Steps:
- Heat the oil in a large saucepan over medium-high heat. Add the ginger, garlic, and scallion whites and cook, stirring frequently, until softened, 2 to 3 minutes. Stir in the curry powder. Add the carrots, potato, lentils, broth, ¾ teaspoon salt, and ¼ teaspoon pepper. Bring to a boil, reduce heat, and simmer, stirring occasionally, until the lentils and vegetables are tender, 15 to 20 minutes.
- Sprinkle the curry with the scallion greens and serve with the naan and lime wedges.

Steps:
- Wash the lentils in cold water until the water runs clear. Put lentils in a pot with enough water to cover; bring to a boil, place a cover on the pot, reduce heat to medium-low, and simmer, adding water during cooking as needed to keep covered, until tender, 15 to 20 minutes. Drain.
- Heat vegetable oil in a large skillet over medium heat; cook and stir onions in hot oil until caramelized, about 20 minutes.
- Mix curry paste, curry powder, turmeric, cumin, chili powder, salt, sugar, garlic, and ginger together in a large bowl; stir into the onions. Increase heat to high and cook, stirring constantly, until fragrant, 1 to 2 minutes.
- Stir in the tomato puree, remove from heat and stir into the lentils.

RED LENTIL CURRY
This vegan red lentil curry recipe is super flavourful and easy to make with a short list of ingredients. It's perfect for a weeknight dinner because it's ready in just 30 minutes!

- Place the lentils in a strainer and rinse under cool water. Set aside.
- Heat the oil in a medium pot over medium heat. Fry the onion until soft and transparent then add the ginger and garlic and fry for another 30 seconds to a minute until soft and fragrant.
- Add the tomato paste and stir well. Fry, stirring frequently, until the tomato paste darkens slightly in color - about 2 minutes. Add in the curry powder, cayenne pepper and garam masala and cook, stirring, for another minute or until the spices are fragrant.
- Add in the lentils, vegetable broth and salt. Bring to a boil then reduce the heat to a gentle simmer and partially cover the pot with the lid.
- Simmer gently until the lentils are tender and most of the broth is absorbed - about 15 to 20 minutes.
- Serve with rice and garnish with fresh cilantro and a slice of lime, if desired.

Steps:
- Rinse lentils in strainer and sort through, removing debris.
- Heat 1 TBS broth in medium soup pot. Saute onion in broth over medium heat for 5 minutes stirring frequently, until translucent.
- Add garlic, carrots, celery, and cabbage. Continue to sauté for another couple of minutes.
- Add curry powder and mix to bring out its flavour.
- Add rinsed and drained lentils, broth and tomatoes.
- Bring to a boil, reduce heat to medium low, and simmer uncovered until lentils and vegetables are tender, about 30 minutes.
- Add cilantro and season with salt and pepper to taste.
- Serve over rice / toast / etc.
- Notes:.
- I rarely have fresh cilantro so substitute 1-2TBS dried coriander. Usually end up forgetting it altogether though.
- I play fast and loose with the quantities - very forgiving recipe.
- Servings are a guess, I tend to make lots and use up all the vegies I can find.

- Rinse lentils with cold water until water runs clear. Drain and set aside.
- Heat olive oil in a large pot over medium heat. Add garlic and cook until fragrant, about 1 minute. Add carrots and onion. Season with a pinch of salt and pepper to help vegetables release their liquid. Cook, stirring occasionally, until onions are translucent, about 5 minutes.
- Add tomatoes and another pinch of salt. Cook, stirring occasionally, for 3 minutes. Stir in vegetable stock and lentils. Increase heat to high and bring to a boil.

CHICKEN AND RED LENTIL CURRY

- Heat 1 tablespoon of the oil in a large pan and add the onion. Cook for 8-10 minutes over a gentle heat stirring occasionally until softened. Stir in the garlic, curry paste and cumin and cook for 1-2 minutes more.
- Add the remaining oil and the chicken and cook for 2-3 minutes. Stir in the stock and lentils, bring to the boil, cover and simmer for 25 minutes stirring occasionally until the lentils are tender and the chicken is thoroughly cooked.
- Stir in the yoghurt and cover, simmer for 5 minutes.
- Serve with basmati rice.
RED LENTIL CURRY
A simple vegetarian curry. Split peas can be used instead of lentils. And the curry seasoning should be adjusted to taste.

- Wash lentils several times.
- Heat oil in a pot and add chopped onion.
- When onion is light brown in colour, add the lentils and about half of the water.
- Stir.
- Now add curry powder, chilli powder, mustard and salt.

- Add coconut oil to a pan, over medium heat. Add the onion, carrot garlic and ginger and cook for around 10 mins, stirring occationally, until the onion is golden.
- Add the pepper (capsicum) and spices (curry powder, smoked paprika and turmeric) and cook for a further 30-60 seconds, stirring continuously to prevent burning.
- Add the lentils, coconut milk, tomatoes and water and simmer for around 25 mins, uncovered. (The lentils should be soft, and the sauce should be thickened and creamy. If you find it too thick add 1/2 cup extra of water at a time.)
- Add the lemon juice and chopped coriander, taste and then season to taste. (do not salt for baby)
