Steps:

  • Blend all ingredients in a blender for a few seconds, until well mixed.
  • Pour mixture into a 10" greased pie plate.
  • Bake at 350 degrees Fahrenheit for 1 hour or until centre tests firm.
  • Then flour will settle to form crust, the coconut forms the topping, the centre is an egg custard filling.

1 cup coconut, dessicated or finely shredded

Steps:

  • Blend all the ingredients until well mixed.
  • Pour into a 10" greased pie plate.
  • Bake at 350°F for 1 hour or until centre feels firm.

1 cup sugar
½ cup flour
¼ teaspoon salt
½ teaspoon baking powder
2 cups milk
1 cup flaked coconut (more if desired)
1 teaspoon vanilla

Steps:

  • Preheat oven to 350F.
  • Place all ingredients to a large bowl and beat together until combined, or place in blender at one time and blend until mixed together. Pour into a greased 9 -10 inch pie dish.
  • Bake for 1 hour or until center is firm and pie is golden.
  • The pie will have a slight wobble to the surface. That will set as it is cooling.
  • When done, crust will be on bottom, custard in the middle, and coconut on top - right where they belong!
  • Allow to cool and refrigerate until completely chilled or overnight.
  • Serve with your favorite ice cream, and sprinkle with toasted coconut.

3/4 cup white granulated sugar
1/2 stick butter or 4 tablespoons (softened)
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/2 cup all-purpose flour
2 cups milk
1 cup shredded coconut

Steps:

  • Cream eggs, sugar, butter and vanilla with mixer.
  • Add nutmeg, flour and milk and continue mixing until all ingredients are wet. Stir in coconut with a spoon.
  • Spray a 10 inch deep dish pie plate with cooking spray and pour in pie ingredients. Bake in a preheated 350 degree oven 55 to 60 minutes until brown on top.

The ultimate in comfort food, this Impossible Taco Pie is layered with ground beef, Rotel, cheddar cheese and a Bisquick topping. It's an easy family dinner recipe.

1 1/2 pounds lean ground beef
1 envelope taco seasoning (1 ounce)
10 ounces Rotel diced tomatoes & green chiles (drained)
1 cup shredded cheddar cheese
1/2 cup Bisquick mix
1 cup milk
3 large eggs

Steps:

  • Preheat the oven to 400º Fahrenheit. Spray a 9" round deep dish pie plate (or cake pan) with cooking spray.
  • Using a skillet over medium heat, brown the ground beef until the beef is no longer pink. Drain off any fat.
  • Add in the taco seasoning and drained Rotel. Mix well and heat through.
  • Spread the beef mixture in the bottom of the prepared pie plate. Sprinkle the shredded cheese over the top.
  • In a small bowl, whisk together the Bisquick mix, milk and eggs.
  • Pour evenly over the beef and cheese.
  • Bake for 25-30 minutes or until the middle of the pie is set and the top is golden brown. A knife inserted in the center should come out clean.
  • Serve immediately.
  • Store leftovers in the refrigerator for up to 3 days.
