1 (15.25 oz ) box lemon cake mix
2 eggs
1/2 cup vegetable oil
powdered sugar (optional)

Steps:

  • In a large bowl, mix well to combine cake mix, eggs, and vegetable oil.
  • Place dough in the refrigerator for 30 minutes to chill.
  • Preheat oven to 350 degrees. Line cookie sheets with silicone liners or parchment paper.
  • Form dough into 1-inch balls. Roll in powdered sugar, if desired. Place dough balls on baking sheets at least 2 inches apart.
  • Bake 10 to 12 minutes. Cool on cookie sheet for 3 minutes before transferring from cookie sheet to cooling rack to cool completely.

2 eggs
1/3 cup vegetable oil
1 teaspoon lemon extract
1/3 cup powdered sugar

Steps:

  • Preheat the oven to 375 degrees Fahrenheit.
  • In a large bowl, stir together cake mix, eggs, oil, and lemon extract until well-combined.
  • In a separate bowl, pour powdered sugar.
  • Drop a teaspoonful of cookie dough into the powdered sugar. Roll the dough around until completely covered.
  • Place cookies on a cookie sheet.
  • Bake for 6 to 9 minutes. Expect the tops to be cracked and crinkly, the bottoms to be slightly brown, and the center soft and chewy.

½ cup vegetable oil
2 eggs
1 cup white chocolate chips
1 cup powdered sugar
2 Tablespoons lemon juice (more or less if needed)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, mix together cake mix (dry cake mix- don't include ingredients called for on cake mix box), vegetable oil, and eggs. Fold in white chocolate chips.
  • Drop by tablespoonfuls onto cookie sheet and bake for 6-9 minutes, making sure to not over bake them.
  • Remove cookie from oven and place on wire racks to cool. Mix icing together in a small bowl and drizzle over warm cookies (or you can wait until they have cooled down a little bit- whatever you prefer!).

1/2 cup butter or margarine, softened
1/2 cup granulated sugar
1/2 cup powdered sugar
1 egg
1/2 cup vegetable oil
1 teaspoon grated lemon peel
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
3 tablespoons granulated sugar
2 cups powdered sugar
3 to 4 tablespoons fresh lemon juice
3/4 cup coarsely chopped pistachio nuts

Steps:

  • In large bowl, beat butter, 1/2 cup granulated sugar and 1/2 cup powdered sugar with electric mixer on medium speed until light and fluffy. Beat in egg, oil and lemon peel until well blended. On low speed, beat in flour, baking soda, cream of tartar and salt until well blended. Cover with plastic wrap; refrigerate 2 hours for easier handling.
  • Heat oven to 325°F. Shape dough into 1-inch balls. On ungreased cookie sheets, place balls 2 inches apart. Dip bottom of small glass into 3 tablespoons sugar; press on cookies to make about 2 inches in diameter.
  • Bake 9 to 11 minutes or until edges begin to set and cookies are light golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 10 minutes.
  • Meanwhile, in small bowl, mix 2 cups powdered sugar and enough lemon juice until smooth and spreadable. Spread frosting on cookies. Sprinkle nuts on frosting before it sets.

I frequently make these cookies for work pitch-ins & family get-togethers. They are always a big hit! I was given the basic recipe several years ago by a lady who showed up at my garage sale-and she wrote it down during our conversation about baking. I have perfected different varieties over the years. Please see my other recipes for how to make the following versions of this cookie: chocolate-chocolate chip, chocolate chip, & sugar cookies. This is a really versatile recipe base-experiment!!

1 (18 ounce) box lemon supreme cake mix
2 eggs
1/2 cup vegetable oil
3/4 cup powdered sugar
1 tablespoon lemon juice
1 1/2 teaspoons lemon juice

Steps:

  • Preheat oven to 350 degrees.
  • Stir ingredients in medium mixing bowl until blended (best to do right before you are ready to bake them- they flatten out more if you let the batter set).
  • Spoon onto 2 un-greased cookie sheets (allow some space in between, they spread...a melon baller works great for this step).
  • Bake for 8-10 minutes (depends on which cake mix you use & the oven -- I start looking at them through the glass around 6.5 minutes -- they will get a dull/cracked appearance on top when done).
  • Allow the cookies to cool on the pan, or wait 1-2 minutes before moving to cooling racks. Cookies will be soft/chewy.
  • While lemon cookies are cooling, mix together the powdered sugar & lemon juice in a small bowl, add more powdered sugar for a stiffer glaze. Lightly brush or drizzle glaze onto warm cookies on the cooling rack.

4 cups sugar
1/2 cup lemon zest, about 6 to 8 lemons
4 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
2 cups (4 sticks) unsalted butter, cut into 1-inch cubes, chilled
5 egg yolks
2 teaspoons vanilla extract
3/4 cup lemon juice
Lemon Icing, recipe follows

Steps:

  • Preheat oven to 350 degrees F.
  • In a food processor work bowl, add sugar and lemon zest. Process until sugar and zest are well mixed, about 20 seconds. Scrape into a large mixing bowl. Reserve about 1/2 cup of lemon sugar in a separate bowl for later use.
  • Add flour, baking powder and salt into food processor and pulse briefly to mix. Add cold butter into food processor with flour mixture and process with short pulses until mixture resembles cornmeal and no large lumps of butter remain, about 10 pulses. Pour this mixture into the sugar and lemon mixture in the large mixing bowl and set aside.
  • In a medium bowl, mix egg yolks, vanilla extract and lemon juice together.
  • Using an electric mixer with a paddle attachment, pour in the lemon/sugar and flour/butter mixture and stir until combined, about 15 seconds. Then, while the mixer is still running, slowly add egg/lemon juice mixture and mix until well combined and dough pulls away from the sides of the bowl, about 15 to 30 seconds.
  • Scrape the dough into a large bowl and refrigerate until cold, but not solid, about 30 minutes. Use an ice cream scoop to scoop the dough onto parchment-lined cookie sheets. Take the dough balls and roll the tops into the reserved lemon sugar. Use the bottom of a water glass to press the cookies flat, about 1/4-inch thick. Bake the cookies until slightly browned, about 15 minutes. Remove the parchment paper with the cookies from the tray to a cooling rack and cool completely, about 1 hour. Once the cookies have completely cooled, ice with Lemon Icing.
  • 1 pound (2 cups) confectioners' sugar
  • 6 tablespoons lemon juice
  • In a medium bowl, whisk sugar and lemon juice together until smooth. Spoon onto cooled cookies, and spread evenly with the back of a spoon. Let stand on a cooling rack until the glaze is set, about 1 hour.
  • Yield: enough for 3 dozen cookies

1 pkg. (2-layer size) yellow cake mix
2 eggs

  • Beat dressing, cake mix and eggs in large bowl with mixer on low speed just until moistened. Add lemon zest. Beat on medium speed 2 min. (Dough will be stiff.)
