CINNAMON OATMEAL PANCAKES WITH HONEY APPLE COMPOTE
Oats have a tendency to get gummy in pancakes, but when they're blended with the whole wheat flour, they stay light in the batter while adding a nice nuttiness. Lowfat milk saves calories and leaves room for melted butter in the batter. The apple compote takes the place of syrup and is sweetened by unrefined natural sugars.

Steps:
- Bring the cider to a boil in a small saucepan over high heat; lower the heat and simmer until reduced by half, 15 to 18 minutes. Stir in the honey and apples, reduce the heat to low and simmer until thick enough to coat the back of a spoon, about 30 minutes.
- Meanwhile, combine the flour, oats, sugar, baking powder, cinnamon and salt in a blender until the oats are finely ground. Add the milk, butter and egg and blend until smooth, scraping down the sides of the blender occasionally.
- Heat a nonstick skillet over medium-low heat. With a paper towel, wipe the oil on the surface of the heated skillet. Ladle 1 tablespoon of the batter onto the skillet to make a pancake. Make 4 to 5 more pancakes, taking care to keep them evenly spaced apart. Cook until bubbles break the surface of the pancakes and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook for 1 minute more.
- Serve immediately with the apple compote, or transfer to a platter and cover loosely with foil to keep warm. Repeat with the remaining batter, wiping the griddle with the oiled paper towel as needed.
NO-COOK OVERNIGHT OATMEAL
I love making up a few of these at a time for a quick, on-and-go breakfast. You can use different spices or maple syrup and your favorite berry or fruit.

- Heat oven to 350 degrees.
- Grease and flour a 9″ x 5″ loaf pan.
- Place butter, water and honey in a large bowl. Beat well. Beat in eggs.
- In a medium bowl, combine the flour, one cup of oats (reserving the 2 Tbsp. for the top), baking soda, baking powder and cinnamon. Mix well and add to the butter, honey, egg mixture.
- Beat at high speed for 3 to 4 minutes.
- Spread evenly in prepared loaf pan. Sprinkle top with the 2 tablespoons of oats.
- Bake at 350 degrees for 45 to 50 minutes or until toothpick inserted in center of bread comes out clean.
- Remove from oven and loosen sides of bread with a sharp knife. Let cool in pan on rack for 10 minutes.
- Remove from pan and let cool completely. Enjoy!
- One 9″ x 5″ loaf.

- Preheat oven to 350°. In a large bowl, beat sugar, oil, honey and egg until well blended. In another bowl, whisk flour, baking soda, cinnamon and salt; gradually beat into sugar mixture. Stir in 1 cup walnuts., Spread into a greased 15x10x1-in. baking pan. Bake until golden brown (edges will puff up), 10-12 minutes. - Add the cinnamon, cardamom, and ginger powder to the water to boil. Some people add their oatmeal to the water after it begins to boil, but I find that adding the oatmeal at the same time, before it begins to boil, actually gives the oatmeal a very smooth, rich flavor. Once you boil the oatmeal for about fifteen minutes and it boils down into a porridge, add a fruit of your choice. Great fruits to add are strawberries, blueberries, apples, or bananas while it's still warm so that it cooks into the oatmeal. You may also add golden raisins and/or almonds. This adds a little crunchy texture to it. Other things that you can add to your oatmeal are granola and flax seeds or wheat germ. Again, that adds somewhat of a nutty taste to it and adds a little bit of texture.
