MY SISTER'S SWEET POTATO BREAD
This is my sister Barb's recipe. It is the first thing I ever made for my husband when we first met and he flipped over it. He ate a whole loaf driving home from my house!

Steps:
- Preheat oven to 325 degrees.
- In a large mixing bowl, combine sugar, oil, egg, sweet potatoes and vanilla.
- In a separate bowl, mix dry ingredients (except walnuts) together well and add to wet ingredients.
- Stir until just combined.
- Fold in walnuts.
- Pour into 2 standard loaf pans.
- Bake for 75 minutes or until thin knife inserted in center comes out clean.

- 1. Preheat oven to 350 degrees. Grease and flour two loaf pans, set aside.
- 2. In large mixing bowl, beat together sugar, eggs and oil. Stir in orange juice and mashed sweet potatoes. In separate bowl mix together flour, salt, baking soda and spices. Stir into sweet potato mixture just until combined. Pour into prepared pans and bake 1 hour and 15 minutes or until golden brown and toothpick inserted in center comes out clean.
- 3. Cool in pans for 10 minutes. Remove from pans and cool on wire rack.

- Combine sugar and oil; beat well. Add eggs and beat. Combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes and chopped nuts.
- Pour batter into greased 9x5 inch loaf pan (or 2 small loaf pans). Bake at 350 degrees F (175 degrees C) for about one hour.

- Preheat oven @ 350. 1 bread loaf = 1 hour OR 4 mini Loaf pan = 45 minutes.
- Mix dry ingredients.
- Beat together the following: 2 Cups sugar, 3/4 cup oil (I always use light olive oil), 3 large eggs, and 1 teaspoon vanilla. Add into liquid mixture: 1 1/2 cups sweet potato grated and 1 1/2 cups zucchini grated.
- Add in dry ingredients. Stir in chocolate chips or nuts. Don't forget to grease the pans. If there is extra of the potato or zucchini, I will often measure out for another batch and stick it in the freezer for next time! ENJOY!

- Preheat oven to 400°F minutes. Butter a 9-by-5-inch loaf pan. Pierce sweet potato several times with a fork and place on a rimmed baking sheet lined with foil. Bake until soft and cooked through, 50 to 60 minutes. Scoop out flesh into a blender or food processor; discard skin. Add milk and purée until smooth. Scrape the potato mixture into a medium bowl and return 1 1/3 cups of the mixture to the blender. Add eggs, oil, vanilla, and dark brown sugar and purée until smooth. Scrape into a large bowl.
- Lower the oven to 325°F. In a medium bowl, whisk the flour, salt, baking powder, and baking soda. Whisk the dry ingredients into the wet ingredients in three batches to avoid overworking the flour. Make sure batter is fully mixed.
- Pour batter into prepared loaf pan and place on a rimmed baking sheet. Bake in oven, rotating once, until a toothpick inserted into center comes out clean, 60 to 75 minutes. Let cool in pan on a wire rack for 2 hours.
- Run the dull side of a bread knife along the inner edges of the loaf pan. Unmold the bread and drizzle with caramel. Sprinkle with sea salt, Aleppo pepper, and pecans before serving.

- 1. Mix Crisco, sugar and sweet potato(by hand, using dough hooks on electric mixer or using potato masher).
- 2. Add flour gradually, saving 1/2 cup to roll dough in.
- 3. Spoon balls (size of a large egg) into flour.
- 4. Roll balls and flatten into biscuits. Sprinkle with flour.
- 5. Layer floured biscuits into pie pan with waxed paper.
- 6. Cook on biscuit pan at 425 degrees for 10 minutes or until brown.
- 7. Serve warm with butter or margarine.
- 8. *Dough may be kept in the refrigerator for up to one week.
