GERMAN BRATWURST

3 pounds boneless pork shoulder butt, cubed
1 pound boneless lean veal shoulder, cubed
1 pound pork fatback, cubed
2 tablespoons Kosher salt
1 tablespoon ground white pepper
2 teaspoons ground ginger
2 teaspoons of dry mustard
1 1/2 teaspoons ground nutmeg
2 large cold eggs, lightly beaten
1 cup ice cold heavy cream
Hog casings, soaked in warm water 30 minutes prior to use
1 large yellow onion, cut into thin slices
2 12oz cans of beer
1 9 x 13" foil tray
12 hero rolls

Steps:

  • Place pork, veal, and fatback in a large bowl. Chill in refrigerator for at least 1 hour. Set parts of meat grinder, including large cutting die, in freezer. Set bowl and paddle of stand mixer in freezer.
  • Grind meat and fat mixture through chilled meat grinder fitted with a small cutting die, into a large bowl set in another bowl filled with ice. Add salt, white pepper, ginger, mustard, and nutmeg in with the meat. Using chilled paddle attachment and chilled bowl of a standing mixer, mix at low speed for 1 minute. Add eggs and heavy cream and mix at medium speed until liquid is incorporated and sausage is uniform and sticky, about 1 minute longer.
  • Form a small sausage patty; place rest of sausage mixture in refrigerator. Cook patty in a small frying pan over medium-high heat until cooked through. Taste and adjust seasonings of sausage if necessary.
  • Stuff sausage into hog casings and twist into 6-inch links.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil grilling grate. Place onion slices in foil tray and pour in beer. Place tray on hot side of grill. Nestle sausage in tray and cook until beer begins to simmer, about 4 minutes. Slide tray over to cool side of grill, cover grill, and continue to cook until sausages register 140 to 145°F on an instant-read thermometer, 10-15 minutes, flipping occasionally during cooking.
  • Uncover grill and remove sausages from liquid and place on hot side of grill. Cook, turning occasionally, until sausages are browned and crisp all over, about 3 minutes total. Place each sausage in a roll and top with onions and desired condiments; serve immediately.

BEER-SIMMERED BRATWURST

1 tablespoon mustard seeds
3 large onions, unpeeled, roughly chopped

3 pounds precooked bratwurst, pricked with a fork
2 tablespoons canola oil

Steps:

  • Preheat the grill for direct grilling, high heat.
  • Combine the beer, caraway, coriander, mustard seeds, onions, garlic and ginger in a large stockpot. Then, add the bratwurst. Place the pot on the grates of the grill and bring to a simmer. Simmer the sausages until half-cooked, about 5 minutes. Remove the pan from the grill and let the bratwurst sit in the liquid for 30 minutes. Transfer the brats to a platter or cutting board and strain the liquid into a bowl, discard the solids.
  • Brush the sausages with canola oil and grill until the casings are crisp and golden brown and the sausages are cooked through, 4 to 6 minutes per side. Keep warm until serving.

3 lbs pork (I use butt as the fat ratio is perfect)
2 lbs lean beef
2 eggs
1 cup beer
1 1/2 teaspoons black pepper, ground
1 teaspoon cayenne pepper
1 teaspoon paprika (I use smoked)
1/2 teaspoon nutmeg
1 tablespoon dry mustard (I use Colemans)
1 tablespoon coriander
1 teaspoon sage, ground
5 teaspoons salt
2 teaspoons sugar, white
2 teaspoons onion powder

Steps:

  • Cut the pork and beef into 2 inch cubes.
  • Grind through a 1/4 inch grinding plate.
  • If you do not have a meat grinder you can pulse it in your food processor in SMALL batches.
  • In a small mixing bowl beat eggs and beer together until well blended.
  • Add dry ingredients.
  • In a large mixing bow combine the ground meat and wet mixture until well incorporated.
  • Cover with plastic wrap and refrigerate 2 hours, up to 24.
  • The longer the better.
  • At this point you can either stuff into casings or wrap in 1 pound packages which is what I do, then freeze.

Today I've decided to share with you how to cook bratwurst, with original German recipe. Caramelized and sweet, with simmering beer and onions this sausage recipe will take you straight to the famous October Fest. So when fall festivities like sports events and Oktoberfest come alive, I'm pleased to prepare this classic, virtually every German - American picnic or sports day: German bratwurst sausages with onions with Wisconsin spin. My friend John comes from Wisconsin, a state with a lot of German descendants. Who enjoys beer, sausages and football. Years back, John prepared his well-known bratwurst for a Superbowl gathering at our home. Simmered in beer with onion slices and then added onto soft rolls with the best grainy mustard, this form of bratwurst quickly became my favorite. What's the difference between Bratwurst and other sausages? Sausages are very popular in Germany, and bratwurst is one among the countless on the list. So, what is the difference between a typical sausage and bratwurst sausage? Sausage could be produced from smoked sausage, dried sausage, and fresh sausage with many regions having their particular version. Bratwurst sausages are fresh as opposed to smoked or dried. Bratwurst is really a fresh sausage of pork and veal, with added seasonings like coriander, caraway and nutmeg. Separate areas of Germany have different seasonings with other favored sausages like knackwurst that is garlicky being certainly one of my children's favorites. Firstly, the sliced onions are cooked with a bit of butter and then braised in the beer with the bratwursts. The sliced onion is being cooked with a bit of butter, and then braised in the beer with the bratwursts. While they cook, the onion softens in the beer broth, making it slightly jammy. Serve on warmed buns with onions and coarse, sauerkraut, grainy mustard, or according to your taste.

Put in the sliced onions and caraway seeds and cook for about 5 min or before the onions start to soften, and season with salt. Place the bratwurst with the onions, add the bottle of ale and bring just to a boiling point. Lower the heat to a simmer and cook for 35-40 min, flipping the brats from time to time. In order to finish the brats on the stove, move the onions and beer broth to a dish and put aside. Brown the brats equally on all sides, adding a bit more butter or oil if required. Pour the onions and beer broth back once again to the skillet and keep hot. In order to finish the bratwurst sausage on the grill, heat up the grill to medium-high heat. 1 can of sauerkraut (about 800 g/ 1.8 lb. (Note 1))
1-2 tablespoons vegetable oil
1 medium onion
1 medium apple
1 teaspoon sugar
1 teaspoon caraway seeds
1-2 bay leaves
1 cup beer (Note 2)
fine sea salt and ground black pepper

Steps:

  • Brown sausages: Heat a skillet large enough to hold the sauerkraut as well. Add 1 tablespoon oil and brown the sausages on all sides, they should not be cooked through as they will continue cooking with the kraut.
  • Chop: In the meantime, chop the onion finely, peel, and dice the apple.
  • Saute: Remove the brats from the skillet. If there isn't enough sausage fat left in the skillet, add another 1 tablespoon olive oil. Next, add the onion and saute for about 3 minutes. Add the apple and saute for another 3 minutes.
  • Caramelize: Sprinkle the sugar on top and let caramelize for 1-2 minutes.
  • Combine: Add drained sauerkraut, caraway seeds, bay leaves, salt, and pepper. Stir in the beer or another cooking liquid of choice.
  • Simmer sauerkraut: Cover and cook for 20 minutes, stirring occasionally.
  • Cook: Nestle the brats into the cabbage, cover, and cook until the brats are done about 10-15 minutes. Check with a meat thermometer (internal temperature 71 degrees Celsius/ 160 degrees Fahrenheit) or by cutting one sausage in the middle, it should not be pink anymore
