Instant Pot Queso Dip is delicious but add a little leftover pulled pork and you have heaven! This is perfect for that next potluck or game day party. Filled with black beans, Rotel tomatoes, corn, pulled pork, and cheese this is sure to keep your guests happy.

Number Of Ingredients 10

Ingredients

1 jalapeno (seeded with membrane removed, finely diced)
1/4 cup onion (finely diced)
1 tsp garlic (minced)
1 tsp smoked paprika
10 ounces Rotel tomatoes
15.25 ounce canned corn (drained)
15 ounces canned black beans (drained and rinsed)
1 pound Velveeta (cubed)
1 cup shredded cheddar cheese (can substitute pepper jack, or colby jack)
2 cups pulled pork (can substitute cooked chorizo, ground beef, or shredded chicken or this can be omitted)

Steps:

Set Instant Pot to saute, and then add a small amount of oil. Add in the jalapeno and onion then cook until softened.
Add the garlic and cook for about 30 seconds or until fragrant.
Add in the Velveeta, shredded cheese, Rotel tomatoes, smoked paprika, corn, and black beans. Stir until cheese is melted and smooth.
Fold in the pulled pork, and stir until combined.
Serve immediately, and switch to the keep warm function. Can store in an airtight container for up to one week.

Ingredients

3/4 lb white american cheese slice
1 cup queso fresco
1 tbp butter
8 ounces cream cheese
1 tablespoon garlic
10 ounces rotel
1 tablespoon milk
1 teaspoon oregano
1 cup water

Steps:

Put one cup of water in the bottom of your instant pot.
Cover the bottom of an instant pot safe bowl with tin foil and place on a trivet that has been placed on the bottom of your instant pot.
Add all ingredients and cover top of bowl with tin foil.
Put on instant pot lid and set for 18 minutes on manual high.
After time is up, quick pressure release and remove lid.
Remove tin foil and whisk immediately until smooth. You may need to set the pot to saute to help.

Brown the Beef: In a skillet pan, brown the ground beef meat over medium heat. Season with a pinch of salt and pepper. Let the meat sit undisturbed for about two minutes, flip and cook the other side, let the meat sit undisturbed for about two minutes. Start breaking the meat with a wooden spatula and the meat is fully cooked. Remove from the heat and set aside.
Turn on the Instant Pot to sauté over medium heat (normal). Melt butter and add cornstarch, cook and keep stirring for about two minutes to avoid grainy dipping sauce.
Add chopped onion and jalapenos, keep stirring until fragrant, add garlic, chili powder, cumin, and stir for about 30 seconds.
