This hearty hot dog and corn soup is delightful, filling and oh so tasty and quick to make. All ingredient quantities can be modified to suit your own taste. Wonderful when served with any bread or tortillas.

- In a large saucepan combine frankfurters, corn, tomato paste, chili powder, cayenne, onion powder, salt, pepper, water and cheese. Cook over medium heat until frankfurters plump and cheese is melted.

HOT DOG SOUP
My mother, Marea Mooney, made this soup for her six children. It is a warm and filling mixture of potatoes, green beans, and frankfurters that's easy to make and perfect for a cold winter day. Adjust ingredients to taste. We all love it; hope you do, too! Serve with salad and warm rolls.

Steps:
- Place the onion and margarine in a large saucepan over medium heat. Slowly cook and stir until the onion is soft. Mix in the potatoes and enough water to cover. Bring to a boil. Reduce heat and mix in the tomato sauce, chicken broth, green beans and frankfurters. Simmer 30 minutes, or until potatoes are tender.

HOT DIGGEDY DOGS

- Preheat the oven to fan 180C/ conventional 200C/gas 6. Pour the oil into the tin and put it in the oven for a couple of minutes to heat up. Add the sausages to the hot tin and roast for 10 minutes.
- Push the sausages to the outer edges of the tin and scatter the sliced onion in the centre. Sprinkle the onion slices with the mustard seeds and some salt and pepper and turn them to coat in the hot oil at the bottom of the tin. Return to the oven for 10-15 minutes until the sliced onions are golden and the sausages are completely cooked through.
- Briefly heat the flour tortillas in the oven, microwave or in a dry frying pan to make them softer and easier to roll. Place a sausage and some onion on each one, top with a spoonful of relish and roll, folding the bottom over. Serve straight away, wrapped in paper napkins.

HOT DOG CASSEROLE
The original version of this recipe came from "The Northern Exposure Cookbook" by Ellis Weiner. This is a real family-style kid-pleasing recipes that I often bring to potlucks and family gatherings. It is like a pot of macaroni & cheese but with the added surpise of the hotdog slices. It is easy prepare, is inexpensive, and doubles nicely. I have even prepared the ingredients the night before and baked it the next day with success (just allow the ingredients to come to room temperature before baking or add a little extra cooking time). You may use reduced fat ingredients if you have health concerns, but it will not be quite as rich. That being said, I do just about always use "light" hotdogs with no real sacrifice to taste. Prep time includes cooking the pasta.

- Preheat oven to 350 F degrees.
- Grease a 2-quart casserole.
- Add the freshly cooked and drained macaroni into the casserole along with the sliced hot dogs and just 2 cups of the cheese; mix well.
- Combine butter and onion in a medium saucepan and saute over medium heat until the onion is wilted (about 5 minutes).
- Whisk flour into the butter mixture quickly until flour is absorbed, then remove from heat.
- Add milk slowly, whisking to combine well- make sure you whisk very quickly and thoroughly or you will have doughy clumps.
- Return to heat, whisk in the salt and pepper, and bring to a boil (still whisking)- just be careful not to let it burn.
- As soon as it starts to hit the boiling point, remove from heat and pour evenly over the macaroni mixture.
- Stir to gently to combine.
- Sprinkle with remaining 1/4 cup cheese and bake, uncovered, for 18-20 minutes or until heated through and the cheese has melted and browned (If you prepare this in advance, wait to add the remaining cheese until you are ready to bake the casserole the next day).
- For variety, I have tried other types of cheeses and thought Cheddar blended with Monterey Jack was also very nice in this.
- NOTE: This does not freeze well.

We're fans of hot dog buns around here, but we were awfully impressed by these hot dogs wrapped in refrigerated soft breadsticks and baked 'til golden.
