MOROCCAN KEFTA KEBAB RECIPE

Moroccan Kefta Kebab Recipe image

Traditional Moroccan recipe for seasoned kefta, a ground beef or lamb mixture used to make grilled Kefta Kebabs. The same base recipe can be used for Moroccan meatballs and other Moroccan kefta dishes. Allow extra time for preheating your grill or oven.

Provided by Christine Benlafquih | Taste of Maroc

Categories     Main Course

Time 30m

Number Of Ingredients 15

1 lb. finely ground beef or lamb (or a mix of the two)
4 to 5 oz. beef or lamb suet ((recommended for classic flavor and texture))
1 medium onion (finely chopped or grated)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1 tbsp chopped fresh mint leaves ((optional; great with lamb))
2 tsp sweet paprika
1 tsp ground cumin
1 tsp salt
1/4 tsp black pepper
1 tsp ground cinnamon ((optional))
1 tsp ground ginger ((optional))
1 tsp ground turmeric ((optional))
1/2 tsp ras el hanout ((optional))
1/4 tsp cayenne pepper ((optional))

Steps:

  • In a large bowl, combine the meat with the herbs and spices. Knead by hand for a minute or two to ensure the seasoning is evenly distributed.
  • Shape the kefta into small sausage-like logs. Arrange the logs in a grill basket or thread and mold them onto skewers.
  • Grill the kebabs over medium-hot coals several minutes per side or until evenly browned and cooked through but still juicy. Moroccan preference is for little to no pink so watch carefully to avoid avoid drying out the meat.
  • Alternatively, the kefta can be baked in the oven. Preheat the oven to 350° F (180° C). Arrange the shaped meat on a rack set over a pan and bake until browned and cooked through, approximately 15 to 20 minutes. Time will depending on how thick the kefta was shaped.
  • Wrap the cooked kebabs in foil to hold warm until serving.

MOROCCAN SPICED MINCE WITH COUSCOUS

Moroccan spiced mince with couscous image

Adding dried fruit, fresh mint and warm spices to savoury dishes is typical of North African cooking. Quorn replaces meat in this recipe

Provided by Good Food team

Categories     Dinner, Main course

Time 40m

Number Of Ingredients 12

2 tbsp sunflower oil
2 medium onions , roughly chopped
350g pack Quorn mince
1 tbsp ground cumin
1 tsp ground cinnamon
2 tsp ground turmeric
100g ready-to-eat dried apricots , quartered
600ml vegetable stock
280g couscous
grated zest of 2 lemons
4 tbsp chopped fresh mint
50g unsalted cashews , toasted under the grill

Steps:

  • Heat the oil in a large nonstick pan, add the onions and cook gently for 5 minutes until they soften. Stir in the Quorn and spices (unlike meat and poultry, Quorn doesn't need to be browned), then add the apricots and stock. Bring to the boil, then turn the heat down and cook gently for 10-15 minutes.
  • Meanwhile, make up the couscous following the packet instructions - it will take about 450ml boiling water to give it a nice fluffy texture. Fork through the lemon zest and mint. Season to taste.
  • Spoon the couscous onto serving plates, pile the Quorn mixture on top and scatter with the cashews.

MOROCCAN BRAISED BEEF

Moroccan Braised Beef image

I found this recipe on another website. It originally came from Bon Apetit magazine. I made it when I wanted to do something a little different with stewing beef. The original recipe suggests to serve it with couscous, but anything to soak up the delicious gravy is good. When I made it, I used 1 and 1/2 cups of red wine since I didn't have any sherry and added a little sugar.

Provided by Paja9203

Categories     Stew

Time 1h55m

Yield 6-8 serving(s)

Number Of Ingredients 14

3 tablespoons olive oil, divided
2 1/2 lbs stewing beef, cut into cubes
2 cups onions, chopped
3 garlic cloves, finely chopped
1 tablespoon garam masala
1 tablespoon paprika
1 teaspoon ground cumin
1/2 teaspoon turmeric
1/2 teaspoon cayenne (more or less, depending how hot you like it)
1 cup dry red wine
1/2 cup dry sherry
2 cups beef broth
1 (14 1/2 ounce) can diced tomatoes with juice
1 1/2 cups golden raisins

Steps:

  • Season the beef with salt and pepper and brown it in the oil in a skillet in batches. (Optional: after each batch you can deglaze the pan by adding some of the beef stock and stirring to loosen the browned bits. Keep this liquid to add to the stew later.).
  • Remove beef.
  • Add a little more oil and saute the onions (seaoning with salt and pepper) until nicely browned (about 10 minutes).
  • Add the garlic and next 5 ingredients and stir for 1 minute. Add the wine and sherry, turn the heat to high and reduce until thick, about 8 minutes.
  • Add the beef broth, the tomatoes, the beef cubes (with accumulated juices), the broth you used for deglazing and the raisins.
  • Reduce heat to medium-low. Simmer for about an hour and a quarter until the sauce is thick and the beef is tender.
  • Alternately, put the pot in a 275 to 300 degree oven.
  • Taste and adjust the seasoning.
  • The stew can be refrigerated and reheated before serving (this helps to bring out the flavours) or served right away.

MOROCCAN GROUND BEEF KEBAB / SKEWERS

Moroccan Ground Beef Kebab / Skewers image

Ground beef kebabs can be bought from street vendors in Morocco. They are served with thick bread instead of utensils. Moroccans use the bread to break off a chunk of meat & then pop it into their mouth. (The times listed does not included 1 hour in the fridge.)

Provided by FDADELKARIM

Categories     One Dish Meal

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 11

2 lbs ground beef
1/2 medium onion, grated
2 garlic cloves, minced
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh cilantro, finely chopped
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2-1 teaspoon cayenne pepper
1/2 teaspoon ras el hanout spice mix, Ras El Hanout - Moroccan Spice Mix

Steps:

  • Combine the beef, onion, parsley, cilantro, & spices in a large bowl, refrigerate for 1 hour.
  • Wash your hands but don't dry them. Gently pack small amounts of the meat mixture around the skewers, forming a 4-inch long sausage shape on each skewer.
