APPLE PASTRY SQUARES

Apple Pastry Squares image

"We have four very productive apple trees in our backyard, so I make a lot of recipes that call for apples. Even then, we'll often end up giving bushels of them away. This apple dessert is one of my family's favorites. If you're serving a larger group, I've found that it goes a little further when cut into squares rather than slices like a traditional apple pie."

APPLE PIE BARS

Apple Pie Bars image

Homemade danish pastry with loads of apples baked inside. The almond glaze is a must on these apple pie bars.

Provided by Julie Clark

Categories     Dessert

Time 1h15m

Number Of Ingredients 12

3 3/4 cups all purpose flour ((488 grams))
1 1/2 teaspoons salt ((8 grams))
1 1/2 cups cold unsalted butter ((cubed))
1 large egg ((separated))
3/4 cup cold water
1 cup crushed cornflakes ((70 grams))
10 apples ((peeled, cored and sliced) (2 1/2 pounds after peeled and cored))
3/4 cups granulated sugar ((156 grams))
2 teaspoons ground cinnamon
1/2 cup powdered sugar
1 tablespoon 2% milk
1/2 teaspoon almond extract

Steps:

  • Preheat the oven to 375º Fahrenheit.
  • In a stand mixer bowl, combine flour and salt. Using a pastry cutter, cut in the cold butter until the mixture becomes coarse crumbs. Snap the butter between your fingers if needed to combine the flour and butter. It's ok if there are little chunks of butter. That's what will make your pastry flaky.
  • In a separate cup, beat the egg yolk, reserving the egg white until later. Stir the cold water into the yolk. Gradually add the egg mixture to the flour mixture until dough comes together to form a ball.
  • On a floured pastry mat, roll out half of the dough large enough to cover the bottom and sides of an ungreased 9x13 inch pan. Place the dough in the pan.
  • Sprinkle the crushed cornflakes over the bottom of the dough in the pan.
  • Arrange apple slices over the top of the cornflakes. Sprinkle the sugar and cinnamon over the apples.
  • Roll out the second half of the dough to cover the entire pan with a little dough hanging over the edge. Lay the dough over the filling and pinch the edges of the two crusts together.
  • Whisk the reserved egg white until foamy and brush onto the top crust with a pastry brush.
  • Bake the bars for 45 to 50 minutes or until golden brown on top.
  • To make the almond glaze, whisk the powdered sugar, milk and almond extract until smooth. Drizzle the glaze over the warm apple pie bars.
  • Serve with ice cream if desired.
  • Store in an airtight container at room temperature.

APPLE PIE BARS

Apple Pie Bars image

Provided by Ina Garten

Categories     dessert

Time 2h

Yield 12 bars

Number Of Ingredients 15

1 pound (4 sticks) unsalted butter, at room temperature
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 1/2 pounds Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
1 1/2 pounds Golden Delicious apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 375 degrees.
  • For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
  • Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
  • Reduce the oven to 350 degrees.
  • For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
  • Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.
