4 chicken breasts
1 medium red bell pepper, cored,seeded and cut into strips
1 medium yellow bell pepper, prepared as above
1/2 lb fresh mushroom, cleaned and cut into quarters
1 (14 ounce) can diced tomatoes, drained (preferably imported Italian)
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon fresh rosemary
1 teaspoon salt
fresh ground black pepper
additional salt
1 1/2 tablespoons honey

Steps:

  • Heat the oven to 425 degrees.
  • In a large shallow pan, mix all ingredients EXCEPT chicken, pepper, and honey.
  • Dredge the chicken breasts in the mixture, getting them coated with the liquid.
  • Nestle the breasts in the vegetable mixture, but do not completely bury them.
  • Salt and pepper them, then drizzle them with the honey.
  • Bake until the chicken is well browned and cooked through, about 50 to 60 minutes.

1/2 teaspoon garlic salt
1/8 teaspoon coarsely ground pepper
2 teaspoons canola oil
1 tablespoon balsamic vinegar
1 tablespoon honey
1/2 teaspoon dried basil

Steps:

  • Sprinkle chicken with garlic salt and pepper. In a large skillet over medium heat, cook chicken in oil until juices run clear, 4-7 minutes on each side. Remove and keep warm. , Add vinegar, honey and basil to the pan; cook and stir 1 minute. Return chicken to the pan; heat through, turning to coat with glaze.

¼ cup balsamic vinegar
¼ cup olive oil
¼ cup honey
½ teaspoon dried thyme
½ teaspoon dried rosemary
2 pounds bone-in chicken thighs, or more to taste
salt and pepper to taste

Steps:

  • Beat balsamic vinegar, olive oil, honey, thyme, and rosemary together in a bowl until smooth; pour marinade into a resealable plastic bag.
  • Season chicken thighs with salt and black pepper; add to marinade in plastic bag. Squeeze bag to remove air and seal. Marinate chicken in refrigerator for 2 to 8 hours.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour chicken and marinade into a baking dish.
  • Bake chicken in preheated oven until no longer pink at the bone and the juices run clear, 35 to 40 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1/4 cup balsamic vinegar
1/4 cup honey
3/4 cup crushed corn flakes

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, mix honey and vinegar until blended (this will take a few minutes to combine).
  • Dip chicken breasts in honey mixture until coated.
  • Then coat in corn flakes Put in 8 x 8 pan.
  • Repeat with all chicken breasts.

5 tablespoons butter
4 bone-in chicken breasts (skin on or removed)
seasoning salt (or use white salt)
black pepper
1/2-1 teaspoon garlic powder
1 1/2 cups buttermilk, divided
3/4 cup flour
1 (10 ounce) can cream of mushroom soup, undiluted
1 (10 ounce) can sliced mushrooms, well drained (squeese out excess moisture with hands)
1/2 teaspoon black pepper (can use more)
1/4 cup grated parmesan cheese (or to taste)

Steps:

  • Set oven to 425 degrees.
  • Melt butter in a greased 13 x 9-inch baking dish for about 5 minutes or until the butter is hot and melted.
  • Season the breasts with seasoned salt, pepper and garlic powder.
  • Dip the chicken pieces in about 1/2 cup buttermilk, then dredge in flour.
  • Arrange the chicken in baking dish with melted butter breast-side down.
  • Bake in a 425 degree oven for 25 minutes; remove from oven turn chicken over and bake for another 10 minutes more.
  • In a bowl stir together 1 cup buttermilk with the undiluted soup, well drained mushrooms and black pepper to taste.
  • After 10 minutes of baking, pour the sauce over the chicken, then sprinkle with Parmesan cheese.
  • Return to oven and bake for another 10-15 minutes or until the chicken is done and the sauce is heated through and bubbly.

1/4 cup KRAFT Balsamic Vinaigrette Dressing
2 Tbsp. honey
3 cloves garlic, minced
2 tsp. finely diced red onion
4 small boneless skinless chicken breasts
1 lb. green beans, ends trimmed
2 cups baby carrots
1 pt. grape tomato
seasonings to taste

Steps:

  • In a small bowl add, dressing, honey, garlic and onion.
  • Heat a large non-stick skillet over high heat. Add half the dressing mixture. Cook chicken evenly in the skillet and cook, turning a few times until the chicken is cooked through Remove chicken from the skillet and transfer to a large serving platter while you cook the veggies. Reduce the heat to medium.
  • Add the remaining dressing mixture to the skillet. Add the green beans and carrots to the skillet. Season to taste and cook, stirring frequently until the vegetables are crisp tender and coated in sauce, about 5 minutes. Add the chicken and tomatoes to the skillet, flipping chicken and veggies to coat in the sauce and cook one more minute. Remove from heat and serve immediately.
