LEFTOVER STEAK ENCHILADAS

We had a little steak left over and since it wasn't big enough for the whole family I came up with these :)

Number Of Ingredients 9

cooking spray
1 cup onion, chopped
1 cup cooked steak, cut in 1/4-inch - 1/2-inch dice
15 ounces black beans, rinsed
1 1/3 ounces taco seasoning mix
2 ears fresh corn, kernals cut off, approx 1 1/4 cup
2 cups cheddar cheese, shredded and divided
2 cups prepared enchilada sauce
40 inches flour tortillas

Steps:

  • Coat a 9 X 9 baking dish with cooking spray and set aside.
  • Coat a medium sized skillet with cooking spray and saute onions until softened.
  • Put in steak, rinsed black beans and taco seasoning mix with water (should say on package-if not around 2/3 cup).
  • Cook until mixture is thickened.
  • Add corn kernals and 1 cup of cheese and mix well.
  • Spoon 1/4 of the mixture into the center of each tortilla and roll up.
  • Place enchiladas seam side down in the prepared baking dish.
  • Preheat oven to 350ºF.
  • Pour enchilada sauce over the enchiladas making sure to cover the tortillas and top with remaining cheese.
  • Bake for 15 - 20 minutes or until bubbly.
  • Note: These can be frozen ahead by preparing the enchiladas through #7, bagging in a kit, the sauce in one bag, enchiladas separate, and cheese topping.
  • If you are cooking from the freezer, thaw in the refrigerator, top with sauces and bake as directed.

1 cup chopped onion
1 pound sirloin steak, cut into bite size strips
1 teaspoon minced garlic
2 (7 ounce) cans diced green chile peppers
4 cups tomato sauce, divided
2 teaspoons chili powder
1 (12 ounce) package corn tortillas
½ cup fresh salsa
¾ cup chopped black olives, drained
2 cups shredded Cheddar cheese
½ cup sour cream
⅓ cup chopped green onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish.
  • In a skillet over medium heat, saute onions until almost translucent. Stir in beef, garlic, and chile peppers, and continue cooking until the meat is no longer pink. Pour in the tomato sauce and chili powder. Mix thoroughly and heat through. Remove from heat.
  • Spoon a little of the meat mixture into a corn tortilla and add small amounts of salsa, Cheddar cheese and olives. Fold the tortilla up and place in the prepared casserole dish. Repeat for the remaining tortillas using up all of the meat mixture. Reserve 1/2 cup of Cheddar cheese for topping.
  • Pour the other half of the tomato sauce and sour cream over all of the tortillas. Top with green onions and 1/2 cup of reserved Cheddar cheese.
  • Bake 30 minutes in the preheated oven, or until hot and bubbly.

1 tablespoon lite olive oil
1 onion, sliced
1 sweet green pepper, sliced
1 sweet red pepper, sliced
1 yellow pepper, sliced
2 cloves garlic, minced
2 cups cooked roast beef, cubed
1 1/2 cups taco sauce
1 teaspoon cumin
6 flour tortillas
1 cup cheddar cheese, shredded
1/2 cup sour cream
1 tablespoon green onion, chopped

Steps:

  • Saute the onion & garlic until the garlic is fragrent & the onion is soft.
  • Add the sweet peppers for a minute.
  • Remove from heat add beef and 1/2 cup taco sauce.
  • Spoon about 3/4 cup of the meat mixture down the middle of each tortilla.
  • Sprinkle with 1 tbsp of cheese.
  • Fold the tortilla sides up so they overlap slightly.
  • Place them side by side, seam side down, in a 11x7 baking dish.
  • Spoon the remaining Taco sauce over them.
  • Spoon the sour cream in a line down the middle.
  • Sprinkle with the remaining cheese.
  • Bake in 350F degrees oven for about 30 minutes.

This recipe takes time but is pretty easy to put together and serve. A dish full of flavor, color, and texture and as close to Mexican as I know how to get. I served this family-style, letting everyone choose their own toppings of Greek yogurt, chipotle sauce, and guacamole. Refried beans and a fresh-from-the-garden tossed salad makes this one delicious and complete meal.

2 pounds beef chuck steaks
chili powder
¼ teaspoon onion powder
¼ teaspoon ground cumin
¼ teaspoon garlic powder
salt to taste
¼ teaspoon ground black pepper
2 ½ tablespoons vegetable oil, divided
4 green onions, chopped, divided
4 cloves garlic, peeled
½ cup tequila
¼ cup lime juice
¼ cup lemon juice
¼ cup orange juice
1 tablespoon grated fresh ginger
1 kiwi, peeled
3 tablespoons chipotle cooking sauce (such as Herdez®)
6 (8 inch) flour tortillas
1 (12 ounce) bottle pasilla chile cooking sauce (such as Herdez®)
1 (12 ounce) package shredded mozzarella cheese
2 tablespoons chopped fresh chives

Steps:

  • Season chuck steaks on both sides with chili powder, onion powder, cumin, garlic powder, salt, and black pepper.
  • Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Cook chuck steaks in the hot oil in batches until browned, about 5 minutes per side. Transfer to a slow cooker.
  • Heat remaining 1 1/2 teaspoon vegetable oil in the same skillet. Add 2 green onions and garlic; cook and stir until browned but not burnt, 3 to 4 minutes. Remove from heat; chop garlic coarsely and return to the skillet.
  • Whisk tequila, lime juice, lemon juice, orange juice, and ginger together in a bowl. Mash in kiwi using a fork. Stir in green onion-garlic mixture and chipotle sauce. Pour over chuck steaks in the slow cooker.
  • Cook on Low until steaks are fork-tender, 6 to 8 hours.
  • Transfer chuck steaks to a cutting board; shred with 2 forks. Mix in 2 raw green onions.
  • Pour cooking liquid from the slow cooker into the skillet. Simmer over medium heat until reduced and thickened into a sauce, about 10 minutes. Stir in shredded steak; simmer until most of the sauce is absorbed, about 5 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a 9x13-inch baking dish with 1/4 of the pasilla chile sauce.
  • Spoon shredded steak mixture into tortillas. Wrap up and place seam-side down, close together, in the baking dish. Pour remaining pasilla chile sauce over tortillas. Sprinkle mozzarella cheese and chives on top.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 30 minutes.

1 tablespoon butter
2 medium onions, chopped
1 garlic clove, minced
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup whole milk
2 cans (4 ounces each) chopped green chilies
1/4 teaspoon salt
1/4 teaspoon ground cumin
12 flour or corn tortillas
1-1/2 cups shredded cooked beef or chicken
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
2 green onions with tops, thinly sliced
Sour cream
Salsa

Steps:

  • In a saucepan, melt butter over medium heat. Saute onion and garlic until onion is tender. Blend in flour. Stir in broth, milk, chilies, salt and cumin. Cook and stir until thickened and bubbly. Reduce heat; simmer 5 minutes, stirring occasionally. Set aside. , Grease a 13x9-in. baking dish. Spoon a little sauce in the center of each tortilla; spread to edges. Place about 2 tablespoons meat down the center of each tortilla. Combine cheeses; sprinkle 1-2 tablespoons on top of meat. Roll up tortillas and place in baking dish, seam-side down. Pour remaining sauce over. Sprinkle with green onions and remaining cheese. Bake, uncovered, at 350° for 20-30 minutes or until hot and bubbly. Serve with sour cream and salsa.
