LINGUINE WITH MUSHROOMS IN A WHITE WINE BUTTER SAUCE

Steps:
- Cook the linguine in salted water as per instructions on the packaging. Drain and keep aside.
- Heat he butter and olive oil in a pan and add the shallots and garlic to it. Once the shallots start to soften, add the mushrooms to it. Let the mushrooms soften.
- Now add the white wine, red pepper flakes, crushed black pepper and salt. Add the drained pasta to this immediately and toss well. Remove from heat.
- Toss the asiago cheese to it and serve immediately.

Steps:
- Cook pasta in boiling salted water according ton package directions; drain and keep hot.
- While pasta is cooking: In a large skillet, melt butter. Add onion, garlic and mushrooms; sauté over med-high heat for about 5 minutes.
- Add wine, salt, pepper and basil to the skillet. Cover and simmer for 8-10 minutes, stirring occasionally.
- Uncover. Add parsley and heavy cream; simmer until liquid thickens/reduces a bit.
- Toss the hot cooked pasta with the mushroom sauce. Place in serving bowls and sprinkle with parmesan cheese, if desired.

I'm sure this is similar to other recipes BUT I just made it up in my head and it was wonderful. I'm new to this so you experienced cooks let me know what you think and how I can improve it.

Steps:
- Cut chicken into bite size chunks.
- Put chicken into pan at med heat with butter and garlic. Cook until chicken is browned and liquid is reduced.
- In sauce pan combine cream of mushroom soup, mushrooms, water, and wine. Heat on medium to medium low until hot and smooth.
- Add 5 tbs of grated parmasian cheese to cream of mushroom soup mixture and stir constantly until sauce is thickened.
- Pour sauce into pan containing chicken, butter, and garlic.
- Stir until butter and sauce are combined.
- Serve over your favorite pasta.

This is from the Horn of the Moon cookbook. This was pretty good. I would ½ the recipe for two people and add a splash of red wine. Serve with some cheesy bread sticks.

Steps:
- Cook the pasta in the water. Drain.
- Melt 2 T butter in a saucepan. Add garlic and cook for a minute, then add mushrooms, basil and salt and cook until just tender.
- Add remaining 4 T butter, pepper and oil.
- Stir and remove from the heat. Add the parsley to the sauce.
- Toss with the pasta and serve topped with Parmesan cheese.

- Heat oil in a large saucepan over medium-high. Add mushrooms, and cook, stirring often, until all liquid has evaporated, about 12 minutes. Add butter, stirring until melted. Add leeks, garlic, and 1 teaspoon of the salt, and cook, stirring often, until leeks are tender, 4 to 5 minutes.
- Stir in pasta, 3 cups water, stock, wine, and remaining 1 1/2 teaspoons salt. Increase heat to high, and bring to a boil. Reduce heat to medium, and simmer, stirring occasionally, until about 3 minutes short of al dente, (check cook time on package). Stir in cream, and simmer until sauce evenly coats pasta, about 3 minutes. Remove from heat. Stir in cheese, herbs, lemon zest and juice, and pepper. Divide pasta evenly among shallow bowls, and serve topped with cheese.
