This is a yummy taco salad with a really great ranch flavor. Perfect for a light summer dinner and easy to double or triple to use as a crowd pleaser at summer BBQ's!

1 lb ground beef
1 yellow onion, diced
2 large tomatoes, diced
8 ounces shredded cheddar cheese or 8 ounces shredded Mexican blend cheese
1 large head lettuce, torn
1 (13 ounce) bag cool ranch Doritos
1 (24 ounce) bottle ranch dressing
1 (1 ounce) packet taco seasoning

Steps:

  • Brown ground beef with onion until cooked.
  • Add taco seasoning per directions on packet, let meat mixture cool.
  • Combine lettuce, tomato, and cheese in large mixing/salad bowl, refrigerate until ready to serve.
  • Prior to serving, crush doritos and add to lettuce mixture.
  • Add meat mixture, stir.
  • Toss entire salad with ranch dressing until well blended, serve cold.

3 tablespoons vegetable oil
4 corn tortillas, cut into thin strips
2 1/2 teaspoons low-sodium taco or fajita seasoning
1/2 red onion, chopped
1 pound lean ground beef
1 clove garlic, finely chopped
1 pint cherry tomatoes, halved
1/2 cup pickled jalapenos with carrots and onions, drained and chopped, plus 1 tablespoon of the brine
1/4 cup chopped fresh cilantro
3 tablespoons reduced-fat sour cream
1 large head romaine lettuce, shredded
3/4 cup shredded reduced-fat pepper jack cheese (about 3 ounces)

Steps:

  • Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Working in batches, fry the tortilla strips, flipping, until golden, about 2 minutes. Transfer to a paper towel-lined plate using a slotted spoon. Sprinkle with 1/2 teaspoon taco seasoning.
  • Add the remaining 1 tablespoon vegetable oil to the skillet. Add the red onion and cook, stirring occasionally, until just tender, about 3 minutes. Add the beef, garlic and the remaining 2 teaspoons taco seasoning. Cook, breaking up the beef with a spatula, until no longer pink, about 3 minutes. Add the tomatoes and pickled jalapenos with carrots and onions; cook until the tomatoes are slightly softened, about 3 minutes. Remove from the heat and stir in the cilantro.
  • Mix the sour cream with the jalapeno brine in a small bowl. Divide the lettuce among bowls; top with the beef mixture, cheese, sour cream and tortilla strips.

1 medium sweet onion, finely diced
1 pound ground white meat chicken (white meat only, no fat)
1/4 to 1/3 cup lime juice, plus 1 lime, zested
1 package taco seasoning mix
1 head romaine lettuce, thinly sliced
1 mango, peeled, seeded, and cut into 1/2-inch chunks
1 tomato, cored, cut into 6 to 8 wedges
1 cup shredded carrots
1/2 cup thinly sliced scallions
3/4 cup cooked canned, white beans or black beans, (fat free, sugar free) rinsed and drained
1 avocado, peeled, seeded and cut into 8 wedges
1 (16-ounce) jar sugar free, fat free tomato salsa
16 baked taco chips
4 pickled jalapenos

Steps:

  • In a medium saute pan over medium high heat, cook onions in 1 to 2 tablespoons water until softened and cooked through, about 12 to 15 minutes. Cook covered, stirring once or twice, add more water if necessary to keep onions from burning. Add chicken meat, and cook until crumbly and golden, about 7 to 9 minutes. Add citrus juice, zest, and taco seasoning mix, stir until well combined. Taste and adjust seasonings. Set aside to cool.
  • Arrange lettuce on large platter with remaining ingredients. Top with chicken, garnish with baked chips and jalapenos.

I have experimented for a long time perfecting this recipe. I finally have the secret! I am requested to bring this to every pot luck, family dinner, etc. You won't be disappointed!

1 head lettuce, washed & drained well
1 (8 ounce) container grape tomatoes
1 (12 ounce) bag Doritos (I prefer Pepper Jack or Extra Nacho)
2 cups grated sharp cheddar cheese
1 (8 ounce) bottle fat-free Catalina dressing (regular makes it way too greasy!!)
1/2 lb ground beef
taco seasoning

Steps:

  • Brown ground beef and drain. Add taco seasoning - follow package directions. Alow to cool slightly or put in refrigerator if you don't want to use the salad right away.
  • TEAR lettuce into bite size pieces, but into bowl. Cut tomatoes in half, and spread out on top of lettuce. Put cheese on top of tomatoes. Cover and chill until ready to serve. Just before serving, add Doritos, meat (if refrigerated, use microwave to take chill off of meat), and salad dressing. Toss well!
  • Don't skimp on the cheese or doritos, the more the better! I use the whole bag of Dorito's. Not snack size, or Extra large, just the regular size bag -- .

2 cups tortilla chips, coarsely crushed
1/4 cup KRAFT Classic Ranch Dressing

Steps:

  • Brown meat with onions in large nonstick skillet on medium-high heat; drain.
  • Add seasoning mix and water; mix well. Bring to boil. Simmer on medium-low heat 3 min.
  • Divide lettuce among 4 plates. Top evenly with meat mixture, tomatoes, cheese and crushed chips. Drizzle with dressing.

1 head iceberg lettuce
2 cups shredded cheddar cheese
2 lbs ground beef
1 package taco seasoning
2 tomatoes
1 onion
1 bag plain Doritos
1 (16 ounce) bottle Catalina dressing

Steps:

  • Brown ground beef and taco seasoning.
  • Drain and let cool.
  • Chop lettuce, tomatoes, and onions.
  • Put into a large container.
  • Add cheese and crushed Doritos.
  • Add cooled ground beef.
  • Pour Catalina dressing over all of it 5 to 10 minutes before serving.

1/2 lb lean ground beef
1 tablespoon water
2 teaspoons taco seasoning mix, divided
2 whole wheat pita bread
2 tablespoons reduced-fat cream cheese, at room temperature
2 tablespoons nonfat sour cream
2 tablespoons salsa
1 cup lettuce
1 tomatoes, diced
1/4 cup reduced-fat cheddar cheese, shredded

Steps:

  • Preheat oven to 400°F.
  • In a medium skillet, brown ground beef over medium heat until no longer pink. Drain off excess fat. Add water and 1 tsp taco seasoning to the beef and simmer for 3 minutes. Remove from heat and set aside to cool slightly.
  • Cut each pita into 8 wedges and place on baking sheet. Bake for about 7 minutes or until lightly browned.
  • While the beef is cooling, combine the remaining taco seasoning, cream cheese, sour cream and salsa in a small bowl. Mix well. Divide and spread this mixture evenly on 2 small plates.
  • Spoon a portion of the beef over the sour cream mixture, and top each with half the lettuce, tomato and cheddar cheese.
  • Place 8 baked pita wedges on each plate. Serve and enjoy!
