This full-bodied stew is ideal for chilly rainy days. So I often try-unsuccessfully-to sneak some into the freezer before my family can eat it all! I hope you enjoy it, too.

1 cup cubed lean boneless pork (1/2-inch pieces)
1 cup cubed fully cooked ham
1 cup coarsely chopped green pepper
1/2 cup chopped onion
1/2 cup chopped celery
1 garlic clove, minced
3 cups cubed red potatoes
3 cups water
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15.8 ounces) great northern beans, rinsed and drained
1-1/4 teaspoons sugar
1 teaspoon chicken bouillon granules
1 teaspoon beef bouillon granules
1/4 teaspoon ground nutmeg
1/4 teaspoon coarsely ground pepper
1 package (10 ounces) frozen chopped spinach or turnip greens or 1 can (14-1/2 ounces) spinach or turnip greens, drained

Steps:

  • In a Dutch oven coated with cooking spray, brown pork over medium-high heat. Add ham, green pepper, onion, celery and garlic. Reduce heat to medium; cook for 8-10 minutes or until vegetables are just tender, stirring occasionally. Add the next nine ingredients. Reduce heat; cover and simmer for 20 minutes or until meat is tender. Add spinach and cook until heated through.

2 tablespoons vegetable oil
4 ounces sliced shiitake mushroom caps
5 cloves garlic, thinly sliced
One 1-inch piece fresh ginger, peeled and finely chopped
4 cups beef broth
3 tablespoons soy sauce
Kosher salt and finely ground black pepper
12 ounces top sirloin steak, very thinly sliced by a butcher
2 cups cooked short grain rice
1 Persian cucumber, thinly sliced
1 bunch scallions, thinly sliced
1 small hot red chile, thinly sliced
Kimchi, as needed
Lime wedges, for serving

Steps:

  • Heat the oil in a medium, heavy saucepan over medium-high heat until hot. Stir in the mushrooms and cook until golden, about 6 minutes. Stir in the garlic and ginger and cook, stirring until golden, about 5 minutes. Stir in the beef broth, 2 cups water, the soy sauce and 1/2 teaspoon each salt and pepper and bring to a boil.
  • Cut the steak into thin strips and divide among 4 serving bowls. Place 1/2 cup rice on top. Season the broth with salt and pepper, and then ladle into the bowls. Divide the cucumbers, scallions, chile and kimchi among the bowls. Serve with lime wedges.

1 pound beef chuck, cut into 1-inch cubes
4 Yukon Gold potatoes, cubed
1 ½ cups mushrooms, halved
1 onion, cut into 6 wedges
2 carrots, cut into 1/2-inch thick slices
2 cloves garlic, minced
3 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried rosemary

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter and cook beef chuck cubes in batches until browned on all sides, about 5 minutes per batch.
  • Return all beef chuck to the pot. Add potatoes, mushrooms, onion, carrots, and garlic; cover with beef broth. Stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary. Close and lock the lid. Select Meat/Stew function according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

Hungarian Hot Stew

I FINALLY got this from my mom, it is an old family recipe. It can get pretty hot so be careful with the hot pepper seeds. I had to make up the amounts as my mom never measured anything so these are just suggestions really. Just kind of eyeball it, there is no right or wrong amount - if you like more carrots and less bell pepper that is what you want to do. I love to kind of mash my potatos and carrots together when I eat it - yummm. It's even better (and hotter) the next day.

3 lbs chuck roast
1/2 tablespoon hot pepper flakes
5 carrots, cut into large pieces (about 4 chunks per carrot depending on size)
3 celery, cut into large pieces
2 green bell peppers, cut into wedges
1 large onion, cut into wedges
1/2 tablespoon hot pepper flakes
5 russet potatoes, cut into large chunks (quartered or so depending on size)
2 (15 ounce) cans green beans, drained
2 teaspoons garlic salt
2 teaspoons salt
2 teaspoons pepper
1 (48 ounce) can tomato juice
2 (32 ounce) cans tomato sauce

Steps:

  • Cut meat into 2-3" chunks and put into a large pot or Dutch oven. Sprinkle with hot pepper seeds-to taste.
  • Layer all of the ingredients in the order given, just make sure the the tomato juice and sauce cover the veggies but not so much it becomes a soup. Wiggle the pan so the sauce distributes throughout.
  • Cook on medium to medium-low heat for 1 hour, skimming when needed and stirring occasionally (at this point you want to stir carefully so as not to disrupt the layering too much).
  • Cook an additional hour or so on medium-low or until the carrots are done.
  • Serve with crusty bread (for sopping-very important!) and salad.

Very simple lamb and potato casserole made with layers of sliced potatoes, browned onion and leg of lamb, fresh thyme, stock and seasoning.

1 tablespoon vegetable oil
12 ounces chopped onion
1 ½ pounds cubed leg of lamb meat
2 ½ pounds potatoes, peeled and thinly sliced
2 tablespoons chopped fresh thyme
1 ounce butter
2 cups chicken or lamb stock

Steps:

  • Heat oil in a large skillet over medium high heat. Saute onion until soft and deep golden in color. Remove from skillet and set aside. Add lamb to skillet and fry (in batches if necessary) until rich chestnut brown in color, 12 to 15 minutes. Drain fat and reserve.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread 1/2 of the potatoes in the bottom of a 9x13 inch baking dish. Season with salt and pepper to taste. Place browned lamb and onions on top, then sprinkle with thyme and season to taste. Cover with remaining potatoes, season to taste and dot with butter. Pour stock over all.
  • Bake in the preheated oven for 1 1/2 to 2 hours. Note: If casserole is drying out while cooking, add more stock as needed. If casserole is browning too quickly, cover with aluminum foil.

1 (16 ounce) package hot dogs, cut into bite size pieces
1 (15 ounce) can diced tomatoes

Steps:

  • Put everything except hot sauce into large pot, cover with water and cook until done.
  • May add tomato juice if desired instead of some of the water (I usually do).
  • Add hot sauce during the last 15 minutes of cooking.
