5 teaspoons balsamic vinegar
1/2 teaspoon sugar
2 tablespoons olive oil
3/4 lb green beans
1 shallot, sliced
2 garlic cloves, smashed
salt, pepper
1/4 cup water, more if needed
1 tablespoon butter, cut in 4 pieces
1/4 cup toasted sliced almonds

Steps:

  • Add 1 tbsp balsamic vinegar to sugar, mix and set aside.
  • Heat a skillet on high heat, add oil.
  • Add garlic, shallots and green beans, salt and pepper; stir fry for a few minutes until beans start to shrivel.
  • Reduce heat to low, add water and balsamic mixture and cover, cook for 5 minutes more.
  • Stir in remaining balsamic, add butter and almonds, swirling pan to blend.

16 ounces green beans
1 tablespoon olive oil
1 clove garlic, minced
1 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon onion powder
Salt and freshly cracked black pepper

Steps:

  • Bring a large pot of water to a boil over medium heat. Add the beans and blanch them for 2 minutes. Immediately remove the beans from the water and add them to an ice bath to stop the cooking process. Drain. In a large saucepan, heat the olive oil over medium heat. Add the garlic and green beans. Cover, and cook for 10 minutes, stirring occasionally. Uncover, then stir in the vinegar, honey, onion powder, and salt and pepper, to taste. Cook to desired degree of doneness, about 4 to 6 minutes.

Steps:

  • Rinse and snap beans.
  • Mince garlic.
  • Mix garlic, vinegar and olive oil and set aside.
  • Steam beans until tender but firm, approximately 10-15 minutues.
  • Toss with balsamic vinegar dressing.
  • Can be refrigerated and served cold.

2 cups fresh whole, green beans
1 cup aged balsamic vinegar
1 lemon, juice of
1/2 lemon, zest of
1/4 cup red onion, finely diced
1/4 cup olive oil
1/4 cup honey
2 -3 garlic cloves, minced
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon basil
1 teaspoon dill
kosher salt

Steps:

  • Blanche or steam beans and set aside.
  • In saute pan, simmer onion and garlic in oil to caramelize, and then add remainder of ingredients.
  • Simmer until reduced approximately 50 percent by volume, or until glaze has reached a syrup-like consistency.
  • Add beans and toss to coat sprinkle with salt before serving.

This is a quick and easy way to spruce up green beans. And they disappear fast. My family devours these. I created this when I was looking for something different to do with green beans in a hurry. A nice side for company too!

1 lb green beans (I use frozen petite green beans)
1/4 cup balsamic vinegar (or to taste)
1/4 cup parmesan cheese, shredded
1 tablespoon butter

Steps:

  • Place green beans in microwave safe dish with the butter. Cover and cook on high for five minutes.
  • Add vinegar and parmesan cheese. Cook on high five more minutes (covered).
  • Stir to make sure the beans are well coated with the vinegar mixture.
  • Serve and enjoy!
  • These would work well with fresh green beans too. You would just need to adjust the cooking time.
  • Ingredient amounts can be adjusted to suit your taste. I will sometimes increase the parmesan cheese and use 2 tablespoons of butter.

2 tablespoons reduced-sodium soy sauce
4 garlic cloves, minced
1/4 teaspoon salt

2 pounds fresh green beans, trimmed

Steps:

  • Whisk together first 5 ingredients; set aside. In a 6-qt. stockpot, bring 10 cups water to a boil. Add beans in batches; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove beans and immediately drop into ice water. Drain and pat dry. , Coat stockpot with cooking spray. Add beans; cook, stirring constantly, over high heat until slightly blistered, 2-3 minutes. Add sauce; continue stirring until beans are coated and sauce starts to evaporate slightly, 2-3 minutes. Remove from heat.

2 lbs green beans
2 slices bacon
1/2 cup chopped green onion
3 tablespoons sliced almonds
2 tablespoons brown sugar
1/4 cup balsamic vinegar

Steps:

  • Cook beans in boiling water for 2 minutes.
  • Drain; rinse under cold water.
  • Drain well; set aside.
  • Cook bacon over medium-high heat until crisp.
  • Remove bacon, crumble.
  • Set aside.
  • Add green onions to bacon fat in skillet; saute 1 minute.
  • Remove skillet from heat; let cool slightly.
  • Add sugar and vinegar to skillet; stir until sugar dissolves.
  • Stir in crumbled bacon.
  • Pour vinaigrette over beans, tossing gently to coat.
