An easy recipe for delicious, well-seasoned Asian meatballs with a marvelous sticky sauce.

1 lb. lean ground beef
1/2 cup chopped cilantro
1 teaspoon minced fresh garlic
1 teaspoon minced fresh ginger root
1/4 teaspoon red pepper flakes
1 tablespoon light soy sauce ((or use a gluten-free alternative))
1 teaspoon sesame oil
1/4 cup light soy sauce ((or use a gluten-free alternative))
1 teaspoon cornstarch
1 tablespoon honey
1 teaspoon hot sauce
1 teaspoon minced fresh garlic
1 teaspoon minced fresh ginger root
1 teaspoon sesame oil

Steps:

  • Preheat your oven to 400 degrees F. Line a large rimmed baking sheet with high-heat-resistant parchment paper.
  • Place the meatball ingredients in a medium bowl and use your hands to combine them. Shape into 24 meatballs, each weighing about 20 grams.
  • Arrange the meatballs on the prepared baking sheet. Bake them until they are cooked through, for about 10 minutes.
  • Meanwhile, prepare the sauce. In a medium saucepan, whisk together the soy sauce and cornstarch. Gradually whisk in the remaining ingredients, except for the sesame oil, until well-combined.
  • Heat over medium heat, whisking constantly until the sauce thickens into a rich glaze. This should take 3-5 minutes. Turn the heat off as soon as the sauce thickens but leave it on the cooling burner. Stir in the sesame oil.
  • Using a slotted spoon or tongs, transfer the baked meatballs into the saucepan. Gently turn them in the sauce until well-coated. Serve immediately.

ASIAN-STYLE EGGPLANT "MEATBALLS"



Asian-Style Eggplant

Number Of Ingredients 11

6 cups small cubed eggplant, peel left on (from 1 medium eggplant)
2 tablespoons plus 1 teaspoon olive oil
Kosher salt and freshly ground black pepper
8 ounces cremini mushrooms, quartered
1/2 cup unsalted raw cashews
1/2 cup panko breadcrumbs
2 tablespoons grated fresh ginger
2 tablespoons minced fresh cilantro
2 tablespoons minced fresh mint
2 cloves garlic, grated
1 large egg, lightly whisked

Steps:

  • Preheat oven to 450 degrees F. Line two baking sheets with parchment paper.
  • Place eggplant in a large mixing bowl and slowly drizzle with 1 tablespoon olive oil. Stir and drizzle in an additional tablespoon of oil. Sprinkle generously with salt and pepper and toss to combine. Spread on a prepared baking sheet.
  • Combine mushrooms and remaining teaspoon oil and spread on remaining baking sheet.
  • Bake eggplant and mushrooms 10 minutes, then stir and bake an additional 10 minutes. (Reserve one baking sheet with parchment paper to use again.)
  • Reduce oven heat to 400 degrees F.
  • Pulse eggplant a few times in a food processor until coarse in texture. Transfer to a large mixing bowl. Pulse mushrooms until coarse and add to the same bowl. Pulse cashews until coarse and transfer to bowl. (Processing everything together will make the mixture too mushy; be sure to take the time to process the eggplants, mushrooms and cashews one by one). Add panko, ginger, cilantro, mint, garlic, egg and salt and pepper to the mixture and stir to combine.
  • Use a small ice cream scoop or yours hands to scoop eggplant mixture into 12 balls and arrange on reserved lined baking sheet. Bake until crispy and browned, about 20 minutes.

1/4 cup sambal oelek
2 tablespoons soy sauce, plus more if needed
2 teaspoons grated fresh ginger
8 ounces ground chicken
4 ounces canned water chestnuts, coarsely chopped
2 cloves garlic, smashed and finely chopped
2 scallions, whites thinly sliced
1/2 bunch fresh cilantro, leaves finely chopped
Kosher salt
1 cup roasted peanuts, coarsely chopped
2 tablespoons mayonnaise

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large mixing bowl, combine 2 tablespoons of the sambal, the soy sauce, ginger, chicken, water chestnuts, garlic, scallions, cilantro and 2 tablespoons water (this will keep the meatballs really moist!). Use your hands to squish the mixture together until combined.
  • Form a little tester patty and then cook and taste to make sure the chicken is really delicious. If the seasoning isn't just right, add a little more soy sauce or a sprinky-dink of salt. When you're confident the meatball mix is perfectly seasoned, form the meatballs.
  • Roll the meatballs in the peanuts, and place on a small baking sheet. Roast until meatballs are cooked through, 12 minutes.
  • In a small bowl, add the mayonnaise and the remaining 2 tablespoons sambal. Stir to combine and refrigerate until ready to serve.
  • Serve the meatballs hot with the chili-mayonnaise.

Steps:

  • In a small skillet, saute onions in butter until tender. Transfer to a large bowl. Add the egg, soy sauce, bread crumbs, water chestnuts, garlic and ginger. Crumble sausage over mixture and mix well., Shape into 1-in. balls. Place on an ungreased broiler pan. Bake at 350° for 15-20 minutes or until a thermometer reads 160°; drain. This stellar soup is reviving and cozy, made in one pot, and ready in 30 minutes. It starts with ginger-scented chicken-cilantro meatballs that are browned, then simmered in a fragrant coconut milk broth that's inspired by tom kha gai, a Thai chicken-coconut soup seasoned with lemongrass, galangal, makrut lime leaves and chile. A heap of spinach is added for color and flavor, and a squeeze of lime adds brightness and punch. The soup is brothy, so serve it over rice or another grain to make it a full meal.

1 (4-inch) piece fresh ginger, peeled
6 garlic cloves, peeled
1 jalapeño
2 pounds ground chicken
1 large bunch cilantro, leaves and stems finely chopped, a few whole leaves reserved for serving
3 tablespoons fish sauce
Kosher salt
2 tablespoons vegetable or coconut oil, plus more as needed
2 cups chicken broth
1 (14-ounce) can full-fat coconut milk
1/2 teaspoon granulated sugar
5 ounces baby spinach
1 tablespoon lime juice, plus lime wedges for serving
Steamed white or brown rice, for serving

Steps:

  • Using the small holes of a box grater, or a Microplane, grate the ginger, garlic and jalapeño (or finely chop them by hand). Transfer half to a large bowl and set the rest aside. To the large bowl, add the chicken, finely chopped cilantro, 2 tablespoons fish sauce and 1 teaspoon salt. Use your hands or a fork to fully combine but do not overmix.
  • Use your hands or an ice cream scoop to form 2-inch meatballs (about 2 ounces each). In a large Dutch oven or pot, heat the oil over medium-high heat. Working in batches, add the meatballs in a single layer and cook, flipping halfway through, until golden brown on two sides, 5 to 8 minutes. Transfer to a plate and repeat, adding oil as needed.
  • Once all the meatballs are browned and out of the pot, if the oil is burned, wipe it out and add a bit more to the pot. Reduce the heat to medium, add the reserved ginger mixture and sauté until fragrant, about 1 minute. Add the chicken broth, coconut milk, sugar and the remaining 1 tablespoon fish sauce, and bring to a simmer. Add the meatballs and any juices from the plate, and simmer until the flavors come together and the meatballs are cooked through, 5 to 8 minutes.
  • Remove from heat, and stir in the spinach and lime juice. Divide rice among bowls, then top with meatballs, broth and cilantro. Serve with lime wedges.

1/3 cup milk
1/3 cup rolled oats
1/3 cup saltine crackers, crushed
1 egg
1/2 cup onion, chopped

1 teaspoon chili powder
2 cups catsup
1 cup brown sugar
1/2 teaspoon liquid smoke
1 teaspoon dried ginger (or 1/2 tsp fresh grated)
1/2 teaspoon sesame oil
2 tablespoons molasses

Steps:

  • Preheat oven to 350°F.
  • Thoroughly combine ground beef, milk, oats, crackers, egg, 1/4 cup onion, 1 teaspoons garlic powder, salt, pepper and chili powder for meatballs.
  • Form meat mixture into 1-inch balls and place in a 13x9-inch baking pan.
  • Combine catsup, brown sugar, liquid smoke, 1 teaspoons garlic powder, 1/4 cup chopped onion, ginger and sesame oil. Stir mixture until sugar dissolves (will be a bit grainy).
  • Pour sauce mixture over meatballs.
  • Bake at 350°F for one hour.
  • I like to serve this recipe with rice and steamed Asian veggies.

2 tbsp clear honey
3 tbsp fish sauce
450g minced pork
4 spring onions , finely chopped
1small garlic clove , crushed
2 tsp lemongrass , finely chopped
1 tsp cornflour
1 tbsp finely chopped fresh mint
2 tbsp finely chopped fresh coriander
olive oil for frying
1 tsp chopped fresh coriander
3 spring onions , finely sliced
2 tbsp lime juice
2 tbsp light soy sauce
1 tsp sesame oil

Steps:

  • Make the meatballs. Gently warm the honey in a non-stick frying pan, add the fish sauce and stir to make a syrup. Leave to cool.
  • Put pork in a bowl and fold in honey syrup, spring onions, garlic, lemongrass, cornflour, mint and coriander. Mix and season with salt and lots of black pepper.
  • Shape into 20 balls and put on a tray lined with greaseproof paper. Chill for 30 mins. To make the sauce, mix all the ingredients together, then set aside.
  • Brush the balls with olive oil and fry for 3-4 mins each side. Serve with the sauce.

Faster than take-out, less expensive, and so easy!!! My husband came home from Costco with this large jar of PIneapple/Habenero Chutney. Very hot and very good, so I have tried it in numerous recipes, including fish. Always great. But, this recipe is for moist tangy meat balls on Ramen noodles. There must be an equivalent name for Asian-American, like Tex-Mex, but I don't know it. Let's just say this is not a real asian recipe, but an American-who-likes-Chinese-takeout and Asian foods in general.

1 lb ground turkey
3 tablespoons pineapple-habanero chutney (Costco)
1 egg (beaten)
1/4 cup plain breadcrumbs
3 tablespoons soy sauce
1 cup vegetable stock or 1 cup beef stock

4 tablespoons diced carrots
1 teaspoon diced garlic
1/2 lemon, juice of
1 tablespoon oil (for frying)
2 (3 ounce) packages chicken-flavored ramen noodles or 2 (3 ounce) packages beef-flavor ramen noodles

Steps:

  • Combine first five ingredients in a bowl.
  • Note: you can make a pineapple/habenero chutney substitute by combining pepper jelly and crushed canned pineapple.
  • Heat skillet with oil on medium heat.
  • Quickly roll mixture into 12- 15 small balls, add to skillet. Turn after 2 minutes. Add diced onion, carrot, garlic. Stir for 1 minutes and then add chicken stock. Bring to a boil and then reduce heat and cover. Cook for 20 minutes, stirring occasionally. Uncover, squeeze lemon juice into skillet and stir. Continue simmering, to reduce liquid while preparing Ramen Noodles.
  • Prepare and drain 2 packages of Top Ramen Noodles (you can use the flavor packets in the boiling water or add to the meatballs and stir). Place 1/4 of noodles onto 4 separate plates. Top each plate of noodles with 1/4 of the meatballs and sauce.

1 egg, slightly beaten
1/4 cup purchased shredded carrot
1/2 cup soft breadcrumbs
1 teaspoon ginger
12 ounces lean ground beef
3/4 cup sesame and ginger marinade or 3/4 cup bottled stir-fry sauce
1/2 cup water
1 small onion, cut into thin wedges
1 (8 ounce) can sliced water chestnuts, drained
1 medium sweet red pepper, cut into 1-inch pieces
1/2 cup purchased shredded carrot
hot cooked rice

Steps:

  • In a medium bowl combine egg, the 1/4 cup of the carrot, the bread crumbs, ginger, salt and garlic powder. Add meat and mix well. Shape meat mixture into 8 meatballs.
  • In a large skillet cook meatballs over medium heat until brown, turning to brown evenly (meatballs will not be done). Remove meatballs from skillet. Wipe out skillet with paper towels.
  • Add grill sauce and water to skillet, stir to combine. Add onion, drained water chestnuts, sweet red pepper, and the 1/2 cup carrot to skillet; bring to boiling.
  • Return meatballs to skillet. Reduce heat. Cover and simmer for 12-15 minutes or until meatballs are done.
  • Serve meatballs and sauce with hot cooked rice.

ASIAN-INSPIRED MEATBALLS AND SPAGHETTI

This one is hot off the press from Eat Boutique blog. The creator, Denise Woodward, said she's been developing this recipe for a year. She finally nailed it by using pork instead of beef, chicken or turkey and even veal. The sesame seeds add crunch to the meatballs and the sauce is definitely umami with it's sweet, sour and spicy flavors. Soba noodles completes the meal.

1 1/2 lbs ground pork
1/2 cup panko breadcrumbs
2 tablespoons sesame seeds
1/2 cup cilantro, roughly chopped
2 garlic cloves, minced
1/2 cup green onion, thinly sliced
1 egg
1/2 cup brown sugar
1/2 cup white wine
1/2 cup soy sauce
1 tablespoon grated fresh ginger
1 -2 teaspoon sriracha asian garlic sauce
safflower oil or vegetable oil
1 (12 ounce) package soba noodles

Steps:

  • In a saucepan, over low heat, add the brown sugar, white wine and soy sauce. Stir and cook just until the sugar melts, about 2 minutes. Add the ginger and Sriracha; stir and continue to simmer over very low heat, for 10 minutes. Remove from the heat; set aside.
  • In a large bowl, add all of the meatball ingredients. Using your hands, mix well. Form the mixture into small meatballs.
  • In a shallow frying pan, add about a 1/4 inch of safflower oil; heat until hot, about 2 minutes. Add the meatballs a few at a time. Brown each side. Remove to a paper towel. Repeat the process.
  • Once all the meatballs are browned, wipe out the excess oil from the frying pan with a paper towel (do not rinse or wash) and place the meatballs back into the pan. Pour the sauce over the top, and let simmer over very low heat for 15 minutes. Stir occasionally to prevent sticking.
  • Right before serving, cook the noodles according to the package direction. Drain. Toss with a teaspoon of safflower oil to prevent noodles from sticking.
  • Add the meatballs to the noodles. If the sauce is a bit thin, raise the heat and cook down a bit until it is thick. Pour over the noodles, gently toss.
