INDIAN SHRIMP AND LENTILS

3 tablespoons unsalted butter
1 large shallot, chopped
3 cloves garlic, minced
1 tablespoon plus 1 teaspoon finely chopped peeled fresh ginger
2 plum tomatoes, cored and chopped
1 1/2 teaspoons garam masala
Kosher salt and freshly ground pepper
1 cup dried red lentils
1 1/4 pounds peeled and deveined shrimp (about 24)
3 cups baby spinach
2 tablespoons canned unsweetened coconut cream
1/2 cup lightly packed fresh cilantro, chopped

Steps:

  • Heat 1 tablespoon butter in a large wide pot or Dutch oven over medium-high heat. Add the shallot, garlic and 1 tablespoon ginger. Cook, stirring occasionally, until the shallot softens, about 2 minutes. Add the tomatoes, 1/2 teaspoon garam masala, a big pinch of salt and a few grinds of pepper. Cook, stirring, until the tomatoes are soft, about 2 minutes.
  • Stir the lentils into the tomato mixture until coated, then add 3 cups water. Bring to a simmer and cook, stirring occasionally, until the lentils are tender and thick, 12 to 15 minutes.
  • Meanwhile, toss the shrimp with the remaining 1 teaspoon ginger, 1 teaspoon garam masala and a pinch each of salt and pepper. Let stand 10 minutes. Heat the remaining 2 tablespoons butter in a medium skillet over medium heat. Add the shrimp and cook, stirring, until just cooked through, 3 to 5 minutes.
  • Stir the spinach and coconut cream into the lentils until the spinach wilts; season with salt and pepper. Divide among bowls. Top with the shrimp and any juices; sprinkle with the cilantro.

1 tablespoon cumin seeds
2 to 3 dried red chiles, such as arbol
2 medium onions, sliced
3 tablespoons ground coriander

2 teaspoons ground cumin
1/2 teaspoon turmeric
1/2 teaspoon cayenne
Salt and freshly ground black pepper
6 medium plum tomatoes, diced
1 1/2 pounds medium shrimp, peeled and deveined
1 cup whole-milk yogurt, divided
Cilantro leaves, for garnish
Chopped fresh green chiles, for garnish

Steps:

  • Heat the oil in a large straight-sided skillet over medium-high heat. Add the cumin seeds and red chiles and cook, stirring, until the fragrant, about 30 seconds. Add the onion and cook, stirring, until lightly browned, about 5 minutes. Add the coriander, ginger, garlic, cumin, turmeric, and cayenne and season with salt and pepper. Cook, stirring occasionally, until dark and fragrant, about 3 minutes more. Add the tomatoes and cook, stirring occasionally, until somewhat soft, about 3 minutes. (You can make the sauce up to this point a day ahead.)
  • When ready to serve, heat the sauce over high heat. As soon as it starts to bubble on the edges, add the shrimp and cook, stirring, until the shrimp turns opaque. Lower the heat, gradually stir in the yogurt, and gently heat it through. (Don't bring it to a boil or the yogurt may separate.) Season with salt and pepper, transfer to a serving platter, and sprinkle with the cilantro and green chiles. Serve.

5 teaspoons coriander seeds
1 teaspoon cumin seeds

For marinade:
2 tablespoons rice wine vinegar
1 tablespoon peanut oil
2 cloves minced garlic
1/2 teaspoon salt
1 pound jumbo shrimp, shelled
For garnish:
2 tablespoons chopped cilantro

Steps:

  • Make Garam Masala: Toast seeds, cloves, and peppercorns in an ungreased frying pan over madium heat for 3-4 minutes, or until they are fragrant. Grind them in a pepper mill. Marinate shrimp: Mix 2 teaspoons of the Garam Masala with the vinegar, oil, salt and garlic. Combine with shrimp and marinate at room temperature 15 minutes. Turn over once. Put shrimp on four skewers and grill them over moderately high heat 2 minutes on a side. Serve with cilantro sprinkled over the shrimp.

2 tablespoons extra-virgin olive oil
1 onion, diced
3 cloves garlic, chopped
3 tablespoons tomato paste
1 cup chopped fresh cilantro, plus more for topping
2 small russet potatoes (about 8 ounces each), peeled and diced
1 small head cauliflower, cut into florets (about 4 cups)
2 cups frozen peas, thawed
2 pieces naan or other flatbread, warmed and cut into wedges

Steps:

  • Toss the shrimp with 1/2 teaspoon garam masala in a medium bowl; season with salt and pepper. Heat 1 tablespoon olive oil in a large pot or Dutch oven over high heat. Add the shrimp in a single layer and cook until the edges are golden, about 30 seconds per side. Remove to a plate with a slotted spoon; set aside.
  • Add the remaining 1 tablespoon olive oil to the pot, then add the onion and garlic. Cook, stirring occasionally, until the onion is lightly browned, 3 minutes. Stir in the tomato paste, the remaining 1 1/2 teaspoons garam masala and the cilantro. Cook, stirring to coat, 30 seconds. Stir in 3 1/4 cups water and the potatoes. Cover, bring to a boil and cook 5 minutes, then uncover and add the cauliflower. Cook over medium-high heat, stirring occasionally, until the cauliflower is tender, about 10 minutes.

1 (12 ounce) can beer
1 tablespoon minced garlic

Steps:

  • Whisk the beer and garlic together in a bowl, toss in the shrimp, then pour everything into a resealable plastic bag. Squeeze out excess air, and seal the bag. Place the bag into a bowl to catch any leaks, then marinate in the refrigerator for at least 2 hours.
  • Heat a cast iron grill pan over medium-high heat until it begins to smoke. Remove the shrimp from the marinade, and shake off excess. Discard the remaining marinade. Cook the shrimp until the shells turn pink and they are no longer translucent in the center, about 5 minutes.

3 tbsp Oil
3 tbsp Oil
1 tsp lime juice
1 tsp Chili Powder
½ tsp Coriander Powder
½ tsp Turmeric Powder

2 tbsp Garlic-Ginger Paste
Salt (to taste)
1 tbsp Cilantro (chopped)

Steps:

  • Combine chili powder, coriander powder, turmeric, pepper, cumin powder, garlic-ginger paste,lime juice, salt, and 1 tbsp oil in a medium bowl. Set aside.
  • Clean the prawns and squeeze to drain.

Note: I made this again tonight and it was raining, so instead of grilling I simply broiled them on high for 3 minutes, flipped them over and broiled them another 3 minutes to perfection. This crispy, fried, shrimp dish, similar to Japanese Tempura, is flavored with Indian spices and then coated with Cream of Rice to make them especially light and crunchy. The recipe is from a restaurant called The Bombay Cafe, and although I haven't tried them yet, they sound so good I wanted to share the recipe so someone else can enjoy them before I get a chance to myself. They could be served as an appetizer, first course, or main course along with other side dishes. Time does not include marinating time.

Number Of Ingredients 9

1 1/2 inches ginger, peeled and coarsely chopped
2 -3 green serrano chilies
1/2 cup fresh cilantro leaves
24 large shrimp, cleaned and deveined
2 teaspoons turmeric
1 teaspoon salt
1/2-3/4 cup cream of rice
oil (for frying)
6 -8 lemon wedges

Steps:

  • Place the ginger, chilies and cilantro in a food processor and process them until everything is finely minced, scraping down the bowl as needed.
  • Put the mixture into a small work bowl and add the shrimp; mix and stir well until the shrimp are well-coated.
  • Add the turmeric and mix, making sure the shrimp are again well-coated.
  • Cover or wrap and place in the refrigerator to marinate for at least 3 hours.
  • When ready to cook, remove the shrimp from the refrigerator, mix in the salt, and allow to stand for 10 minutes.
  • Put about 1/3 of the Cream of Rice (use a little if not enough to coat all the shrimp) in a medium-sized plastic bag (do not use all the Cream of Rice at once or the marinade on the shrimp will make it too moist to coat the shrimp evenly).
  • Pour enough oil into a small, deep saucepan to cover 6 of the shrimp completely at one time and begin to heat the oil until hot enough to fry the shrimp.
  • While the oil is heating, put 6 shrimp into the plastic bag, close the bag, and toss to coat evenly with the Cream of Rice.
  • Place the shrimp on a slotted spoon and ease them into the hot oil; they should sizzle immediately.
  • Turn after 1 minute and fry for another minute, or until evenly golden.
  • Remove the shrimp to paper towels to absorb any excess oil, and repeat the process with another 1/4 cup Cream of Rice and 6 shrimp.
  • Repeat the process one more time with the last 6 shrimp, then serve, garnished with lemon wedges.
