Show: Down Home with the Neelys Episode: Neely All the Time Time does not include marinating time. After reading reviews I think I will cut back on salt in the rub. Depending on your grill you might need to cook longer. I have not tried this recipe yet though.

1 tablespoon vegetable oil
1 medium onion, finely chopped
3 garlic cloves, finely chopped
2 cups ketchup
1 (12 ounce) can cola
1/2 cup apple cider vinegar
2 tablespoons brown sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1/2 tablespoon lemon juice
1 tablespoon Worcestershire sauce
2 tablespoons salt
2 tablespoons brown sugar
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon black pepper
2 pork spare rib racks (about 3 pound each)

Steps:

  • For the sauce: In a medium saucepan, over medium heat, add oil. Once heated, add the onion and garlic and saute until tender. Add all the remaining sauce ingredients and bring to a boil. Reduce heat to a simmer and cook uncovered, stirring frequently, for 1 hour 15 minutes.
  • For the dry rub: Whisk all dry ingredients together in a small bowl. This can be stored up to 6 months in an airtight container.
  • For the ribs: Rinse and dry ribs. Place on a clean cutting board, pull off the membrane and trim the ribs of excess fat. Liberally season both sides of the ribs with rub. Wrap ribs with plastic wrap and refrigerate 4 to 12 hours so flavors can permeate.
  • Preheat grill to 250 degrees F. using hickory and charcoal. Set up your grill for indirect heat.
  • Place ribs, meatier side down, on the grill away from the coals. Close grill cover. Cook the pork ribs for 1 hour 15 minutes; flipping several times for even cook.
  • *Coat ribs with Sweet Cola Barbecue Sauce and cook for another 20 minutes.
  • *Reserve some of the sauce for dipping when the ribs are served.

NEELY'S DRY BBQ RIBS

3 to 4 pounds spare ribs
4 ounces Neely's Seasoning Mix, recipe follows
8 ounces paprika
4 ounces sugar
2 teaspoons onion powder

Steps:

  • Trim the spare ribs, removing the upper brisket bone and any excess fat; this will produce a St. Louis-style rib. Rinse the ribs and season with Neely's Seasoning, and then cover and refrigerate for 4 to 12 hours.
  • Indirect cooking in a barbecue pit is recommended to prevent burning. Cook at 250 degrees F (curled side of ribs facing up) for the first 3 hours, and then increase the temperature to 300 degrees F for the final 3 hours. Sprinkle the ribs with Neely's Seasoning Mix during the last 30 minutes of cooking.
  • Mix all ingredients together in a bowl.

NEELY'S BREAKFAST SANDWICH

1/2 pound bacon, cut into 1/2-inch pieces
2 cups all-purpose flour
1 tablespoon granulated sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup grated extra-sharp Cheddar
1 1/2 cups heavy cream, at room temperature, plus 1 tablespoon
1 egg
Kosher salt
6 eggs
Mango preserves, for serving
Arugula, for serving

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment.
  • Fry the bacon in a nonstick skillet until cooked but not yet crisp. Remove the bacon to a paper towel lined sheet tray. Let cool. Reserve the bacon drippings in the skillet.
  • Whisk together the flour, sugar, baking powder, and salt in a medium bowl. Add the cheese and bacon and toss. Stir in 1 1/2 cups of cream with a wooden spoon until the dough comes together. Remove the dough to the countertop and knead briefly until it is smooth and uniform in appearance. Pat the dough out to a 1-inch thickness. Using a biscuit cutter dipped in flour, punch out dough rounds. Push together the leftover dough and pat out again to 1-inch thick and cut out rounds. Arrange the biscuits on the parchment lined sheet tray.
  • In a small bowl, whisk together the remaining 1 tablespoon of cream and the egg. Brush the tops of the biscuits with the egg wash and sprinkle with kosher salt. Put immediately into the oven and bake for 18 minutes.
  • When the biscuits come out of the oven, start frying the eggs. Heat the same nonstick skillet used earlier (to cook the bacon) over medium heat. Once heated, crack the eggs into the pan and cook until the white is set and the eggs begin to turn golden brown. Spoon some of the hot grease over the yolks to help it cook. Season with salt and pepper, to taste.
  • To assemble the sandwiches, split the biscuits in half and spread some mango preserves on the inside of the biscuit tops. Put a small handful of arugula on each of the bottoms. Top with the fried eggs and cover with the top of the biscuit. Serve immediately.

NEELY'S WET BBQ RIBS

16 ounces water
6 ounces brown sugar
6 ounces white sugar
1 tablespoon freshly ground black pepper
1 tablespoon onion powder
1 tablespoon dry mustard powder
2 ounces lemon juice
2 ounces Worcestershire sauce
8 ounces apple cider vinegar
2 ounces light corn syrup
3 to 4 pounds spare ribs
2 ounces Neely's Seasoning Mix, recipe follows
4 ounces paprika
2 ounces sugar
1 teaspoon onion powder

Steps:

  • Combine all of the sauce ingredients in a stockpot or large Dutch oven. Bring to a boil over high heat, stirring frequently to prevent sticking. Reduce temperature to low and simmer, uncovered, for at least 30 minutes. Meanwhile, trim the spare ribs, removing the upper brisket bone and any excess fat; this will produce a St. Louis-style rib. Rinse the ribs and season with Neely's Seasoning, and then cover and refrigerate for 4 to 12 hours.
  • Indirect cooking in a barbecue pit is recommended to prevent burning. 2 tablespoons ancho chili powder
2 tablespoons smoked paprika
2 tablespoons dried oregano
1 tablespoon chipotle chili powder
1 tablespoon garlic powder
1 tablespoon ground mustard
1 tablespoon ground cumin
2 tablespoons kosher salt
1/2 teaspoon freshly ground black pepper
2 (3-pound) slabs pork spareribs
Hickory chips
Southwest Barbecue Sauce, recipe follows
1 tablespoon canola oil
1 yellow onion, diced
3 cloves garlic, diced
2 tablespoons tomato paste
2 tablespoons reserved spice rub
2 cups ketchup
1/4 cup water
1/2 cup apple cider vinegar
1/2 cup peach nectar
1/2 cup light brown sugar
2 tablespoons dry mustard
1 lemon, juiced
1/2 tablespoon Worcestershire sauce
Pinch kosher salt and freshly ground black pepper

Steps:

  • Mix all the dry ingredients together in a small glass bowl to create the spice rub. Reserve 2 tablespoons of the spice mixture for the BBQ Sauce.
  • Rinse and the dry ribs, then put on a clean cutting board and pull off the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat. Liberally season both sides of the ribs with the spice rub. Wrap the ribs with plastic wrap or foil and refrigerate for at least 2 hours so flavors can develop and permeate the meat.
  • Soak the wood chips in water for 1 hour before grilling.
  • Preheat the grill to 250 degrees F. Using the hickory and charcoal, set up the grill for indirect heat.
  • Arrange the ribs, meatier side down, on the far side of the grill away from the coals. Close the cover of the grill and cook the ribs for 3 hours. Turn and cook until the ribs bend, about 1 more hour.
  • You will need to check on the charcoal and chips during the smoking process and replenish as needed. You will also need to maintain a temperature of 250 degrees F.
  • Remove ribs from grill to a cutting board and sprinkle with more spice rub. Cut each slab into individual ribs and transfer to a serving platter. Serve the ribs with Southwest Barbecue Sauce.
  • For dry ribs: Sprinkle Neely's BBQ seasoning over the ribs, cut between the bones and serve.
  • Heat the canola oil in a medium saucepan over medium heat. Add the onion and garlic and saute until the onions are soft. Stir in the remaining ingredients and simmer until thick and the sauce is flavorful, about 1 to 1 1/2 hours. Taste for seasoning and add salt and pepper, if necessary.

3 tablespoons light-brown sugar
3 tablespoons paprika
3 tablespoons kosher salt

2 slabs beef spare ribs (about 8 pounds total)
2 cups sweet cherry-cola BBQ sauce (recipe follows)
SWEET CHERRY-COLA BBQ SAUCE
1 1/2 cups ketchup
One 12-ounce can cherry cola
1/4 cup red-wine vinegar
1/4 cup water
2 tablespoons light-brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon sweet cherry-cola rub
(makes about 2 cups)

Steps:

  • To make the rub: Whisk together the first six ingredients in a small bowl. Reserve 1 tablespoon of the seasoning for the sauce that will finish the dish.
  • Rinse the ribs in cold water, then pat dry with paper towels, and pull off the thin silver membrane (see headnote). Season both sides of the slabs with the seasoning, and refrigerate for at least 12 hours.
  • Preheat the grill to 225 degrees F, preferably using hickory and charcoal. Place the slabs, meat side down, away from the flame, using indirect heat. Cook for 2 hours. Flip the slabs, and continue cooking for 45 minutes, or until you get the full bend in the slabs. Brush with the sweet cherry-cola BBQ sauce, and continue cooking for 15 minutes.
  • Remove from heat, slice into ribs, and serve with additional sauce.
  • SWEET CHERRY-COLA BBQ SAUCE
  • Combine all ingredients in a large saucepan. Bring to a boil, then lower the heat and gently simmer for 1 hour, stirring occasionally.
