Like an apple pie without the pan, this French apple tart consists of a thin layer of cinnamon-scented apples atop a buttery, flaky crust.

1½ cups all-purpose flour, spooned and leveled
½ teaspoon salt
2 tablespoons granulated sugar
1½ sticks (12 tablespoons) very cold unsalted butter, cut into ½-inch pieces
¼ cup very cold water
1¾ lbs baking apples (3 large) (see note)
⅓ cup sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
2 tablespoons unsalted butter, melted
⅛ teaspoon salt
1 tablespoon all purpose flour
1 egg, beaten
2 tablespoons turbinado sugar
1 tablespoon apricot jelly or jam, optional for glaze

Steps:

  • Make the crust: Line a baking sheet with parchment paper. In a food processor fitted with the steel blade, combine the flour, salt and sugar. Pulse briefly to combine. Add the cold butter and process just until the butter is the size of peas, about 5 seconds. Sprinkle the ice water over the mixture and process just until moistened and very crumbly, about 5 seconds. Transfer the dough to a lightly floured work surface and knead a few times, just until it comes together into a cohesive ball. Pat the dough into a disk. Flour your work surface again and dust the dough with flour, as well. Using a rolling pin, roll into a circle 8 to 10 inches in diameter, turning and adding more flour as necessary so the dough doesn't stick. Transfer the dough to the parchment-lined baking sheet and refrigerate while you prepare the filling (you'll roll the dough out further on the parchment paper so go ahead and clean your work surface).
  • Make the Filling: Peel, core, and cut the apples into ⅛-inch-thick slices (you should have about 4 cups) and place in a large bowl. Add the sugar, vanilla, cinnamon, melted butter, and salt; toss to combine.
  • Take the dough from the fridge and slide the parchment paper onto the countertop. Roll the dough, directly on the parchment paper, into a 14-inch circle about ⅛ inch thick. It's fine if the edges are a little ragged. Place the parchment and dough back on the baking sheet - the pastry should curve up the lip of the pan.
  • Assemble the tart: Sprinkle the flour evenly over the pastry. Arrange the apple slices on top in overlapping concentric circles to within 3 inches of the edge. Don't worry about making it look perfect! It doesn't make much difference in the end and you don't want the dough to get too warm. Fold the edges of the dough over the apples in a free-form fashion, working your way around and creating pleats as you go. Patch up any tears by pinching a bit of dough from the edge.
  • Using a pastry brush, brush the pleated dough evenly with the beaten egg. Sprinkle 1 tablespoon of the turbinado sugar over the top crust and 1 tablespoon over the fruit. Chill the assembled tart in the fridge for 15 to 20 minutes.
  • Meanwhile, preheat the oven to 350°F and set an oven rack in the center position.
  • Bake for 55 to 65 minutes, or until the apples are tender and the crust is golden and cooked through. (It's okay if some of the juices leak from the tart onto the pan. The juices will burn on the pan but the tart should be fine -- just scrape any burnt bits away from the tart once it's baked.) Transfer the pan to a rack and let cool.
  • While the tart cools, make the optional glaze. In a small bowl, mix the apricot jam with 1½ teaspoons water. Heat in the microwave until bubbling, about 20 seconds. Using a pastry brush, brush the apples with the apricot syrup.
  • Use two large spatulas to transfer the tart to a serving plate or cutting board. Slice and serve warm or at room temperature. The tart is best served on the day it is made, but leftovers will keep, loosely covered on the countertop, for a few days.
  • Note: Be sure to use baking apples that hold their shape when cooked, such as Honeycrisp, Jonagold, Fuji, Granny Smith, or Golden Delicious. And use a mix of different varietals for the best flavor.
  • Make Ahead: The dough can be made up to 3 days in advance and refrigerated. Allow it to sit at room temperature for about 15 minutes or until pliable before rolling.
  • Freezer-Friendly Instructions: The assembled tart may be frozen for up to 3 months. To freeze, place the baking sheet in the freezer until the tart is frozen, then wrap tightly. (Wait until right before baking the tart to brush the beaten egg and sprinkle the sugar onto the crust.) Bake directly from the freezer. (It may take a few extra minutes to bake from frozen.)

1/2 cup almond meal
1/4 cup granulated sugar
1 egg
3 tablespoons butter (softened)

17 ounces puff pastry (thawed)
Optional: 1 dried fava bean
1 egg (beaten )
2 tablespoons confectioners' sugar

Steps:

  • Gather the ingredients.
  • Combine almond meal, sugar, egg, softened butter, vanilla extract, and flour in the bowl of a food processor .
  • Blend to a smooth, creamy paste. Feel free to make this cream a few days in advance, then refrigerate in an airtight container.

  • Return to oven and bake until the puff pastry becomes a deep golden brown, 10 to 12 minutes more. Allow cake to cool for 20 minutes before serving.

3 Tablespoons powdered sugar
1⅓ sticks salted butter (cubed and chilled)
2-3 Tablespoons ice water
1 large egg (lightly beaten)
3 medium granny smith apples
¼ cup packed light brown sugar
1½ Tablespoons all-purpose flour
2 teaspoons cinnamon
squeeze of lemon
1 egg
2 teaspoons turbinado sugar

Steps:

  • Place the flour, sugar and butter in a food processor and pulse for 20 seconds or until the largest piece of butter is the size of a pea. Add the egg and process just until combined. With the processor on low, drizzle in the iced water just until the dough starts to clump.Then, turn the dough out onto a very lightly floured board and just gently pull it together - don't knead it too much. Wrap it in plastic wrap or baking paper and place it in the fridge for ½ an hour to rest.
  • Preheat the oven to 395°F and line a baking tray with parchment paper. Peel the apples, then chop each apple into quarters. Slice out the core of each quarter and then cut each quarter into 4 or 5 slices. Place the apple slices in a bowl and add the sugar, flour, cinnamon and lemon juice.
  • Sprinkle some flour over the bench top, place the dough on top and sprinkle the top with a little flour too. Gently roll it out to about a 10 inch circle (about ½ of an inch thick). Place the rolling pin on the dough on the furthest side from you, wrap the top of the dough over the rolling pin and roll it back towards you, rolling the dough around the rolling pin.Roll it back out in reverse onto the prepared baking tray.Arrange or scatter the apples in the center of the disk of dough, making sure to leave a 1.5 inch ring clear around the edge. Discard any remaining juice that may have come out of the apples in the bowl.Gently gather the edges of the dough and fold over the edge of the apples, leaving the center uncovered.Brush the egg around the edge of the pastry and sprinkle with the turbinado sugar.
  • Bake for around 45 minutes until the edges of the pastry are golden and crisp. If there are any pools of liquid in the galette, you can just soak a little away with paper towel. Allow to cool for 5 minutes before serving. Enjoy!

  • Thaw the puff pastry in the refrigerator overnight. The next day, roll it out slightly to make it more flat, even and square. Using a 10-inch pan lid as your guide, cut out the largest disk possible with a pizza wheel and place it on a parchment-lined sheet pan. Chill it while you make the filling.
  • Place the applesauce in a saucepan with the lemon juice, cinnamon, brandy, and lemon rind. Stir and bring to a simmer, then cook down to 3/4 cup. Spread it on a sheet pan to cool it to room temperature.

  • Take out the puff pastry and spread the reduced applesauce on it to cover the surface of the pastry, leaving a 1/2-inch edge.   • Preheat the oven to 400 degrees F. Line 2 sheet pans with parchment paper.
  • Unfold the sheets of puff pastry and cut each sheet into quarters. Place the pastry pieces on the prepared sheet pans and refrigerate while you prepare the apples.
  • Peel the apples and cut them in half through the stems. Remove the stems and cores with a sharp knife and a melon baler. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally across each piece of pastry and place a slice of apple on each side. Sprinkle the full 3/4 cup of sugar over all the pastry pieces and dot with the butter.
  • Bake for 40 minutes, until the pastry is browned and the edges of the apples start to brown. Rotate the pan once during cooking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don't worry! The apple juices will burn in the pan but the galettes will be fine! When the galettes are done, heat the apricot jelly together with the Calvados and brush the apples and pastry completely with the jelly mixture. Loosen the galettes with a metal spatula so they don't stick to the paper. Allow to cool and serve warm or at room temperature.

  • Start out by creating your pastry dough. Whisk the flour, sugar, and salt together in a large bowl. Add in the cubed butter and use two knives, or a pastry blender, to cut the butter into the flour. Combine until the clumps of flour and butter are no bigger than the size of peas. Stream in the cold water and combine until a crumbly dough forms.
  • Turn out the dough onto a large sheet of plastic wrap. Use the wrap to gather the dough together into a large mass. Wrap tightly and mold into a disc shape. Refrigerate the dough for at least 30 minutes.
  • Meanwhile, create your syrup for the fruit by adding the wine, sugar, cinnamon stick and zest to a large pot. Give everything a stir and bring the mixture to a boil over high heat. Add the apple slices and pear slices to the pot and reduce the heat to medium low. Let the mixture simmer for 30 or so minutes, or until there's only about a tablespoon of the wine syrup left in the pot. Scoop out the slices with a slotted spoon and transfer them to a plate to slightly cool.
  • Take out your pastry dough from the fridge and use a rolling pin to roll out the dough into a large circle, about 1/8" thick. Make sure to roll in one direction only (rather than back and forth), and rotate the pastry often to create an even circle. If any cracks appear, simply dip your finger into the ice cold water and dab it onto the crack. Sprinkle a little flour over the wet spot and continue rolling.
