Delicious, healthy and easy-to-make black bean dip.

Number Of Ingredients 10

¼ cup extra virgin olive oil
2 small yellow onions, chopped
4 cloves garlic, peeled and chopped into large chunks
2 jalapeño peppers, seeded and chopped*
2 (15.5 ounce) cans black beans, rinsed and drained
1½ teaspoons salt
½ teaspoon ground cumin
2 tablespoons fresh lime juice, from one lime, plus more if desired
3 tablespoons water
¼ cup fresh chopped cilantro, plus more for garnish (optional)

Steps:

  • Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
  • Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
  • *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

2 (15 ounce) cans ranch-style beans, drained
1 (16 ounce) bottle Ranch-style salad dressing

Steps:

  • Place the shredded lettuce in a large, flat dish. Layer with cucumbers, green onions, green bell pepper, cauliflower, baby carrots, broccoli, and radishes. Pour drained beans over the vegetables. Cover with Ranch-style dressing, and top with nacho-flavor tortilla chips. Cover, and chill until serving.

I got this recipe from a cookbook that came free in the mail (from a cigarette company of all things)!! I modified it slighty, and I've gotten nothing but compliments on it. I do tend to go heavier on the garlic & sometimes add a bit more vinegar than what's called for. It sets real nice if chilled overnight, but if time's an issue, chilling isn't totally necessary. I like to serve it in a bright colored bowl.

1 onion, chopped
2 teaspoons chili powder

2 (8.75 ounce) cans whole kernel corn, drained
1 (16 ounce) container sour cream
2 cups fresh salsa
5 cups crushed plain tortilla chips
3 cups shredded Cheddar cheese
1 large fresh tomato, finely chopped
3 green onions, chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium skillet over medium heat, brown the ground beef with the garlic and onion; drain.
  • In a large mixing bowl, combine the meat mixture, chili powder, black beans, corn, sour cream and salsa. Stir until well blended.
  • Into a 9x13 inch baking dish, spoon enough of the beef mixture to cover the bottom. Arrange half of the crushed tortilla chips on top of the meat mixture and layer with 1 cup of Cheddar cheese. Hurry-Up Black Bean Dip image

I love Emerald Valley Kitchens bean dips from Eugene, OR, and I decided to find my own bean dip instead of purchasing theirs. Don't be fooled by the ingredients into thinking it's too healthy to be delicious because this is good for you and tasty too! I found this recipe on epicurious.com posted by Pableaux Johnson. He takes it to potlucks because it's simple to fix. This is great unheated just the way it is, but you could also heat it in the microwave and top with a little cheese if you prefer a hot bean dip. I mixed my salt and pepper with the other ingredients instead of adding it on top before serving. If you're using canned black beans, drain and rinse them. I used black beans already prepared from my freezer.

3 pounds ground beef
2 medium onions, chopped
2 celery ribs, chopped
2 teaspoons beef bouillon granules
2/3 cup boiling water
2 cans (28 ounces each) baked beans with molasses
1-1/2 cups ketchup
1/4 cup prepared mustard
3 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/2 pound sliced bacon, cooked and crumbled

Steps:

  • In a Dutch oven over medium heat, cook the beef, onions and celery until meat is no longer pink; drain. Dissolve bouillon in water; stir into beef mixture. Add the beans, ketchup, mustard, garlic, salt and pepper; mix well., Transfer to an ungreased 3-qt. baking dish. Cover and bake at 375° for 60-70 minutes or until bubbly; stir. Sprinkle with bacon.

3 garlic cloves
3 tablespoons , techina paste
1 drop lemon juice
water
2 (16 ounce) cans black beans
1 tablespoon cumin
1 tablespoon red pepper flakes
optional- handfull of shredded cheese and dash milk
olive oil

Steps:

  • Put a tablespoon of olive oil, garlic, and cumin in the food processer- grind it until garlic is small.
  • Take 3 tablespoons of techina paste,mix with lemon juice and water until smooth.
  • Throw 2 cans of black beans into the food processer with the techina and red pepper flakes- mix!
  • Add some shredded cheese and a dash of milk for texture.
  • Season according to taste!
