Date Muffins with Streusel Topping image

These date muffins are rich, sticky, toffee-pudding-inspired little lovelies made with oats and pecans and streusel. Mmmmmm.

Provided by Anne Bramley

Categories     Breakfast

Time 1h

Number Of Ingredients 14

2 tablespoons all-purpose flour
3 tablespoons rolled oats
1/4 cup packed light or dark brown sugar
1/2 cup chopped toasted pecans
2 tablespoons unsalted butter (softened)
9 ounces whole Medjool dates (pitted)
3/4 cup boiling water
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons unsalted butter (softened)
3/4 cup packed dark brown sugar
2 large eggs
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, stir together the flour, oats, brown sugar, and pecans. Using a fork, cut in the butter until well combined and the crumbly mixture begins to hold together a bit.
  • Preheat the oven to 375°F (190°C). Butter a 12-cup muffin tin.
  • Place the dates in a shallow bowl (in a single layer if possible), pour the boiling water over them, and let soak for 15 minutes.
  • Transfer the dates and soaking liquid to a food processor and puree until almost smooth save for a few pea-sized fruit pieces. Set aside to cool slightly. Meanwhile, in a medium bowl, combine the flour, baking powder, and salt.
  • In the bowl of an electric mixer, beat the butter and brown sugar. With the motor running, mix in the eggs, 1 at a time. Add the vanilla. Add half the flour mixture and mix until moistened. Follow with the date puree and, when thoroughly combined, mix in the remaining flour mixture. Scrape down the sides of the bowl and give a final stir with a spatula to make sure all the ingredients are thoroughly combined.
  • Divide the batter among the muffin cups. Top with the streusel and press down gently to adhere. Bake for 20 to 25 minutes.

DATE MUFFINS

Date Muffins image

These muffins are perfect for Valentine's Day. "I love the idea of a 'date' muffin," Michael says.

Provided by Food Network

Time 1h10m

Yield 18 muffins

Number Of Ingredients 14

1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature, plus more for the pans
3 cups water, plus 1 cup cool water
2 cups chopped pitted dates
1 cup granulated sugar
1/2 cup packed dark brown sugar
1/3 cup molasses
2 large eggs
1 teaspoon pure vanilla extract
1 teaspoon kosher salt
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves

Steps:

  • Preheat the oven to 375˚ F. Butter 18 muffin cups and line with paper liners. In a medium saucepan, bring about 3 cups water to a boil over medium heat. Put the chopped dates in a medium bowl and cover with the hot water. Let the dates soften, about 10 minutes.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and both sugars until light and fluffy, 5 to 8 minutes. Add the 1 cup cool water, molasses, eggs, vanilla and salt; beat briefly to combine (the mixture may look curdled and runny).
  • In another medium bowl, sift together the flour, baking soda, cinnamon, ginger and cloves. Add the dry ingredients to the wet ingredients and stir until just combined (do not overmix).
  • Drain the dates, discarding the liquid, and spread them out on a baking sheet to cool. Flatten the dates with the back of a spoon to crush any larger pieces. When cooled, stir the dates into the batter.
  • Divide the batter among the muffin cups, filling them almost to the top. Bake in the middle of the oven until the muffins are golden brown and spring back when gently pressed, 20 to 27 minutes. Let cool 10 minutes in the pan, then transfer the muffins to a rack to cool completely.

BASIC MUFFIN RECIPE

Basic muffin recipe image

Good Food reader Charlotte Hilsdon shares her simple, chocolate chip muffin recipe, to which you can add fruit, chocolate or nuts

Provided by Good Food team

Categories     Afternoon tea, Dessert, Snack, Treat

Time 45m

Yield Makes 20

Number Of Ingredients 7

2 medium eggs
125ml vegetable oil
250ml semi-skimmed milk
250g golden caster sugar
400g self-raising flour (or same quantity plain flour and 3 tsp baking powder)
1 tsp salt
100g chocolate chips or dried fruit such as sultanas or dried cherries (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
  • Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
  • Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
  • Stir in 100g chocolate chips or dried fruit if using.
  • Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
  • Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.
