INSTANT POT BBQ PORK- JAMAICAN STYLE

Sweet, spicy, tangy and all things Jamaican flavors! Ready in one hour from the instant pot.

Number Of Ingredients 10

1 3-4lb pork roast
1 red onion, sliced
3 rainbow bell peppers, sliced
1-12oz bottle BBQ sauce, your choice
1 mango, ripe, peeled, cut
1 hot pepper- we used habanero
1 red bell pepper, chopped
1 tsp Jamaican Jerk Seasoning
1 pinch salt & pepper
Olive Oil

Steps:

  • Using a smoothie style blender, combine the sauce ingredients (BBQ sauce, mango, hot pepper, bell pepper, salt, pepper and additional jerk seasoning). Set aside.
  • Rub the pork roast with 2 Tablespoons of olive oil and then rub on the jerk seasoning.
  • Set your Instant Pot to the SAUTE setting and add 2 Tablespoons of olive oil.
  • Once the oil is hot, add the red onion and sauté 2 minutes.
  • Add the pork roast skin side down and sear until golden color is achieved, about 2-3 minutes. Sear each side of the roast.
  • Pour the sauce all over the roast and add 1/2 cup of water.
  • Secure the Instant Pot lid and set Instant Pot to MANUAL for 50 minutes.
  • Natural release.
  • Remove the pork to shred or slice, as desired.
  • Before dealing with the pork, sprinkle the chopped rainbow bell peppers into the Instant Pot.
  • Select SAUTE setting and cover with instant pot lid. Allow to cook for 3 minutes.
  • Once the pork is shred or sliced up, add back to the Instant Pot.
  • Serve on rolls, tortillas or a bed of rice.

You can thank your Instant Pot for pulled pork in just under two hours. This gadget juggles different cook settings (slow cooking, pressure cooking and stove-top browning) to make favorite dishes that your crowd won't have to wait long to devour.

3 tablespoons light brown sugar
2 teaspoons hot paprika
1 teaspoon mustard powder
1/2 teaspoon ground cumin
Kosher salt and freshly ground pepper
One 4-pound boneless pork shoulder, trimmed of excess fat and cut into 6 pieces
2 teaspoons vegetable oil
1/2 cup apple cider vinegar, plus more to taste
3 tablespoons tomato paste
12 hamburger potato buns
1 cup barbecue sauce, for serving
4 cups coleslaw, for serving

Steps:

  • Combine paprika, mustard powder, cumin, 1 tablespoon brown sugar, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Rub the spice mixture all over the pork.
  • Turn the Instant Pot® (see Cook's Note) to the high saute setting. Add the oil and once hot, add the pork and cook in two batches, turning, until browned on all sides, about 5 minutes. Switch the Instant Pot® to the warm setting, remove the pork and transfer to a plate.
  • Whisk 3/4 cup water into the drippings in the Instant Pot®. Add the vinegar, tomato paste, the remaining 2 tablespoons brown sugar and 2 cups water and whisk to combine. Add the pork back. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 1 hour.
  • After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Careful of any remaining steam, unlock and remove the lid and transfer the pork to a large bowl.
  • Switch the Instant Pot® to the normal saute setting and simmer the juices until reduced by half, about 15 minutes. While the juices are reducing use a ladle to remove any fat that rises to the top. Season to taste with salt.
  • Meanwhile, use 2 forks to shred the pork in to small chunks.
  • Add 3 cups of the reduced cooking liquid to the chunked pork and season with salt and vinegar to taste. Serve in hamburger buns with barbecue sauce and coleslaw.

1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/8 teaspoon ground cloves
2 teaspoons brown sugar, firmly packed
3/4 teaspoon salt, divided
1/2 teaspoon black pepper, freshly ground
1 lb pork tenderloin, trimmed of visible fat
1 1/2 teaspoons honey, dark
1 teaspoon tomato paste
2 teaspoons white vinegar

Steps:

  • Combine the ginger, garlic powder, onion powder, cayenne pepper, cloves, brown sugar, 1/2 teaspoon of salt & the black pepper.
  • Rub spice mixture over the pork.
  • Let stand 15 minutes.
  • Combine the honey, tomato paste, vinegar and the remaining 1/4 teaspoon salt in a separate bowl. Stir to blend. Set aside.
  • Broil pork @ medium-high heat, about 3 minutes each side.
  • Reduce heat, continue cooking about 14-16 minutes.
  • Baste with honey-tomato glaze.
  • Cook until pork is slightly pink in the center.
  • Cool on a cutting board for 5 minutes before slicing.
