1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon sea salt
6 eggs
1 cup sugar
1/4 cup water
3 teaspoons mexican vanilla
14 ounces sweetened condensed milk
13 ounces evaporated milk
3 cups heavy cream

Steps:

  • Spray the bottom and sides of a 9 inch diameter pan with 3 inch sides with vegetable cooking spray and set aside.
  • Preheat oven to 350 degrees.
  • Sift together flour, baking powder, and salt; set aside.
  • Combine eggs and sugar in the bowl of a stand mixer and beat on high speed until doubled in volume, about 5 minutes. Reduce speed to low; add the water and 1 teaspoon of the vanilla. Mix well.
  • On very low speed or by hand using a long spatula, gently fold dry ingredients into the batter.
  • Pour batter into prepared pan and bake for 35-40 minutes or until the cake is firm on top and has pulled away from the sides of the pan.
  • Remove from oven and place pan on a rack to cool for 10-15 minutes.
  • Turn the cake out on a serving platter, place a cake polate over the cake and turn it right side up. Set aside to continue cooling.
  • While cake is cooling, whisk together the sweetened condensed milk, the evaporated milk, 2 teaspoons vanilla, 1 cup cream and set aside. Using a serrated knife, gently slice off the top skin of the cake and discard. Prick the cake all over with a long toothpick (To allow the cake to soak up the liquid.).
  • Pour milk mixture over the cake in several batches, allowing it to soak in as much as possible each time. Refrigerate.
  • When ready to serve, pour the remaining 2 cups cream into a chilled bowl and beat with chilled beaters until stiff peaks form. Pipe or spread the whipped cream on the top and sides of the cake.
  • Garnish with fresh fruit slices.

CHOCOLATE TRES LECHES CAKE

The traditional version is a white, vanilla flaovered cake that is infused with 3 types of milk--sweet milk, whole milk and cream. This chocolate version was published in Sabroso!, a southwest dining guide. The preparation time and cook time are estimates. When making a tres leches cake it is usually best to begin early in the morning or even the day before in order to have it ready in the evening. The process is lengthy and time consuming; but oh what wonderful results.

6 eggs, separated
2 cups light brown sugar, packed
2 cups all-purpose flour
1/2 cup cocoa powder
3 teaspoons baking powder
2/3 cup milk
2 teaspoons vanilla
1 (12 ounce) can evaporated milk
1 (14 ounce) can sweetened condensed milk
5 ounces unsweetened chocolate, melted
1/3 cup heavy whipping cream
1 1/2 cups heavy whipping cream
12 ounces semisweet chocolate, coarsely chopped
2 teaspoons vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Prepare a cardboard circle using the bottom of cake pan as a guide; set aside.
  • Grease two 9-in round cake pans then dust with powdered cocoa, knocking out excess.
  • For the cake, in a large bowl combine flour, cocoa and baking powder.
  • In a medium size bowl, combine the milk and vanilla.
  • Set both aside.
  • Place egg whites in a clean bowl and beat at high speed until peaks are formed.
  • Turn the mixer down to medium speed and gradually add the sugar to the egg whites.
  • Once the sugar is dissolved, add egg yolks and beat for 3 minutes.
  • Continue beating egg white mixture on medium-low speed and add flour and milk alternately until well blended.
  • Divide batter between the two pans and bake for 30-35 minutes or until a toothpick inserted in center comes out clean.
  • Leave the cakes in the baking pans.
  • While the cakes are still warm, punch holes in cake with wooden skewer.
  • Combine the sauce ingredients and pour evenly over the two layers.
  • Place the cakes in refrigerator and allow to cool.
  • In a small, heavy saucepan on medium heat, stir the cream and chocolate together until chocolate is melted and mixture is blended.
  • Add vanilla and stir for 1 minute.
  • When ready to assemble, remove cake for refrigerator and allow to reach room temperature.
  • The cakes will be very moist and will need special handling.
  • Run a spatula around the inside of the pan and slightly under layers to loosen.
  • Place the prepared cardboard over one pan and invert.
  • Pour some frosting over the layer and spread with spatula.
  • Using your hand or a spatula to hold second layer in pan, invert onto frosted layer and carefully lift pan away.
  • Set the cake on a rack over a jellyroll pan and power the warm frosting over the cake, smoothing with a spatula to completely coat top and sides of cake.
  • Let stand at room temperature for 10 minutes and scape any excess frosting from the jellyroll pan back into the saucepan.
  • Heat excess frosting, stirring until smooth.
  • Cool slightly and againpour over the cake, smoothing with a spatula over top and sides.
  • Refrigerate until glaze is set.
  • Let cake stand at room temperature for at least 15 minutes before serving.
  • Garnish with fresh strawberries or dust lightly with powdered sugar.

3 egg whites
3 egg yolks
1/4 cup milk
1 cup all-purpose flour
2 teaspoons baking powder
1/8 teaspoon cream of tartar
1 cup sugar
1 cup whipping cream
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) can evaporated milk
2/3 cup light corn syrup
2 egg whites

Steps:

  • Let the first 3 egg whites, the egg yolks and the ¼ cup milk stand at room temperature for 30 minutes. In a medium bowl combine flour and baking powder; set aside. Grease 9x9x2-inch baking pan; set aside.
  • In a large mixing bowl combine the egg whites and cream of tartar. Beat on medium speed of an electric mixer until soft peaks form; gradually add 1 cup sugar while beating on high speed. Beat in egg yolks, 1 at a time, beating well after each addition. On low speed, beat in flour mixture ¼ at a time. Beat in ¼ cup milk just until combined. Pour into prepared pan.
  • Bake in a350 degree oven for 25 to 30 minutes of until a toothpick inserted into the center comes out and top springs back when lightly touched . Let cool on a wire rack.
  • Combine whipping cream, sweetened condensed milk, and evaporated milk. With a tooth pick, poke holes in top of cake at 1 inch intervals. Pour milk evenly over top. Cover and refrigerate over night.
  • For topper, in a large heat proof bowl, combine corn syrup and remaining 2 egg whites. Bring 1 inch of water to a simmer in a very large skillet. Place the bowl in the skillet of simmering water. Beating constantly with a hand-held electric mixer, beat 2-3 minutes or until temperature registers 140 degrees on an instant-read candy thermometer. Continue beating over hot water for 5 minutes. Carefully remove bowl from pan. Beat 2-3 minutes longer or until cool. Spoon atop cake. Serve within 2 hours. When cut milk seeps out and pools around cake.

  • Slowly pour over cake, letting the liquid absorb.
  • Cover and refrigerate.
  • Serve cold, with whipped cream and strawberries if desired.

Tres Leches Cake is a very moist cake filled with a mixture of "milks." It is a favorite Mexican and South American Dessert. I got the recipe from Chela, my housekeeper who is from Mexico. The Cake preparation includes 3 parts: the cake, the filling, and the frosting.

1 1/2 cups flour
5 eggs
1 cup sugar
2/3 cup cooking oil
1 teaspoon vanilla

1 cup milk
1 (12 ounce) can evaporated milk
1 (14 ounce) can sweetened condensed milk (NOT evaporated milk)
1/2 pint whipping cream or 1/2 pint heavy cream
1/2 pint whipping cream or 1/2 pint heavy cream
3 tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350F and spray a 13 x 9" cake pan with cooking spray (Pam).
  • Mix cake ingredients together and pour into prepared cake pan.
  • Bake for 45-50 minutes until knife inserted in middle comes out clean.
  • Allow to cool for 20 minutes.
  • While the cake is baking, mix filling ingredients together and refrigerate.
  • For frosting, whip cream until soft peaks form; blend in sugar gradually and add vanilla extract.
  • When cake is done, allow to cool; then fill with milk filling.
  • You can poke holes in the cake or use a flavor injector.(I use a syringe since I am a nurse).
  • Frost with whipped cream and decorate.

Steps:

  • For the cake:.
  • Preheat the oven to 350 degrees F. Lightly oil and flour a 13 by 9-inch metal pan and set aside.
  • Whisk together the cake flour, baking powder and salt in a medium mixing bowl and set aside.
  • Place the butter into the bowl of a stand mixer. Using the paddle attachment, beat on medium speed until fluffy, approximately 1 minute. Decrease the speed to low and with the mixer still running, gradually add the sugar over 1 minute. Stop to scrape down the sides of the bowl, if necessary. Add the eggs, 1 at a time, and mix to thoroughly combine. Add the vanilla extract and mix to combine. Add the flour mixture to the batter in 3 batches and mix just until combined.   • Remove the cake pan to a cooling rack and allow to cool for 30 minutes. Poke the top of the cake all over with a skewer or fork. Allow the cake to cool completely and then prepare the glaze.
  • For the glaze:.
  • Whisk together the evaporated milk, sweetened condensed milk and the half-and-half in a 1-quart measuring cup. Once combined, pour the glaze over the cake. Refrigerate the cake overnight.
  • Topping:.
  • Place the heavy cream, sugar and vanilla into the bowl of a stand mixer. Using the whisk attachment, whisk together on low until stiff peaks are formed. Change to medium speed and whisk until thick. Spread the topping over the cake and allow to chill in the refrigerator until ready to serve.
