Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Add 3/4 teaspoon caraway seeds and 1 minced garlic clove; cook, stirring, 1 minute. Halve 2 pounds carrots lengthwise and cut into 2-inch pieces; add to the skillet along with 1/2 cup water, 3 tablespoons each brown sugar and cider vinegar, and salt and pepper to taste. Bring to a simmer, cover and cook 15 minutes. Stir in 4 cups shredded red cabbage and season with salt; cook 5 minutes. Remove from the heat and add a squeeze of lemon juice. Transfer to a bowl and top with torn fresh dill and parsley.

1 medium napa cabbage
3 tablespoons chinese black vinegar
3 tablespoons light soy sauce
2 teaspoons sesame oil
1 1/2 tablespoons sugar
1/2 teaspoon salt
1 tablespoon vegetable oil
3 dried red chilies, finely chopped
1 tablespoon ginger, minced
1/2 teaspoon szechuan peppercorns
1 red bell pepper, diced

Steps:

  • Separate the cabbage leaves and cut them lengthwise. In a small bowl, combine the vinegar, soy sauce, sesame oil, sugar, and salt, then set aside.
  • Heat up the vegetable oil in a wok or heavy skillet over high heat until it is very hot. Add the chilies, ginger, and szechuan peppercorns and stir-fry for 10 seconds. Add the bell pepper and stir-fry for 30 seconds.
  • Add the cabbage and stir-fry for two minutes, or until all the leaves are wilted. Pour the vinegar mixture into the wok and let simmer for 1 minute, then serve.

Original recipe from "www.VeganYumYum.com" I simplified it a bit to what I had available. This is very tasty with generous servings. It is also really versatile. Add tofu, fresh mushrooms, or other vegetables to your taste.

1 small onion, minced (3 oz)
8 ounces cabbage, about the size of a grapefruit
15 ounces diced tomatoes (petite dice)
5 -6 cups fat free chicken broth or 5 -6 cups vegetable broth
1 (15 ounce) can straw mushrooms, undrained
1/4 cup low sodium soy sauce
1/3 cup seasoned rice vinegar (see note on substituting)
1 teaspoon hot red chili pepper flakes
1/2 teaspoon salt
black pepper, to taste (a lot!)

Steps:

  • NOTE: One cup of seasoned rice vinegar is the same as 3/4 cup white rice vinegar plus 1/4 cup sugar plus 2 teaspoons salt. I used this substitution and it was great.
  • Spray a large soup pot with some cooking spray, and heat over medium heat. Add onion, and saute until soft.
  • Meanwhile, quarter your cabbage, remove the core, and shred the cabbage with a large chef's knife. Add tomatoes, cabbage, undrained mushrooms, and broth to the pot and stir well.
  • Add the soy sauce, vinegar, chili flakes and salt. Bring to a boil, cover, then turn heat down to medium low. Simmer for 20 minutes or until cabbage is the desired tenderness.
  • Grind a lot of fresh black pepper over the top and serve.

5 napa cabbage leaves
3 tablespoons peanut oil
4 large dried hot chili peppers
1/2 tablespoon szechuan peppercorns
1/2 teaspoon salt
1 tablespoon thin soy sauce
1/2 tablespoon rock sugar
1/2 tablespoon Chinkiang vinegar
1 teaspoon sesame oil

Steps:

  • Preparation: Separate, wash & dry cabbage leaves.
  • Stack them up and cut them crosswise into 1" wide pieces.
  • Finely mince or grind Szechuan peppercorns.
  • Crush rock sugar with cleaver handle; mix with soy sauce; reserve.
  • Stir-frying: Heat wok to moderate; add oil.
  • Wait 30 seconds.
  • Stir-fry whole chilis until they just blacken; quickly add peppercorns.
  • When they exude pungent odor, push up side of wok and raise heat to high.
  • Add salt & cabbage all at once.
  • Keep tossing cabbage until it is wilted & soft.
  • This takes several minutes.
  • There should be about 2 T of water in wok when cabbage is wilted.
  • Add sugar & soy mixture.
  • When sugar has melted, toss with cabbage, then sprinkle vinegar over all.
  • Keep tossing on high heat for another 20 seconds.
  • Add sesame oil; toss briefly; remove to serving dish.
  • If serving this dish cold, wait until it has cooled, then cover & refrigerate.

1/4 head red cabbage, finely sliced
2 cups sauerkraut
1 tablespoon mustard
2 cups salad dressing
1/4 cup sugar
1 tablespoon celery seed
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Simmer sauerkraut, mustard, salad dressing, sugar, celery seeds, salt and pepper about 10 minutes, stirring frequently.
  • Pour over white and red cabbage slices and mix.
  • Season with additional salt if necessary.
  • Serve hot.

3 garlic cloves, crushed
1 cup diced white onion
1/2 cup thin sliced carrot
1/2 cup thin sliced celery
1 tablespoon tomato paste
2 tablespoons olive oil or 2 tablespoons margarine
4 ounces fresh mushrooms, chopped (preferably shitake)
32 ounces low sodium chicken broth
2 tablespoons apple cider vinegar
2 tablespoons reduced sodium soy sauce
1/2 teaspoon crushed red pepper flakes (or to taste)
2 cups shredded cabbage (I use red)
1 1/2 cups hot water

Steps:

  • In a large dutch oven, heat oil, add garlic, carrots, celery and onion season with salt, pepper and crushed red pepper. Saute until onion is transparent.
  • Stir in tomato paste to combine, add mushrooms and cook for approximately 4-5 minutes or carrots and celery are tender.
  • Add chicken broth, soy sauce and cider vinegar. Bring to a boil, then add cabbage reduce heat add hot water and simmer for approximately 20 minutes.
  • Serve with sliced green onion on top.
  • This is only 3 points on Weight Watchers Diet as well!

1 head chinese napa cabbage
2 tablespoons coarse salt
1 tablespoon minced ginger
1 tablespoon red pepper flakes
1/3 cup red wine vinegar
1/3 cup rice wine vinegar
3/4 cup sugar or 3/4 cup Splenda granular
salt (to taste)
5 dried red chilies
3/4 teaspoon szechuan peppercorns, ground and sifted
2 tablespoons peanut oil
1 tablespoon sesame oil

Steps:

  • Remove core from cabbage; shred.shred cabbage.
  • Place cabbage in a colander in the sink and sprinkle with coarse salt; allow to sit until the cabbage weeps, about 45 minutes, then rinse thoroughly and let drain.
  • In a small saucepan heat ginger, red pepper flakes, vinegars, sesame oil, salt, and sugar/Splenda to a boil.
  • Heat oil in small skillet on medium-high heat on stove, add Szechuan peppercorns and chilies; stir until very fragrant.
  • Add cabbage to skillet and cook for a few minutes; pour dressing in and cook until the liquid reduces somewhat.
  • Stir in toasted sesame oil and then chill until needed.
