This crumble is perfect for warming you in winter. The crumble topping is made from the Jordans Honey Country Crisp and honey, it is best served with silky soft cinnamon cream.

125g butter
4 eating apples, thinly sliced
2 pears, thinly sliced
100g honey
80g light brown soft sugar
½ tsp vanilla extract
150g plain flour
100g Jordans Honey Country Crisp
1tsp ground cinnamon
200ml double cream
Honey, to serve

Steps:

  • Preheat the oven to 180 C/ fan 170 F/ Mk 4. Butter a 1 litre ovenproof baking dish with 25g of the butter.
  • Toss the apples and pears in the honey, 30g of the sugar, and the vanilla extract. Spoon into the baking dish and bake for 10 minutes.
  • Meanwhile, rub together the remaining butter with the flour. Stir in the remaining sugar, and the Jordans Honey Country Crisp. Spoon this over the apples and pears in the dish, and bake for a further 30 minutes.
  • To serve, whip the cream until thick, and stir in the cinnamon. Sweeten with extra honey if desired. Serve the crumble warm with the cream on the side.

Steps:

  • Preheat oven to 350°F
  • To prepare topping: Combine oats, walnuts, brown sugar, flour and cinnamon in a medium bowl.
  • Drizzle with oil and stir until evenly moist.
  • To prepare filling: Combine pears, maple syrup, raisins, flour, lemon juice and ginger in a large bowl and mix well.
  • Transfer the mixture to a 9-by-13-inch baking dish.
  • Sprinkle the topping over the pears.
  • Bake the crumble until the pears are tender and the topping is golden, 45 to 50 minutes.
  • Let stand for at least 10 minutes before serving.
  • Serve warm as is or you can add a scoop of good low-fat ice cream to the top.

For the crumble
225 g plain flour
90 g caster sugar
1 pinch salt
1 teaspoon powdered ginger
115 g unsalted butter
For the filling
100 g sugar
100 ml water
4 nice ripe pears, peeled, cored and cut into chunks
5 pieces stem ginger in syrup, finely chopped
1 lime, juice and zest of, plus extra for serving

Steps:

  • You can't go wrong with an old-fashioned crumble. Everyone loves it, and it's lovely and easy!
  • Preheat your oven to 200ºC/400ºF/gas 6.
  • Sift the flour into a bowl and add the sugar, salt and ginger.
  • Cut the cold butter into chunks and rub it into the flour mix with your hands until you get a mixture that looks a bit like fine breadcrumbs. This is the crumble topping.
  • To make the filling, boil the water and sugar together, then carefully drop in the pear chunks and simmer gently for a couple of minutes.
  • Add the chopped ginger and the lime zest and juice to the pan and stir. Spoon the mixture into one large ovenproof dish or four small ones.
  • Sprinkle the crumble topping over the top of the fruit, piling it high in the middle of the dish and leaving space at the edge for the caramel to bubble up.
  • Bake in the preheated oven for 25 to 30 minutes until the pears are cooked and bubbling and the crumble is golden on top. Serve with custard or a dollop of crème fraîche with lime zest grated over, if you like.
  • Tip: This crumble will work well with apples instead, if you prefer.

700g (or 4 large) ripe English pear, peeled and cubed
100g golden granulated sugar
250g blackberry
200g plain flour
100g unsalted butter, cold, cut into small pieces
85g shelled pistachio, roughly chopped
100g demerara sugar
ice cream, to serve (optional)

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Place the pears in a medium-size pan, add the granulated sugar and cook on a medium heat until the fruit starts to soften and releases its juices, about 10 mins. Add the blackberries and bring back to the boil, then remove from the heat. Spoon the fruity mixture into 4 individual ovenproof ramekins, or 1 large baking dish.
  • Place the flour, butter and a pinch of salt in a large bowl and rub together with your fingers until the mixture resembles coarse breadcrumbs. Add the pistachios and demerara sugar, then stir to combine.
  • Sprinkle crumble evenly over the cooked fruit. This can be done up to 1 day ahead, or frozen for up to 1 month. Bake for 20-25 mins if small, 40 mins if large, until golden. If baking from frozen, add 15 mins cooking time. Remove from the oven, cool slightly, then serve with ice cream, if you like.

4 -5 pears (if using other mixed fruits instead, just be sure to have about 4 lbs total)
3 tablespoons lemon juice
1/2 cup sugar

1 dash cinnamon (or any other spice you love!)
2/3 cup flour
3/4 cup brown sugar
1 pinch salt
1 teaspoon cinnamon

Steps:

  • Prepare fruit (peel, pit, whatever it takes). If large, cut into 1/4 thick slices.
  • Toss in a bowl with lemon juice, sugar and raisins and a bit of nutmeg and cinnamon (I usually add allspice because I love it).
  • Combine the flour, sugar, salt and spices.
  • Cut in the butter and mix till mixture resembles coarse cornmeal. There should be no big chunks of butter left. (I usually do this with my hands - don't have a food processor).
  • Sprinkle in the ice water, mix till the crumble mixture holds together and forms little clumps.
  • Add the rolled oats and mix. If the mixture seems sticky, add more oats.
  • Spread fruit evenly in a large glass or ceramic baking dish.
  • Scatter topping evenly over the fruit, leaving some of it in larger chunks and some in fine crumbles.
  • Bake the Crumble at 375 for about 40-45 minutes or until the top is crisp and brown and the juice is bubbling up around the edges.
  • Serve it hot or warm, with ice cream, whipped cream, or all by itself.

½ cup shredded unsweetened coconut
⅓ cup dried cherry
2 tbsp flax seed

4 such as Bosc, D'Anjou or Barlett ripe pears

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a food processor, combine the oats, hazelnuts, walnuts, shredded coconut, cherries, flax seeds, cinnamon, and salt. Pulse until finely ground.
  • Add the coconut oil, honey, and vanilla, and pulse until just combined. The mixture should hold together when squeezed between your fingers.
  • Cut the pears in half lengthwise. Using a tablespoon, scoop out the cores. With a paring knife, cut a "v" shape around the edges of the stem, cutting downward on an angle. Remove the stems.
  • Set the pears in a baking dish, cut-side up. Fill each with ¼ cup (30 grams) of the crumble topping, pressing lightly into the pears.
  • Bake for 30-35 minutes, or until the topping is golden brown and the pears are tender when pierced with a paring knife.

2 tbsp brown granulated sweetener
½ lemon (juice only)
25 g plain flour
20 g oats
15 g reduced fat spread
1 cm piece of root ginger (peeled and grated)
2 ginger snap biscuits (roughly crushed)
60 ml water

Steps:

  • Pre-heat the oven to 180ºC.
  • Put the pears in a saucepan along with the water, lemon juice, grated ginger and 1tbsp of sweetener, bring to the boil and cook over a medium heat for 5 minutes, until the pears are soft and the liquid has turned syrupy.
  • While the pears cook, put the flour in a mixing bowl and rub in the reduced fat spread until it resembles breadcrumbs.
  • Stir in the oats, ginger snaps and the remaining sweetener.
  • Divide the pear between the ramekins and scatter the crumble on top of the pears. Place the ramekins on a baking sheet and bake in the oven for 15 minutes until the top is golden.
  • Serve with a dollop of fat free Greek yoghurt or with custard.

4 ripe pears (650g) I used D'Anjou
1 tsp vanilla extract
1 Tbsp tapioca flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg (optional)
1/4 tsp ground ginger (optional)
1/4 tsp salt
1 cup blanched almond flour (95g)
1/4 cup tapioca flour (30g)
1/2 cup flaked coconut (34g)
1/2 tsp ground cinnamon
1/4 tsp salt
1/3 cup non hydrogenated shortening
2 Tbsp maple syrup

Steps:

  • Preheat oven to 350 degrees F.
  • Chop pears, removing the stem and core, then place in a large mixing bowl. Add remaining filling ingredients and mix until the pears are well coated. Pour the filling into an 8" x 8" baking pan.
  • Combine the almond flour, tapioca flour, flaked coconut, cinnamon and salt in a large mixing bowl. Add in the shortening and maple syrup. Mix with a fork, then use your hands. Once the dough is barely mixed together (still slightly crumbly), use your hands to crumble the topping over the filling. Gently press down with your hands.
  • Place the crumble in the oven and bake at 350 degrees F for 35 minutes.
  • Cool slightly and serve warm, or refrigerate overnight and serve chilled.

180 g plain flour (all purpose flour)
80 g light Muscovado sugar
80 g cold butter (cut into cubes)
40 g flaked almonds (toasted)
700 g ripe pears (5 medium pears) (peeled and core removed)
45 g butter
40 g soft light brown sugar
½ level tsp mixed spice
¼ level tsp cinnamon
1 level tbsp cornflour (cornstarch)

Steps:

  • Preheat the oven to 190 degrees C / 374 F. I use a fan assisted electric oven please adjust the temperature according to your own oven.Toast the flaked almonds in a dry frying pan tossing all the time until they are golden.
  • Add the flour, butter and sugar to a large mixing bowl. Rub the butter into the flour and sugar mix until you have a rough breadcrumb texture. Stir in the almonds. Then place the bowl in the fridge.
  • Heat 45g of butter in a 25cm / 10 inch cast iron skillet, swirling all the time. Once the butter has melted and is bubbling add the spices, stir well. Now add the pears and the soft light brown sugar. Carefully mix well.When the liquid is bubbling around the pears, sprinkle the cornflour over the pears and mix well again.
  • Turn off the heat then take the crumble mixture out of the fridge. Sprinkle all of the crumble over the pears. Place the skillet on the middle shelf in the oven. Bake for 30 minutes turning the skillet around halfway through cooking. The crumble is done when the topping is golden, the juice is bubbling and the pears are tender.
  • Serve warm with ice cream or cream.

500 mL (2 cups) Compliments Balance Original Granola Cereal
2 mL (1/2 tsp.) ground cardamom
30 mL (2 tbsp.) lemon juice
30 mL (2 tbsp.) sugar
Red Anjou pears, cubed
3 Bosc pears, cubed
30 mL (2 tbsp.) cornstarch

Steps:

  • Preheat oven to 180°C (350°F). In a large bowl, mix granola, wheat germ, sunfl ower seeds, brown sugar, flour and butter. Reserve. In another bowl, stir together pears, lemon juice, sugar, cardamom and cornstarch. Pour pear mixture into a square ovenproof dish measuring 20 cm x 20 cm (8 inches x 8 inches). Cover with granola mixture, pressing lightly. Cover with aluminum foil and bake in the oven for 30 minutes. Remove aluminum foil and continue cooking for 20 minutes, or until top of crumble is golden and pears are cooked. Serve with vanilla yogurt or ice milk. Variation: Vary the fruit according to season, substituting berries, stone fruit or orchard fruit.

150g (5oz) frozen raspberries

Steps:

  • Set the oven to Gas Mark 5 or 190°C.
  • To make the crumble: Mix the flour and ground almonds in a bowl. Rub in the butter, then mix in all but 3 tbsp of the demerara sugar. Set aside.
  • Peel, quarter and core the pears and apples. Thickly slice the apple and put all the fruit in a large ovenproof dish (preferably shallow) with the 3 tbsp of demerara sugar and 5 tablespoons water.
  • Spoon the crumble mixture over the top and sprinkle with the flaked almonds. Bake on a baking sheet for 50-60 mins until the juices start to bubble up through the crumble. Serve warm or cold with custard or cream, if you like.

  • Grease and line the base of a 23cm round, deep cake tin.
  • Cut the apples and pears into slices and toss with ½ the cinnamon and set aside.
  • Rub the butter into the flour with your fingertips until it resembles fine breadcrumbs.
  • Add the remaining cinnamon and sugar; mix well and set aside.
  • Beat the butter and sugar in a large bowl until pale.
  • Add the remaining ingredients and beat until combined.

  • Bake for 50-55 minutes in the middle of the oven until firm and golden.
  • Cool in the tin before transferring to a wire rack.
