MY LASAGNA
This is the most popular dish I make. It's really meaty and cheesy and needs no extra sauce. It's really very easy to make. The easiest and fastest way to make this is to start the water for the pasta and cook that while you're cooking the meat and sauce and mixing the ricotta cheese mixture. I always make this the day or 2 before when I have time. This also freezes well uncooked or cooked. It makes a very full 9X13 casserole. You can use the lower fat cheeses. I hope you enjoy it!

Steps:
- Cook the noodles according to package directions. Drain in a colander and run cold water over them to easily separate them.
- Squeeze sausage from casings and brown on medium heat until all pink is gone.
- Add the next 5 ingredients. Simmer, uncovered 30 minutes, stirring occasionally.
- Combine the next 5 ingredients in a large bowl.
- Spray Pam or lightly grease a 9X13 casserole.
- Lay 3 noodles on the bottom of the casserole and line the sides with the noodles too.
- Spread 1/2 the ricotta mixture on top of the noodles, then half of the slices of mozzarella, then half of the meat mixture.
- Put more noodles on the meat mixture. Then the rest of the ricotta, the mozzarella, and the meat sauce.
- Sprinkle more Parmesan or Romano on top.
- Bake in a preheated 375 degree oven until brown and bubbly, for about 30-40 minutes. If refrigerated first, add approximately 15 more minutes.
- I like to serve this with garlic bread and a Caesar or green salad.

TRADITIONAL LASAGNA

Steps:
- In a skillet, cook beef and sausage over medium heat until no longer pink; drain.
- Add the next seven ingredients.
- Simmer, uncovered, for 1 hour, stirring occasionally.
- In a bowl, combine the eggs, parsley, cottage cheese, ricotta and parmesan.
- Spread 1 cup of meat sauce in an ungreased 13x9x2-inch baking dish.
- Layer with 3 noodles, provolone cheese, 2 cups of cottage cheese mixture, 1 cup of mozzarella, three noodles, 2 cups of meat sauce, remaining cottage cheese mixture and 1 cup of mozzarella.
- Top with remaining noodles, meat sauce and mozzarella (dish will be full).
- Cover and bake at 375°F for 50 minutes.
- Uncover; bake 20 minutes longer.
- Let stand 15 minutes before cutting.
MY STANDARD LASAGNA
This is my basic easy lasagna. I either use homemade sauce or a really good quality store bought brand. There are four types of cheese in this recipe. If you like things spicy, by all means add a bit of crushed red pepper to the sauce or use spicy sausage. If I am adding sausage, I prefer to use mild turkey sausage in this, but it tastes really good with just ground beef too.

Steps:
- Preheat oven to 350 F and lightly grease a deep 9x13" casserole, spread just a couple of spoonfuls of spaghetti sauce in the bottom of the pan and set aside.
- Brown meat in a skillet until fully cooked; drain fat.
- Combine the cooked meat with the rest of the spaghetti sauce and a few shakes of garlic powder, heat until warmed through, about 5-10 minutes.
- Meanwhile, in a medium bowl, combine the ricotta cheese, half of the shredded mozzarella cheese, the Parmesan cheese, the eggs, a few liberal shakes of garlic powder, parsley, salt and pepper, mixing well.
- Place a layer of lasagna noodles in the bottom of the prepared baking dish, then pour some of the meat sauce, spreading to cover evenly.
- Spread some of the cheese mixture on top of that, then top with another layer of noodles.
- Repeat layers until you have used up all of your filling.
- Sprinkle remaining mozzarella over the top, then place the slices of provolone cheese on top, leaving some gaps.
- Cover tightly with foil and bake 45 minutes.
- Remove from oven, leaving covered, set on top of the stove and let rest 20-30 minutes.
- While the lasagna is resting, you can pop in a loaf of garlic bread wrapped partially in foil.
MY MOM'S LASAGNA

- Preheat the oven to 375 degrees F.
- Place a large saute pan over medium-high heat and add the beef and sausage. Cook, stirring occasionally, until it begins to brown, about 2 minutes. Add the onions, garlic and dried oregano and cook until they are softened and the meat is cooked through, 3 to 4 minutes. Stir in the tomato paste and toast for 30 seconds, then add the tomatoes and cook until the sauce has thickened slightly, about 5 minutes. Remove from the heat and set aside.
- Beat the eggs in a large bowl. Add the ricotta, 1 cup mozzarella, 1/3 cup Parmesan, fresh basil and oregano, salt and pepper and stir to combine.
- Spread a thin layer of sauce on the bottom of a 9-by-13-inch baking dish. Arrange a layer of noodles over the sauce and top with a third of the ricotta filling. Spoon over a layer of sauce and top with another layer of noodles. Continue with 2 more layers of ricotta, sauce and noodles, ending with a top layer of noodles. Spoon a thin layer of the remaining sauce over the top, sprinkle the remaining mozzarella and Parmesan over the noodles and cover with aluminum foil.
- Bake for 45 minutes, then uncover and cook until the cheese is golden and the lasagna is bubbling, another 15 to 20 minutes. Let stand for 10 to 15 minutes before serving.
TRADITIONAL LASAGNA
Steps:
- Heat oil in a large skillet over medium heat. Saute onions, garlic, and red pepper for 1 to 2 minutes. Do not let garlic brown. Add the tomatoes, oregano, and bay leaf to skillet. Let simmer until flavors blend, stirring occasionally every 1/2 hour. Stir in Parmesan, and remove bay leaf. Sauce is ready for lasagna to be made.
- Heat oven to 350 degrees F. In a large pot, boil water, and cook pasta close to al dente. In a large bowl combine the ricotta, salt, pepper, and Parmesan, and mix until well blended. Mix in egg yolks and set aside.
- In a 13 by 9-inch baking dish, spread a thin layer of marinara sauce and cover with noodles. Spread a layer of ricotta cheese mixture over noodles. Top with mozzarella, another layer of sauce, and repeat. The third layer should be topped with sauce and mozzarella. Cover and bake for 40 minutes, remove cover and bake for an additional 25 minutes. Remove from oven, and let stand for 20 minutes.
- To serve, cut into squares, and serve with drizzled marinara sauce.
CLASSIC LASAGNA
Make this classic lasagna recipe zestier by using hot Italian sausage or a little milder with regular Italian sausage. Don't be scared off by the long cooking time. The wait is well worth it. It's a great dish to make for a crowd and easy to adjust for varying tastes. The leftovers are even better when reheated the next day.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add the lasagna noodles and olive oil; cook until al dente, 8 to 10 minutes; drain.
- Cook the ground beef and sausage in a large pot over medium heat; drain. Stir in the mushrooms, garlic salt, oregano, thyme, basil, and tomato sauce. Season with salt and pepper; simmer 30 minutes.
- Meanwhile, mix together the ricotta cheese, eggs, and Parmesan cheese in a bowl.
- Ladle enough of the meat sauce into a 9x13 inch baking dish to cover the bottom in a thin layer. Form a layer atop the sauce with 3 of the lasagna noodles. Spread about 1/4 of the ricotta cheese mixture over the noodles. Sprinkle about 1/3 of the mozzarella cheese over the ricotta cheese mixture and then ladle about 1/3 of the meat sauce over the mozzarella cheese. Repeat layering twice more, topping with the remaining 1/4 pound of mozzarella cheese.
- Bake in preheated oven 90 minutes. Allow to sit 10 to 15 minutes before serving.

- Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
- Preheat oven to 350 degrees F (175 degrees C).
- To make filling- Combine in a bowl: ricotta cheese, mozzarella, parmesan and eggs.
- To make sauce- In a skillet, brown the ground beef until cooked through; drain grease and onions and peppers and cook until vegetables have softened.
- Add to skillet, browned ground beef mixture, mushrooms,oregano, basil, garlic powder, sugar, salt, pepper and tomato sauce. Heat through and stir.
- In a 9x13 inch pan, alternate layers of cooked lasagna noodles, sauce, and filling, making 3 layers total. Top with sliced mozzarella and provolove cheese. Bake for 40 minutes. Let stand 10 minutes before cutting.
SIMPLY TRADITIONAL LASAGNA
A traditional lasagna, with about half the time and effort! I always cook extra to have leftovers, but the more I cook, the more they eat! Serve with garlic toast and salad.

- Brown the ground beef and Italian sausage in a large skillet over medium-high heat. Drain excess grease. Stir in the water and black olives, and season with basil, garlic powder, oregano, sage, pepper, minced garlic, and onion flakes. Simmer for about 15 minutes, stirring frequently. Stir in the marinara sauce, and remove from the heat.
- Preheat the oven to 375 degrees F (190 degrees C).
- Place a layer of the meat and sauce in the bottom of a 9x13 inch baking dish. Cover with a layer of dry noodles. Spread a thin layer of ricotta cheese over the noodles, and sprinkle with a little mozzarella cheese. Cover with another layer of sauce, and repeat layering ending with the meat and sauce on top. Reserve about 1/2 cup of mozzarella cheese for later.
- Bake for 45 minutes in the preheated oven, but check after 30 minutes depending on how thick the lasagna is. Lasagna is cooked when you can easily stick a knife into it. Sprinkle the reserved cheese over the top, and return to the oven for about 10 minutes for a nice melted cheese topping.

- Heat oven to 350°F.
- Brown meat in large skillet on medium-high heat. Meanwhile, combine egg, ricotta, parsley, 1-1/4 cups mozzarella and 1/4 cup Parmesan.
- Drain meat; return to skillet. Stir in pasta sauce. Add 1 cup water to empty sauce jar; cover with lid and shake well. Add to meat mixture; stir until blended.

- In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
- Preheat oven to 375 degrees F (190 degrees C).
- To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. MY FAVORITE LASAGNA
This is one of my Mom's recipes. I'm very picky about lasagna. I like this one the best because it has cottage cheese in it and isn't as dry as many others. Feel free to add more cheese and/or sauce. I usually just eye-ball it. Also, I love to use the sauce from Recipe #22782. If you make the full amount of the sauce from that recipe, this recipe will use about half. You will not need the ground beef/sausage if your sauce already has meat added.

- Combine spaghetti sauce and browned ground beef.
- In separate bowl combine cottage cheese, 2 Tablespoons Parmesan cheese, and beaten egg.
