SAUSAGE AND VEGETABLE SOUP

Sausage and Vegetable Soup image

This sausage and vegetable soup recipe is hearty and delicious. Italian sausage, potatoes, and a flavorful broth make a tasty and filling meal.

Provided by Natasha Bull

Categories     Soup

Time 40m

Number Of Ingredients 11

17.6 ounces Italian sausages (cut up/crumbled)
1/2 medium onion (chopped)
3 sticks celery (chopped)
2 cloves garlic (minced)
4 cups chicken broth
1 cup water
2 medium carrots (sliced/chopped)
2 large Russet potatoes (peeled & diced)
1 red bell pepper (chopped)
1 cup corn ((I used frozen))
Salt & pepper (to taste)

Steps:

  • Take the sausage meat out of the casings and crumble it into a large soup pot over medium-high heat. Cook for 5 minutes, stirring occasionally. Drain a bit of the fat, leaving some in for flavor. I prep as I go along, so I chop the onion and get the other ingredients started as the sausage cooks.
  • Add the onion, celery, and garlic to the pot. Continue cooking it for another 5 minutes. Meanwhile, chop any remaining ingredients.
  • Add in the chicken broth, water, carrots, potatoes, red pepper, and corn. Increase the heat to high and bring the soup to a boil. Once it's boiling, reduce the heat and let it simmer for 15-20 minutes or until the potatoes and carrots are tender.
  • Season with salt & pepper as needed.

  • Add the oil to a large soup pan or Dutch Oven (the pan needs to hold 6 quarts / 5.5 litres or more to make this soup comfortably), and warm over a medium heat.
  • Add the onions and sauté for about 5 minutes or until turning golden. Then add the garlic and cook for another minute, stirring frequently.
  • Add the herbs and flour, stir well and cook for about a minute. Add the salt, pepper and tomato paste and stir well again. it will be really thick and lumpy looking. Gradually add the stock about a cup at a time, stirring between each addition to work out any lumps. Then add the water all at once. It seems like a lot of liquid but don't worry. It's how it's supposed to be for now.
  • Bring to a simmer stirring frequently. It will start to thicken a little but still be very liquidy. Once simmering add the dried pasta, kale, sliced sausages, sugar and coconut milk. Be sure to add the coconut milk last as the other ingredients will drop the temperature a little and prevent it curdling.

  • To a large Dutch oven or stockpot, add the optional olive oil , sausage, onion, red pepper, and cook over medium-high heat for about 5 minutes, or until onion is becoming soft and translucent. Stir and crumble the sausage as it cooks. I did not drain the sausage but you can if desired; the fat keeps the rice from sticking and adds flavor to the broth.
  • Add the broth, tomatoes, oregano, 1 teaspoon salt, pepper, optional cayenne (doesn’t make the soup spicy but adds flavor), bring to a boil, and once boiling, add the zucchini, green beans, rice, and cook uncovered for about 7 minutes or until the vegetables are crisp-tender.
  • Turn the heat off, add the basil, optionally add the lemon juice (it really brightens up the flavor of the soup and I recommend it), stir to combine, and taste the soup. If necessary, add more salt. Because I use lower/no salt-added products, I added a total of about 3 teaspoons salt but this will vary based on preference and products used; rice is also bland and benefits from adequate salt.

  • Heat the olive oil in a large soup pot, on medium high. Then crumble the sausage, if it isn't already, into the pot. Saute reducing heat as needed until the sausage crumbles are nice and brown. About 5-7 minutes, depending on what kind of sausage you are using.
  • If there are a bunch of brown bits of sausage stuck to the bottom of the pot, scrape as much off the bottom as you can and discard it.
  • Then heat 1 tablespoon of vegan butter in the pot on medium high and then add the carrots, celery, onion and garlic. Saute reducing heat as needed until the onions are translucent. About 5 minutes. Season with a pinch of salt and pepper.

  • Cook pasta: Fill a large pot with 4 quarts of water. Bring to a boil and generously season water with salt. Cook pasta to al dente according to package directions. Drain cooked pasta and rinse with cold water. Drain again. Set aside.
  • Brown sausage: In the same pot, heat oil over medium heat. Add the sausage and season to taste with salt and pepper. • Cook vegetables: Add the onions, carrots and celery to the pot. Season with salt and pepper. Cook, stirring frequently, until the onions are softened, about 5-8 minutes. Add in the garlic and Italian seasoning. Sauté until fragrant, about 30 seconds to 1 minute. Add in the tomato paste and cook, stirring, until the tomato paste starts to caramelize, about 1-2 minutes.
  • Add liquids and sausage: Stir in the crushed tomatoes, diced tomatoes, broth, bay leaves, parmesan rind (if using) and reserved sausage. Bring the soup to a boil, then immediately reduce the heat to maintain a very gentle simmer. Simmer for 15 minutes.
