Amazing, healthy apple muffins made with maple syrup and whole wheat flour! No one will guess that this simple cinnamon apple muffin recipe is good for you, too. Recipe yields 12 muffins.

1 3/4 cups white whole wheat flour or regular whole wheat flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup grated apple
1 cup apple diced into 1/4" cubes
1/3 cup melted coconut oil or extra-virgin olive oil
1/2 cup maple syrup or honey*
2 eggs, preferably at room temperature
1/2 cup plain Greek yogurt (I used full-fat but any variety should do)
1/2 cup applesauce
1 teaspoon vanilla extract
1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top

Steps:

  • Preheat oven to 425 degrees Fahrenheit. If necessary, grease all 12 cups on your muffin tin with butter or non-stick cooking spray (my pan is non-stick and doesn't require any grease).
  • In a large mixing bowl, combine the flour, baking powder, cinnamon, baking soda and salt. Blend well with a whisk. Add the grated apple (if it is dripping wet, gently squeeze it over the sink to release some extra moisture) and chopped apple. Stir to combine.
  • In a medium mixing bowl, combine the oil and maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt, applesauce and vanilla and mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.)
  • Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). The batter will be thick, but don't worry! Divide the batter evenly between the 12 muffin cups. Sprinkle the tops of the muffins with turbinado sugar. Bake muffins for 13 to 16 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.
  • Place the muffin tin on a cooling rack to cool. If you have leftover muffins, store them, covered, at room temperature for up to 2 days, or in the refrigerator for up to 4 days. Freeze leftover muffins for up to 3 months.

1 cup whole wheat flour
1 cup rolled oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly ground nutmeg
2 cups apples (finely chopped)
1 egg (beaten with 1/2 cup milk)
1 cup unsweetened applesauce
1/4 cup honey
2 tablespoons melted butter

Steps:

  • Preheat oven to 375°F.
  • Generously butter a 12 cup muffin tin (or spray them well with a non-stick spray).
  • Combine the flour, oats, baking powder, baking soda, cinnamon, and nutmeg in a medium-sized bowl and mix well. Set aside.
  • In a small bowl blend the egg and milk with the applesauce, honey, and butter. Add the chopped apples and mix them in well. Pour this mixture over the dry ingredients and mix with a fork just until moistened. Fill the prepared muffin tins two thirds full.
  • Bake the muffins at 375°F for about 25 minutes, or until a wooden toothpick inserted into the center comes out clean.
  • Loosen the muffins from the pan with a small spatula and remove them to a wire rack to cool.
  • Makes 12 muffins.

1 cup honey-nut flavor toasted oat cereal (Kellogg's Honey and Toasted Almond and Oats)
1 cup low-fat milk
1 egg, slightly beaten
2 tablespoons sugar
1 1/4 apples
1 tablespoon soft margarine
1 1/4 cups self-rising flour
1/4 teaspoon cinnamon

Steps:

  • Place cereal in a mixing bowl; add milk, egg, and sugar.
  • Mix,and allow to stand for 5 minutes at least.
  • Cut the 1 large apple into tiny cubes, and shred the 1/4th of another.
  • Mix with margarine.
  • Stir in to a bowl with the cereal mixture.
  • Using a wooden spoon, mix with the milk and egg mixture.
  • Spoon into 12 muffin tray that has been lightly sprayed with nonstick spray, or greased.
  • Bake for 30 minutes in preheated oven at 350°F.

1-1/2 cups quick-cooking oats
1 cup all-purpose flour
1/3 cup packed brown sugar
3 teaspoons baking powder
3/4 teaspoon salt
1 egg
2/3 cup milk
1/3 cup vegetable oil
1/4 cup honey
1/2 cup raisins, optional
1/2 cup chopped walnuts, optional

Steps:

  • In a bowl, combine the oats, flour, brown sugar, baking powder and salt. In another bowl, combine egg, milk, oil and honey. Stir into dry ingredients just until moistened. Fold in raisins and walnuts if desired., Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

1 cup rolled oats
1 cup 2% buttermilk
3/4 cup whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 tablespoon orange rind
2 eggs, beaten or 2 egg substitute
1/3 cup light brown sugar, packed
6 tablespoons fat-free margarine, melted

Steps:

  • Combine oats and buttermilk in bowl and let sit for 1 hour.
  • While waiting for oats to soak, preheat the oven to 400 degrees and sift together the flour, baking power, salt, baking soda, sugar, and cinnamon in separate bowl from the oats and buttermilk.
  • Add the eggs (or substitute) to the oats/buttermilk as well as the rine of 2 oranges and the melted fat free margarine.
  • Combine the bowl with the oats and wet ingredients to the bowl with the dry ingredients and mix until combined.
  • Spoon mix into muffin tins about 2/3 full.
  • Bake in 400 degree oven for 15 minutes or longer if needed.

2 tablespoons all-purpose flour
