REUBEN STYLE CASSEROLE WITH PASTRAMI MEATBALLS, SAUERKRAUT AND BARLEY



Reuben Style Casserole with Pastrami Meatballs, Sauerkraut and Barley image

12 ounces ground beef
12 ounces ground pork
About 3/4 cup plain breadcrumbs
2 to 3 tablespoons finely chopped fresh parsley
1 tablespoon ground coriander, a scant palmful
1 tablespoon granulated garlic, a scant palmful
1 tablespoon paprika, a scant palmful
1 tablespoon coarse black pepper
1 1/2 teaspoons ground allspice, half a palmful
About 1/2 teaspoon cayenne pepper or ground red pepper
1 large egg, beaten
Kosher salt
Olive oil spray
Kosher salt
1 1/4 cups pearled barley
4 tablespoons butter
2 large onions, chopped
Ground black pepper
1 pound sauerkraut, rinsed and drained
2 cups grated Swiss cheese (about a 12-ounce brick)
1 cup sour cream
1/3 cup ketchup
1/4 cup pickle relish

Steps:

  • For the meatballs: Preheat the oven to 450 degrees F. In a mixing bowl, combine the beef and pork. Then add the breadcrumbs, parsley, coriander, garlic, paprika, black pepper, allspice, cayenne and egg. Sprinkle with salt. Form into 1 1/2-inch meatballs and arrange on a baking sheet. Spray with olive oil and bake to lightly brown, 10 to 12 minutes.
  • For the casserole: Bring a medium pot of water to a boil, salt the water and cook the barley to tender, about 20 minutes. Drain.
  • Meanwhile, melt the butter over medium heat. Add the onions and season with salt and pepper. Cook until golden in color and sweet, stirring frequently, 15 to 20 minutes.
  • In a casserole, combine the barley, onions and sauerkraut. Top with the Swiss cheese and arrange the meatballs in the casserole. Cool and cover for a make-ahead meal.
  • Combine the sour cream with the ketchup and relish. Season with salt and pepper and store in a plastic food storage bag.
  • Bring the casserole to room temp. Preheat the oven to 350 degrees F and bake until the cheese is melted and the casserole is hot throughout. Cut the corner of the baggie, drizzle the dressing over the casserole and serve.

1 1/2 cups mayonnaise
2/3 cup chili sauce
1/2 cup sour cream
1 tablespoon prepared horseradish
1 tablespoon freshly squeezed lemon juice
2 teaspoons sugar
2 teaspoons Worcestershire sauce
1/2 teaspoon hot sauce
1/2 teaspoon smoked paprika
1 dill pickle, chopped
1 shallot, chopped
Salt and freshly cracked black pepper
1 1/3 cups sauerkraut, squeezed of excess moisture
8 slices marble rye bread
8 slices Swiss
1 pound pastrami, shaved or cut how you like it
Salted butter, softened

Steps:

  • For the dressing: Combine the mayonnaise, chili sauce, sour cream, horseradish, lemon juice, sugar, Worcestershire sauce, hot sauce, smoked paprika, dill pickles and shallots in a food processor until thoroughly mixed. Do not over blend, you still want to see some texture. Season with salt and pepper. Set aside or refrigerate in a covered jar until serving time.
  • For the sandwich build: Combine half of the dressing with the sauerkraut and toss. Place 1 slice of cheese on a piece of bread. Pile the meat high on the cheese, top with an additional slice of cheese, some of the sauerkraut mixture and the second piece of bread. Butter the outsides of the sandwich. Heat a heavy-bottomed nonstick skillet or griddle pan over medium-low heat. Add the sandwiches, cover with a heatproof bowl and griddle until golden and gooey in the middle, 3 to 4 minutes. Flip, cover and let cook until golden all around, another 3 minutes. Serve the extra dressing on the side.
  • Cook's Note: I love getting a whole piece of pastrami, uncut, from Fumare's in Chicago. If you have a favorite deli, try getting a whole piece and cutting it yourself; the meat will stay nice and tender and you can mix the bark from the end cut with the meatier middle. You'll fall in love with pastrami all over again.

PASTRAMI REUBEN BREAD BOXES

Who knew you could go deep-dish with a Reuben? All of the classic ingredients get layered in these homemade bread boxes (like bread bowls, but square). And you can easily double the dressing recipe to serve extra on the side for dipping.

3/4 pound thinly sliced pastrami
1 loaf unsliced white bread (preferably Pullman), about 10-inches long
6 tablespoons unsalted butter
Kosher salt
12 slices Swiss cheese
1/2 cup mayonnaise
1/4 cup ketchup
2 tablespoons horseradish, drained
1/2 teaspoon onion powder
1/2 teaspoon Worcestershire sauce
Hot sauce, for serving
1 1/2 cups sauerkraut, drained well

Steps:

  • Position an oven rack in the center of the oven and preheat to 375 degrees F.
  • Wrap the sliced pastrami in foil and put on to a baking sheet. Remove 1/4 inch of the crust from the ends of the loaf, then cut the loaf crosswise into 4 even pieces. Use a fork to score one cut end and gently dig a square hole into each piece of bread to make a box, leaving a 1/2-inch layer of bread around the walls and bottom (see Cook's Note). Save the removed crumbs for another use.
  • Microwave the butter and a large pinch of salt in a small microwave-safe bowl until melted, about 1 minute. Brush the bread boxes inside and out with the melted butter. Put 1 slice of cheese at the bottom of each bread box. Put the boxes open-side up on the same baking sheet as the pastrami and bake until the cheese melts and the inside of the bread is lightly browned and crispy in parts, about 10 minutes. The pastrami should be warmed through.
  • Meanwhile, whisk together the mayonnaise, ketchup, horseradish, onion powder, Worcestershire sauce and hot sauce in a small bowl. Season to taste with salt if needed. Set aside.
  • Layer each bread box with 1 1/2 tablespoons of the dressing, a quarter of the pastrami, a quarter of the sauerkraut and top with 2 more slices of cheese. Return to the oven and bake until the cheese melts, about 5 minutes. Drizzle with the remaining dressing. Serve whole or cut in half.

One 16-ounce package cheese pierogies
2 tablespoons unsalted butter
1/2 cup sauerkraut
2 cups shredded Swiss cheese
8 ounces good corned beef, sliced into 1/4-inch-thick slices and chopped into cubes (you could also use pastrami)
1 tablespoon toasted caraway seeds
1 tablespoon minced fresh chives
18,000 Island Dressing, recipe follows
1 cup mayonnaise
2 tablespoons gochujang
2 tablespoons diced pickled jalapenos
1 teaspoon Dijon mustard

Steps:

  • Bring a pot of water to a simmer. Add the pierogies and simmer until slightly soft, 5 to 7 minutes. Drain and pat dry.
  • Preheat the oven to broil.
  • Heat a 12-inch ovensafe nonstick skillet over medium heat. Add the butter and heat until foaming. Saute the pierogies until golden brown, 4 to 5 minutes a side. Remove from the heat.
  • Evenly sprinkle a layer of the sauerkraut on top of the pierogies. Then add a layer of the Swiss and finally, an even layer of the corned beef.
  • On the lowest rack, broil the mixture in the skillet until the cheese and corned beef are golden brown and the cheese is bubbly, 2 to 3 minutes. Garnish with the caraway seeds and minced chives. Serve with a squirt of 18,000 Island Dressing.
  • Mix the mayo, gochujang, jalapenos and mustard in a small bowl.

  • Spread bread cubes in the bottom of a 9x13 inch baking dish.

3/4 pound sliced deli corned beef, chopped
2 cups shredded Swiss cheese
2 slices day-old light rye bread

1 ½ cups thousand island dressing
1 cup sour cream
1 tablespoon minced onion
6 slices dark rye bread, cubed
6 slices light rye bread, cubed
1 pound sauerkraut, drained
1 ½ pounds corn beef, cut into bite-size pieces
2 ½ cups shredded Swiss cheese
¼ cup margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, mix the thousand island dressing, sour cream, and onion.
  • Arrange the dark and light rye bread cubes in the bottom of the prepared baking dish, reserving about 1/2 cup each for topping. Layer the bread with sauerkraut and corned beef. If you love reubens then this is for you! Thinly sliced leftover roast beef or steak may use in place of pastrami. You may double all amounts and make two layers if desired. Don't be shy with the dressing, sauerkraut and cheese--use as much as you want--the amounts stated are only a guideline, just make certain to use as much bread cubes as needed to cover the bottom of the baking dish. Place the cubes in the dish before baking just to be sure. Toasting the bread cubes prevents the bread from becoming soggy. You may skip this step if you wish, but the sauerkraut will need to to hand-squeezed to remove as much liquid as possible :)

  • Layer the beef strips evenly over the sauerkraut.
  • Pour the salad dressing completely over the top (you may use more than 2 cups if needed).
  • Cover with foil and bake 400°F (bottom oven rack) for 20-25 minutes.
