1 scallion, sliced fine
2 tablespoons reduced sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon minced fresh ginger
1 lb center-cut salmon fillet
1 teaspoon toasted sesame seeds

Steps:

  • Whisk scallion, soy sauce, vinegar, honey and ginger in a medium bowl until the honey is dissolved. Place salmon in a zip-top plastic bag, add 3 tablespoons of the sauce and refrigerate; let marinate for 15 minutes, turning at least once. Reserve the remaining sauce.
  • Preheat broiler. Line a small baking pan with foil and coat with cooking spray. Transfer the salmon to the pan, skin-side down. (Discard the marinade in the bag.) Broil the salmon 4 to 6 inches from the heat source until cooked through, 6 to 10 minutes. Drizzle with the reserved sauce and garnish with sesame seeds.

12 oz skinless salmon
1 tablespoon olive oil
4 cloves garlic, minced
2 teaspoons ginger, minced
½ teaspoon red pepper
1 tablespoon olive oil
⅓ cup less sodium soy sauce
⅓ cup honey

Steps:

  • Place salmon in a sealable bag or medium bowl.
  • In a small bowl or measuring cup, mix marinade ingredients.
  • Pour half of the marinade on the salmon. Save the other half for later.
  • Let the salmon marinate in the refrigerator for at least 30 minutes.
  • In a medium pan, heat oil. Add salmon to the pan, but discard the used marinade. Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.
  • Remove salmon from pan. Pour in remaining marinade and reduce.
  • Serve the salmon with sauce and a side of veggies. We used broccoli.

2 salmon fillets (4 to 6 ounces each)

  • SAUCE: In a small saucepan over medium-high heat, stir together mirin, vinegar, soy sauce, honey, ginger and wasabi to taste. (Add the wasabi incrementally, tasting as you go.) Bring to a boil. Reduce the heat to medium and cook, stirring occasionally, until glaze thickens slightly, about 5 minutes (mine took closer to 10 minutes). Remove from the heat. My adaption to this recipe is that I prefer to sear and roast salmon in an oven-proof skillet. Preheat oven to 425°F. Lightly coat an oven-proof skillet with olive oil and heat on medium-high. Season the salmon with a little kosher salt & fresh cracked pepper. When the oil begins to shimmer, and just starts to smoke, add the salmon, skin side up. Sear, without moving it around for 3 to 4 minutes. Turn the salmon over, skin side down. Brush some of the glaze onto the salmon and then place the skillet of salmon into the oven for about 4 minutes. Spoon the remainder of the sauce over the salmon and serve hot.

2 teaspoons low-sodium Tamari or soy sauce
1 tablespoon unsalted butter
¾ teaspoon honey
1 pound Ahi tuna fillet, (sushi grade (about 1-inch thick - see notes))
grapeseed, or other neutral oil for the pan
salt and freshly grated black pepper

Steps:

  • Add the wasabi and Tamari (or soy sauce) to a small sauté pan and use a small whisk to blend until it's smooth.
  • Place the pan over low-medium heat and add the butter. Swirl the pan around until the butter has melted and is completely incorporated.
  • Whisk in the honey and set aside to cool to room temperature.
  • While the glaze is cooling, cut the Ahi into small cubes, about 1-inch -- and season them with salt and pepper. (It's very easy to cut into cubes if it's semi-frozen. Just be sure they're thawed by the time you sear them.)
  • Coat the bottom of a medium-sized sauté pan with the oil and place it over high heat. Once the pan is very hot, add the Ahi and sear all but two opposing sides. (If you don't hear a sizzling sound when the tuna hits the pan, it's not hot enough -- wait for the sizzle!) Only cook it through a bit, less than ⅛-inch, probably no more than 10 seconds per side. You can use a fork to simply roll them to sear each side. You'll want to remove them from the pan the instant they're done, so doing this in small batches is a good idea. Place them directly on a plate or serving platter, raw side up. (You can also cut the tuna into strips, and slice them into cubes after searing them.)
  • Drizzle the cooled wasabi glaze over them, add toothpicks and serve.

1 tablespoon vegetable oil
4 skinless salmon fillets, (6 to 8 ounces each)

Steps:

  • In a blender, combine mayonnaise, cilantro, lime juice, wasabi, ginger, and 1 tablespoon water. Blend until smooth, adding up to 2 tablespoons more water to thin sauce, about 3 minutes. Season with salt and pepper, and set aside.
  • In a large nonstick skillet, heat oil over medium-high. Season salmon with salt and pepper; place in skillet, flat side up. Cook until opaque throughout, 3 to 4 minutes per side. Transfer to a plate, and cover with aluminum foil to keep warm.
  • Wipe out skillet with a paper towel. Add mirin and soy sauce, and bring to a boil over medium-high. Add bok choy; season with salt and pepper. Cover, and cook until tender when pierced with the tip of a paring knife, 3 to 5 minutes; discard liquid. Drizzle salmon with wasabi sauce, and serve with bok choy.

  • Mix together soy sauce, honey, ginger, garlic spring onions and lime juice - taste to your liking and season with black pepper.
  • Rinse the fish with clean water and gently pat dry with kitchen paper.
  • Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.
  • Once marinaded, loosely wrap the fish in individual foil parcels with a couple of spoonfuls of the marinade, leaving a 1 inch gap in the top of the foil.
  • Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
  • Serve with vegetables such as broccoli, green beans or red peppers. Unwrap the parcels and use a flat utensil to lift the fish out and place onto your plate.

Steps:

  • Place a rack in the center of your oven and preheat the oven to 400 degrees F. Line a baking dish large enough to hold the salmon in an even layer (such as a 9x13-inch baking dish) with parchment paper or aluminum foil.
  • While the oven heats, combine the honey, garlic, soy sauce, vinegar, and red pepper in a small saucepan. Bring to a boil, then turn the heat to medium low and simmer, stirring often, until thickened but still pourable, about 3 minutes. The mixture will bubble up as it heats. Let cool 3 minutes.
  • With paper towels, pat the salmon fillets dry. Arrange the fillets evenly in the pan, ensuring that they are not overcrowded.
  • Brush the fillets with the olive oil and sprinkle with salt.
  • Pour the glaze over the salmon. With a spoon, scoop some of the glaze that collects in the bottom of the pan over the top of the salmon.
  • Bake the salmon for 6 minutes, then with a spoon, baste with the glaze that's collected in the pan once more. Return to the oven and continue baking until the salmon is just cooked through at the center, another 6 to 8 minutes for 1-inch fillets; if your salmon is thicker or thinner, you will need to adjust the cooking time accordingly. Salmon is done when it reaches 145 degrees F on an instant-read thermometer and flakes easily with a fork. Do not overcook or the salmon will be dry (once I get close to 145 degrees, I remove the salmon then cover it and let it rest a few minutes so the carryover cooking finishes the job).
  • Spoon the glaze over the salmon once more, then squeeze the lime over the top and sprinkle with cilantro. Serve hot over rice as desired, with the remaining glaze drizzled over the top.

1/4 cup Teriyaki Sauce
1/4 cup Honey + 1 extra tsp
2 tbsp Soy Sauce
2-3 tsp Wasabi (based on your taste)
2 tbsp Olive Oil
2 tsp Fresh Ginger (grated)
1 clove Garlic (Minced)
Scallions and Sesame Seeds (for garnish)

Steps:

  • Wash your salmon and pat dry. Set aside.
  • Combine your teriyaki sauce, honey, soy sauce, olive oil, garlic, ginger, and wasabi in a tupperware. Mix well.
  • Place your salmon in the tupperware so it's covered by the marinade. (If you don't have a large enough tupperware to lay your salmon flat, you can fold it. Just remember to turn it over after a few hours so it marinates all over.) Let rest in the fridge for 4 hours to overnight.
  • Preheat your oven to 400°F.
  • Remove your salmon from the marinade and place it on a baking sheet. Drizzle 2 tbsp of marinade over the top.
  • Place your salmon in the oven for 15 minutes.
  • Remove from the oven, brush with glaze. Place back in the oven for another 10 minutes.

Steps:

  • Spoon 1 tablespoon soy sauce over fish and let stand 5 minutes.
  • Combine the remaining 1 tablespoon soy sauce, ginger, and 2 teaspoons wasabi paste in a small bowl, stirring with a whisk.
  • Heat a grill pan over medium-high heat.
  • Coat pan with cooking spray. Add fish to pan; cook 2 minutes on each side.
  • Spoon marmalade mixture over tuna.
