HEALTHY, KID-FRIENDLY BANANA BREAD
Tired of throwing out old bananas? This recipe is a moist, flavorful, and low-fat way to save those bananas and keep your kids coming back for more. No white sugar here. Good old maple syrup, non-fat Greek yogurt, and applesauce make great alternatives to the usual banana bread recipe!

- Preheat the oven to 325 degrees F (165 degrees C). Coat an 11x7-inch baking dish with cooking spray.
- Sift together flour, baking soda, and salt in a medium bowl.
- Whisk together applesauce and maple syrup in a large bowl. Add eggs and whisk until well blended. Add bananas, yogurt, and milk; mix until combined but still lumpy. Whisk in vanilla and 1/2 teaspoon cinnamon. Fold flour mixture slowly into banana mixture with a large wooden spoon until fully combined. Pour batter into the prepared baking dish and sprinkle with brown sugar and cinnamon.
- Bake in the preheated oven until a toothpick inserted in the middle comes out clean, 50 to 55 minutes. Cool for 10 minutes on a wire rack. Slice and serve.

You could make this slightly more indulgent by adding 1/2- cup of chocolate chips to the batter, though it's really good in this simple version!

Steps:
- Preheat the oven to 350 F. Coat an 8x8-inch baking dish with nonstick spray.
- Grind the oats in a food processor for about 30 seconds, or until they resemble a coarse flour.
- Add the rest of the ingredients and process for about 1 minute, stopping to scrape down the sides of the processor as needed, until the batter is smooth.
- Pour into prepared pan, smoothing with a spatula. Bake for 25-28 minutes, or until the edges are golden and a cake tester inserted into the center comes out clean. Let cool in the pan before slicing.
- Serve chilled, at room temperature, or slightly warm.

HEALTHY BANANA BREAD
Sweetened only with fruit and made with wholemeal flour, this is a healthy snack rather than a sugary dessert recipe. Perfect for young children.

Steps:
- Preheat oven to 160ºC (320ºF) and grease a loaf pan.
- Add the Medjool dates to a food processor and blend until it forms a paste. Add the milk and continue to blend until mixed.
- In a large mixing bowl add the date mixture, oil, yoghurt, eggs and vanilla. Whisk until combined. Add the mashed banana and stir.
- In a seperate bowl, mix together the flour, baking soda and cinnamon.
- Add the dry ingredients to the wet and stir until just combined. Be careful not to overmix, some lumps are good.
- Pour the batter into the prepared loaf pan and bake for 55 - 60 mins. Check the loaf is ready by inserting a skewer into the centre. If the stick comes out clean, or with a few crumbles on it, the bread is done.
- Allow to cool in the pan for around 10 mins and then transfer to a wire rack to cool for a further 20 mins + before slicing.

KID-APPROVED BANANA BREAD
This bread is moist and delicious, relatively low in fat, and constantly requested by my four kids for snacks or their school lunches. They even avoid eating all the bananas so there are enough left to ripen to black for banana bread! Freezes well too. Just cool fully and place in an airtight bag or container.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease a loaf pan.
- Beat brown sugar and butter together using an electric mixer in a mixing bowl until creamy. Add egg and beat on medium-high speed until mixture is light and fluffy, 1 to 2 minutes. Mash bananas using a fork and add to mixture, beating just until mixture is fairly smooth (some lumps are okay).
- Combine all-purpose flour, whole wheat flour, baking soda, baking powder, and salt in a separate bowl. Blend into banana mixture until just combined. Fold in chocolate chips. Pour into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Remove from the oven and let cool 5 minutes; turn pan over to release loaf and let cool further on a wire rack. Tastes best warm.
