This cinnamon banana bread has a ribbon of cinnamon sugar swirled throughout with a crisp sugar crust on top! It's also so moist, so soft, and loaded with sweet ripe bananas.

1 1/2 cups (395g) ripe and mashed banana (about 3 large bananas, but still measure!)
2 cups (264g) all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1/2 cup (100g) granulated sugar
1/4 cup (55g) light brown sugar, packed
1/4 cup (55g) unsalted butter, melted
2 large eggs
1 tsp vanilla extract
1/2 cup (120g) sour cream
1/2 cup (100g) granulated sugar
1 tbsp ground cinnamon

Steps:

  • Preheat the oven to 350F and grease and line a 9×5 loaf pan. Place a strip of parchment paper along the width of the pan so it's easy to lift out once baked.
  • In a small bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  • In a large bowl, whisk together the mashed banana, sugars and butter until well combined.
  • Whisk in the eggs, vanilla and sour cream.
  • Pour in the dry ingredients and use a rubber spatula to fold to combine.
  • Off to the side in a small dish, combine the cinnamon sugar.
  • Pour 1/2 of the banana bread batter into the pan and spread it even. Sprinkle half of the cinnamon sugar on top then spoon the remaining batter on top. Spread it even and sprinkle on the rest of the cinnamon sugar.
  • Bake for 40-45 minutes or until a toothpick in the center comes out clean with a few moist crumbs. The loaf should appear puffed with a golden sugar crust and large cracks on the surface.
  • Let the bread cool in the pan for about 20-30 minutes then lift it out and slice. It's best to serve warm, but it's delicious at any temperature! Enjoy!

125 g (½ cup) butter (room temperature)
200 g (1 cup) brown sugar (I used muscavado sugar)
2 extra-large eggs
6 (approximately 350g) large bananas (the blacker they are, the better)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
250 g (2 cups) flour
1 teaspoons baking powder
1 tsp baking soda
pinch of salt
2 tablespoons brown sugar
1 teaspoon ground cinnamon

Steps:

  • Pre-heat the oven to 180ºC/350°F and grease and line a standard loaf tin (approx 20cmx12cm) with baking paper.
  • In the bowl of a mixer, cream together the butter and sugar until pale and fluffy then add the eggs one a time, beating well after each addition.
  • Add the bananas and vanilla extract and mix well.
  • Sift together the dry ingredients and stir into the batter.
  • Transfer the batter to the prepared loaf tin.
  • Mix together the sugar and cinnamon for the topping and sprinkle over the banana bread.
  • Place the tin in the oven and allow to bake for 45 minutes or until a skewer inserted comes out clean.
  • Remove from the oven and allow to cool before serving.

  • Preheat the oven to 350 degrees F. In a medium bowl, combine the flour, baking soda, baking powder and salt. In a large bowl, cream together the eggs and sugar. Stir in the mashed bananas, vanilla, oil and cinnamon. Stir in the flour mixture, a third at a time, until just combined.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

This is a recipe I found on the web one day when trying to decide what to do with some over ripe bananas I had. I changed the recipe which was originally just a banana bread to include a vanilla bean and cinnamon, I also changed the sugar for organic honey and did a 50/50 mix of wholemeal and bread flour. This bread smells so delicious when cooking. It is very nice with just butter on but to be really decadent try it with Nutella.....Yum!

3/4 cup milk
1/2 cup butter
1/2 cup honey
2 1/2 cups bread flour (I used spelt)
2 1/2 cups whole meal flour (I used organic)
2 1/2 tablespoons active dry yeast
1 teaspoon salt
2 eggs
3 medium ripe bananas, mashed
1 teaspoon water
1 1/2 tablespoons cinnamon
1 teaspoon vanilla extract
1 vanilla pod (optional)
1 egg, for glazing

Steps:

  • In a microwave safe jug or bowl place the milk, butter and honey.
  • microwave for about 45 seconds or until butter is melted.
  • In a large bowl, combine 4 cups of flour, yeast, salt, 2 eggs, bananas, cinnamon, vanilla, scrape vanilla pod and add seeds and milk mixture.
  • Beat on low speed until combined.
  • Beat on medium for 3 minutes. Stir in enough remaining flour to form a firm dough.
  • Turn onto a floured surface; knead until smooth and elastic, about 4-6 minutes.
  • Place in an oiled bowl, turning once to grease top.
  • Cover and let rise in a warm place until doubled, about 45 minutes.
  • Divide dough in half; shape each into a round loaf or loaf of your choice.
  • Place on a greased baking sheet; cut slits in tops. Cover and let rise until doubled, about 45 minutes.
  • Beat remaining egg with water; brush over the loaves.
  • Bake at 375° for 30-35 minutes.

  • While the bread is cooling, make the glaze in a small bowl by combining the powdered sugar, heavy cream, and vanilla. Add more powdered sugar until you reached desired thickness. Drizzle over banana bread.
