2 cups chopped Granny Smith Apple
2 cups fresh cranberries
squirt of lemon juice
1 cup sugar
4 packets of maple & brown sugar instant oatmeal
4 cinnamon graham crackers
1 cup pecans
½ cup butter

Steps:

  • Spray an 8x8 pan with some cooking spray.
  • Chop the apples (skin on) and place them in the pan with the cranberry.
  • Toss with the lemon juice.
  • Stir in the sugar.
  • Crush the graham crackers, chop the walnuts, and toss in a bowl with the instant oatmeal.
  • Melt the butter and mix it with the dry ingredients.
  • Layer on top of the cranberries and apples.
  • Bake at 350 degrees for 55-60 minutes.
  • Serve with vanilla ice cream.

zest and juice of 1 large orange
1 Honeycrisp apple, peeled, cored, and chopped
½ cup apple cider
1/3 - 1/2 cup pure maple syrup

Steps:

  • Add all of the ingredients to the pressure cooker pot and stir well.
  • Secure the lid and turn pressure release knob to a sealed position. Cook at high pressure for 5 minutes.
  • When cooking is complete, use a natural release for 5 minutes and then release any remaining pressure. If liquid sprays while releasing the pressure, quickly turn the valve to the sealed position and wait 5 more minutes.
  • Stir well. The sauce will thicken further as it cools.
  • Serve warm or chilled.
  • Can be made up to a week in advance and stored in the fridge. Freezes very well.

2 medium apples (cored & chopped)
1 orange (juiced)
1/2 - 1 C honey

Steps:

  • Rinse cranberries in a colander and pick through them to ensure they are all good. (they should be firm and red)
  • Core and cut the apples into large chunks.
  • Juice the orange and pour it into a measuring cup. Top the juice off with water to make for 3/4 cup of total liquid.
  • Into the insert of the Instant Pot, add the cranberries, apples, and the orange liquid.
  • Ensure the seal is in place and lock the lid on the Instant Pot. Make sure the valve is set to seal and select Manual. Set the timer to 8 minutes.
  • It should take less than 10 minutes to come to pressure. When the 8 cooking minutes have completed, let the pressure cooker come down naturally for 10 minutes.
  • Then release any remaining pressure by moving the lid valve to open - be careful as the steam will be hot. Once all the pressure is released, open the lid. CAUTION STEAM WILL BE HOT!
  • If you want the sauce to be a bit chunky, remove some cranberries from the insert and reserve to the side. Using an immersion blender, blend the cranberry apple mixture until it is your desired smoothness. Add any cranberry chunks back in if you reserved some to the side.
  • Next, add 1/2 C honey to the mixture and taste test. Add more honey if too tart to your liking.
  • Store in airtight containers and keep in the refrigerator for up to 30 days.

  • Core and skin all apples (sometimes I leave half the skin on for texture). Cut into thick slices and put into your Instant Pot.
  • Pour your apple cider in, drizzle on top your maple syrup, pour melted butter on top, put in cranberries (can increase to 1 cup if desired), and sprinkle your brown sugar on top.

1 cup Steel Cut Oats, dry
2 cup (8 fl oz) HOT Water
1 cup Milk, nonfat - you can use other milks, but adjust the calories
1 Medium Apple, Gala peeled & diced into small pieces
1 cup, whole Cranberries (fresh or frozen)
1/3 cup, unpacked Brown Sugar (honey may burn, raw sugar works)
1 tsp Cinnamon, ground
1/4 tsp Ginger, ground
1/4 tsp Nutmeg, ground

Steps:

  • NOTE: I do NOT recommend making oats in stove top cookers. Electric pressure cookers have safety shut off in case the valve gets plugged. Only make up to 2 cups of dry oats at once in a 6+ quart model and NEVER use the quick release.
  • Spray liner/pot with non-stick spray or a small amount of oil.
  • Toss oats in and hit saute, stir for a few minutes until they JUST start to brown or smell slightly nutty/warm. Turn off the saute function.
  • Add all remaining ingredients and mix to combine.
  • Secure the lid on your pressure cooker, set to manual, high pressure for 15 minutes.
  • When done and it beeps let it NPR (natural pressure release?) for at least 15 minutes.
  • Remove lid and stir. Let sit for 3-5 minutes before serving.
  • STOVE TOP DIRECTIONS:
  • The night before:
  • Toast the oats in a frying pan.
  • Mix all ingredients together in a bowl except fruit and put in the fridge overnight to soak.
  • In the Morning:
  • Add the soaked oats to a pan, along with the fruit.
  • Bring to a boil, then reduce heat to low and cook for 15 mins, stirring often.

1 tbsp butter
5 apples, peeled and cored (any type)
2 tbsp brown sugar
1 tbsp lemon juice
1/2 tsp cinnamon
1/2 tsp nutmeg
3/4 cup water
1/2 cup butter, melted
1/2 cup flour
1/2 cup brown sugar
1 1/2 cups oats

Steps:

  • Add butter to the bottom of Instant Pot and spread around so it covers the pot. Add in apples, pouring sugar, lemon juice, cinnamon, nutmeg and water overtop.
  • In a large bowl, melt butter, then toss with flour and sugar. Stir in oats, then add to layer of apples in the Instant Pot.
  • Place lid on Instant Pot and make sure valve is set to seal. Press the pressure cook button and set to high, then pressure cook for 1 minute.
  • The Instant Pot will take about 5-10 minutes to come to pressure, then notify you it's done by beeping. Press the Cancel button then do a quick release of the pressure on the Instant Pot by flicking the switch at the top with a spoon. Open the lid when pressure gauge has dropped and the lid opens easily.
  • Serve apple crisp with whipped cream or ice cream and enjoy! If you want to make the topping crispy, you can broil each serving for 1-2 minutes before enjoying.

0.5 cup old-fashioned rolled oats (do not use instant)
0.5 cup flour
.33 cup brown sugar
.33 cup unsalted butter (softened)
4 cups Granny Smith or Gala apples (peeled, cored, chopped into 1-inch cubes)
1 cup cranberries (fresh is best, but frozen/thawed will work)
.25 cup granulated sugar
1 teaspoon ground cinnamon
0.5 teaspoon ground nutmeg
.25 teaspoon sea salt

Steps:

  • Place a trivet inside the liner of your Instant Pot, then pour in 1 cup of water.
  • Mix the flour, oats, and brown sugar together in a medium bowl. Add the softened butter and mix together to form a crumbly topping. Set aside.
  • Place the peeled, chopped apples and cranberries in a large bowl. Add the cinnamon, nutmeg, sugar, and salt. Toss to combine.
  • Pour the apple mixture into a 7-cup Pyrex baking dish. Sprinkle the topping mixture over the apples and place the baking dish on top of the trivet in the pressure cooker.
  • Secure the lid, press the Pressure Cook or Manual button and set the time to 8 minutes on High Pressure. Double check to make sure the sealing knob is in the "Sealing" position.
  • When the pot beeps, allow the pressure to release naturally(do not touch anything). Carefully remove the lid trying to not drop the condensation down onto the crisp.
  • Carefully remove the baking dish from the pressure cooker and place it on a cooling rack and allow to cool for 10 minutes before serving. Do not remove with the handles, they are too flimsy to hold a full baking dish!
  • Top with a scoop of vanilla ice cream or whipped cream if desired.

2 Granny Smith apples, cored and diced
2 cups of fresh cranberries
2 cups of rolled oats
1/2 cup milk
2/3 cup of applesauce
2 eggs
2 tablespoons of maple syrup
1/2 tablespoon of coconut oil
1 teaspoon of vanilla
1 teaspoon of cinnamon

Steps:

  • Cut the apples. Remove the core of the apples and cut the apples into equal sized pieces. Set aside.
  • Prepare the cranberries. Use a colander to rinse and drain the cranberries. Discard any that aren't firm.
  • Mix the ingredients together. Start by adding the eggs, milk, vanilla, coconut oil, applesauce, cinnamon, salt and maple syrup into a large bowl. Then whisk it together until combined. Now stir in the oatmeal.
  • Fold in the fruit. Once the oats have been well combined, fold in the diced apples and cranberries . Stir them until just distributed. Then pour the mixture into an 8x8" sprayed baking dish and spread it out evenly.
  • Bake. Put the filled dish in an oven that you've preheated to 350 degrees. Bake for 30 minutes or until the solids have set. Let cool for 5 minutes prior to serving. Serve and enjoy!

Steps:

  • Gather the ingredients.
  • Combine the steel cut oats, water, cinnamon stick, and a pinch of salt in the bowl of your pressure cooker and stir.
  • Secure the lid of the pressure cooker and using the manual setting cook on high pressure for 5 minutes. After hitting the start button, it will take several minutes for the pressure cooker to preheat before the cooking timer will begin.
  • Once the cooking time elapses, allow the pressure to naturally release. The float valve will drop when the pressure has been fully released. Note: It will take several minutes for the pressure to release naturally. Do not attempt to open during this time.
  • Once the float valve has dropped, unlock and open the lid. Remove the cinnamon stick and discard.
  • To serve, spoon oatmeal into bowls and top with a drizzle of milk or cream.
  • Top with your favorite sweeteners or toppings.

1-2 TBSP unsalted butter
2 cups peeled + diced Honey Crisp apple
1/4 tsp ground cinnamon
pinch of salt
1 cup steel cut oats
1.5 cups water or almond milk ((no dairy in the IP as it burns easy))
1 cup 100% apple juice
1/2 cup chopped pecans
extra 1/4-1/2 tsp cinnamon (to taste )
1/8 tsp pumpkin pie spice blend ((optional but DELICIOUS!))

Steps:

  • Set your Instant Pot to SAUTE function and add your butter.
  • Once butter has melted add your apples. Top with 1/4 tsp cinnamon and a pinch of salt and sauté until tender, approx. 4-5 minutes. Remove apples and set aside.
  • To help prevent sticking spritz the IP's stainless steel liner with spray oil (we love coconut or avocado oil) or rub with butter if preferred.
  • Add steel cut oats, water, apple juice, and most of your cinnamon apples. Save about 1/2 cup or so of apples for topping your oats - YUM
  • Lock lid and cook on manual high heat for 10 minutes. When the timer beeps, quick-release the pressure (using the release valve) until float valve drops.
  • Unlock lid and stir oatmeal, which will appear super watery at first but thickens as it cools. Stir in pecans, an additional 1/4 tsp, and maple syrup. Spoon the cooked oats into two bowls and top with cinnamon apples. You can drizzle a little milk over the oats if you'd like or top with extra crushed pecans and cinnamon. I've recently been topping my oatmeal with homemade granola too and adore the oat-on-oat combo.
