This is a great little dip to serve as an appetizer with some meatballs, frankfurts or chicken strips. Also lovely as a main with meatballs and spaghetti.

1 tablespoon butter
1 stalk celery, chopped
1 onion, chopped
1 red pepper, seeded & chopped
425 g chopped tomatoes
1/2 cup white wine or 1/2 cup water
1 tablespoon flour
1 beef stock cube, crumbled
salt & pepper, to taste
125 g parmesan cheese, grated

Steps:

  • Melt butter in saucepan, add celery, onions & pepper. Cook until tender.
  • Add flour 7 cook for 2 mins, stirring, blend in tomatoes & seasonings, simmer for 5 minutes.
  • Stir in cheese and water & wine until combined.
  • Serve.

  • Brown the mushrooms in the butter.
  • Sauté the onions for 3 minutes
  • Add the garlic.
  • Add more butter and then add flour.
  • Stir until the flour is browned, then add the other ingredients.

  • Heat oven to 350ºF.
  • Combine first 4 ingredients.
  • Spoon into shallow casserole sprayed with cooking spray.
  • Bake 20 to 25 min. or until heated through.

1 (1 lb) bag pre-made meatballs
1 1/2 cups ketchup
1/2 cup water
1/2 cup brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Put meatballs in crock pot.
  • In a medium sized bowl mix together all remaining ingredients.
  • Microwave on high for approximately 3 minutes or until boiling.
  • Pour over meatballs in crock pot.
  • Cook on low for 3 hours, stirring every half hour.

You can form the meatballs up to a day ahead and keep them in the fridge until you're ready to fry. But they are best fried just before baking. Serve this with some kind of crisp green vegetable on the side.

3 slices white bread (stale is fine)
1/3 cup milk
1 pound ground pork or veal
1 pound ground beef
1/2 cup finely chopped onion
1 1/4 cups finely grated Parmesan, preferably Parmigiano-Reggiano
1/4 cup chopped parsley
2 garlic cloves, finely chopped
1 tablespoon kosher salt
1 teaspoon black pepper
Olive oil, for frying
5 cups Simple Tomato Sauce (see recipe)
1/2 pound fresh mozzarella, torn into bite-sized pieces

Steps:

  • Heat oven to 400. Remove crusts from bread slices and discard. Tear remaining bread into small pieces and place in a small bowl. Pour milk over bread and let stand until liquid is almost absorbed, 5 to 10 minutes.
  • In a large bowl, combine pork or veal, beef, soaked bread, onion, 1/4 cup Parmesan, the parsley, the garlic, the salt and the pepper until just combined. Form meat into golf-ball-size rounds. (You should have about 25 meatballs.) Meatballs can be formed up to 24 hours ahead, covered and refrigerated before frying.
  • Fill a large skillet with 1/4-inch oil. Place over medium-high heat. When oil is hot, fry meatballs in batches, turning occasionally, until golden brown, 8 to 10 minutes per batch. Transfer fried meatballs to a paper towel-lined plate.
  • Spoon a thin layer of sauce over the bottom of a 9-by-13-inch baking pan. Sprinkle one-third of the Parmesan over sauce. Scatter half the meatballs over the Parmesan and top with half the mozzarella pieces. Top with half of the remaining sauce, sprinkle with another third of the Parmesan, and repeat layering, ending with a final layer of sauce and Parmesan.
  • Transfer pan to oven and bake until cheese is golden and casserole is bubbling, about 40 minutes. Let cool a few minutes before serving.

2 tablespoons parsley, finely chopped
1/4 onion, grated
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon ground coriander
1/4 teaspoon cayenne pepper
salt & pepper
2 tablespoons oil
28 ounces canned diced tomatoes
8 ounces canned tomato sauce
2 -3 tablespoons parsley, finely chopped
2 tablespoons cilantro, finely chopped
1/2 onion, chopped
2 medium garlic cloves
1 -2 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon paprika
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper

Steps:

  • Mix the onion, parsley, spices, & beef together. Form into 1 inch balls, flatten & then brown in oil. When done, remove from the heat & cover.
  • Drain about half the juice from the diced tomatoes & place into a sauce pan. Add the tomato sauce, onion, garlic, parsley, olive oil & spices. Simmer, uncovered for 20 minutes or until the sauce has thickened.
  • Add the meatballs to the sauce & continue cooking together for another 5-10 minutes.
  • Serve with Moroccan bread to soak up the sauce. It is also great served over pasta.

1/4 cup fine dry bread crumbs

3/4 pound ground veal
1 large egg, lightly beaten
1/2 cup canned sliced water chestnuts, rinsed, drained, and finely chopped
1/2 teaspoon salt
1/2 cup chopped fresh cilantro plus 1/4 cup sprigs
1/4 cup fresh cilantro sprigs
5 tablespoons soy sauce
4 teaspoons Asian sesame oil
2 tablespoons fresh lime juice
2 tablespoons water
2 teaspoons sugar
Accompaniment: steamed white rice

Steps:

  • Put oven rack in middle position and preheat oven to 500°F.
  • Pour milk over bread crumbs in a large bowl and stir until liquid is absorbed. Add ground meat, egg, water chestnuts, salt, chopped cilantro, 1 tablespoon soy sauce, and 2 teaspoons oil and mix with your hands until combined well. Shape 3 tablespoons meat mixture into a ball and transfer to a 13- by 9-inch glass baking dish. Make more meatballs with remaining mixture, arranging meatballs about 1/2 inch apart in baking dish. Bake until cooked through, about 15 minutes.
  • Meanwhile, stir together lime juice, water, sugar, remaining 4 tablespoons soy sauce, and remaining 2 teaspoons oil in a bowl until sugar is dissolved.
  • Transfer meatballs to a serving dish. Stir sauce, then drizzle meatballs with 1 tablespoon sauce and sprinkle with cilantro sprigs.
  • Serve meatballs with remaining sauce.

I searched thru 3 pages of Sweet & Sour Meatball recipes to make sure this was unique and I think it is. I got this recipe from a lovely woman named Iola back in 1973. It is still a favorite and requested by friends and family alike. You can use your own meatball recipe, or if you're like me...I sometimes run out of time and I use frozen already prepared meatballs.

1 lb ground beef
2 tablespoons breadcrumbs
1 egg, beaten
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/3 cup green pepper, chopped

2 tablespoons butter or 2 tablespoons margarine
1 (10 1/2 ounce) can tomato soup
2 tablespoons brown sugar
4 teaspoons Worcestershire sauce
1 tablespoon prepared mustard
1 tablespoon white vinegar

Steps:

  • Mix beef, bread crumbs, egg and spices.
  • Shape into 50 meatballs.
  • Place in 13x9x2 baking pan.
  • Broil until brown, turning once.
  • Spoon off excess fat.
  • In saucepan cook green pepper and onion in butter or margarine until tender-crisp.
  • Stir in remaining ingredients.
  • Pour over meatballs.
  • Cover with foil and bake at 350 for 20 minutes.
  • Place in fondue or chafing dish to serve.

  • Place meatballs in crockpot, pour sauce over and heat on low for 3-4 hours.
  • May be served directly from crockpot.
