus and saute in butter for 2 minutes; remove and set aside on a plate.
  • Return shallots and garlic to the Instant Pot® and pour in wine. Stir well, scraping the bottom of the pot with a wooden or plastic spoon, for 30 seconds. 1 small onion, sliced

1 lb asparagus
13 1/4 ounces puff pastry, thawed (frozen ready made)
1 beaten egg, for brushing
8 ounces creme fraiche
4 egg yolks
1 tablespoon finely chopped chives
2 tablespoons horseradish (extra strong)
1/2 cup whipping cream
salt & pepper
2 tablespoons parmesan cheese (freshly grated)

Steps:

  • Clean and trim tough ends on asparagus.
  • Take pastry from fridge 10 minutes before using.
  • Preheat oven to 425°F.
  • Unroll Pastry and place on baking sheet.
  • With a sharp knife point score a line around the pastry about a half inch from the edge. Do not cut all the way through.
  • Lightly prick inside the rectangle with a fork and brush the edges with a little beaten egg.
  • Lay the Asparagus in a neat line with all the tips facing the same way, inside the border of the pastry.
  • Mix together creme fraiche, egg yolks, chives, horseradish and cream.
  • Season with salt & pepper and spread over the the asparagus.
  • Sprinkle with Parmesan.
  • Bake 30 - 40 minutes in preheated oven or until golden. If it starts to brown too much, turn oven down to 375°F.
  • Serve with a tomato, basil, and dark green salad.

1 boneless beef chuck roast (2 to 3 pounds)
1/2 teaspoon salt
1/2 teaspoon pepper
2 medium onions, thinly sliced into rings
1 jar (6 to 6-1/2 ounces) prepared horseradish
1/4 cup dry white wine or beef broth
1 tablespoon butter, melted
1 garlic clove, minced
1 tablespoon sugar
2 tablespoons all-purpose flour
2 tablespoons cold water
Hot cooked egg noodles
Minced fresh thyme, optional

Steps:

  • Place roast in a 6-qt. slow cooker; sprinkle with salt and pepper. Top roast with onions. In a small bowl, combine next five ingredients; pour over roast and onions. Cook, covered, on low until meat is tender, 7-8 hours. , Remove roast; cool slightly and shred with two forks. Skim fat from cooking juices. 4 small beetroots, trimmed and scrubbed
2 large potatoes, scrubbed and quartered
2 small turnips, peeled and quartered
1/2 bunch dutch baby carrots, trimmed and peeled
6 tiny onions
12 cloves garlic, unpeeled
olive oil
salt and pepper
fresh parsley, chopped,to garnish
1 clove garlic, finely chopped
1 tablespoon horseradish cream
1 teaspoon mustard (I used lemon and dill)
2 teaspoons red wine vinegar
1/4 cup virgin olive oil
salt and pepper

Steps:

  • Wrap the beetroot together in foil (like a package) and place in a 190c oven for 20 minutes.
  • Place the remaining ingredients (except the chopped parsley) in a baking tray, drizzle with olive oil, and season to taste.
  • Place in the oven with the beeroot parcel and cook for 1 hour more, or until tender.
  • Cool the vegetables slightly, then peel the beetroot and tiny onions-quarter the beetroot.
  • Toss all vegetables together gently, then serve on a platter with the dressing drizzled over, scatter with chopped fresh parsley.
  • Good with beef, lamb or oven roasted salmon.

Turn out hash onto 2 plates. Serve with horseradish cream.
