SWEET POTATO AND APPLE CASSEROLE
This recipe from sunshinerecipes.com sounds like a delicious combination of sweet potatoes and apples. My kitchen is piled full of desserts now so I haven't made this yet. Hope it's good!

Steps:
- Preheat the oven to 350 degrees.
- Boil the potatoes until they are tender and remove skins and cut into slices.
- Peel the apples and remove the core and slice into rings.
- In a greased 9 x 6 inch baking dish alternate the potatoes and apples.
- Mix together the orange juice, sugar, cinnamon allspice and rum and l tablespoon melted butter and pour over the potatoes and apples.
- Bake the Sweet Potato and Apple Casserole for 30 minutes or until brown and liquid is absorbed.
GLAZED SWEET POTATO AND APPLE CASSEROLE

- Preheat oven to 325 degrees F.
- Boil sweet potatoes until tender but still firm and allow them to cool. Then peel, slice, and place in a shallow baking dish. Core and slice the apples, then sprinkle salt and lemon juice over them. In a skillet bring butter to a slow sizzle and toss apple slices around in the pan until slightly soft. Arrange apples with the sweet potatoes. Then add molasses to butter remaining in pan and bring to a boil. Pour over apples and sweet potatoes, coating well. Sprinkle brown sugar and pecans on top. Bake for 30 minutes or until brown and bubbly on top.
SWEET POTATO AND APPLE CASSEROLE

- Preheat the oven to 350 degrees F. Grease a 13- by 9- by 2-inch baking dish with margarine.
- Peel the potatoes and yams. Place the potatoes and yams in a large pot of water. Bring to a boil; reduce the heat. Boil gently until the potatoes and yams are tender, about 20 minutes. Remove the potatoes and yams from the water. When cool enough to handle, slice into rounds and set aside. Peel, core and slice apples.
- Place one layer of yams, apple slices and then sweet potatoes in the greased baking dish; repeat and make at least two layers of each. Top with the golden raisins.
- To make a glaze, in a small pan stir together the honey, orange juice, cinnamon and vanilla extract. Stir over low heat until the consistency is even. Pour the glaze over the yam, sweet potato and apple slices.
- Bake, uncovered, until browned, 15 to 20 minutes. Remove from the oven and sprinkle with powdered sugar. Serve immediately.
SWEET POTATO - ORANGE - APPLE CASSEROLE

- Remove skins from 2 large, cooked sweet potatoes (about 1 1/2 pounds). Peel and slice 2 cooking apples. Slice sweet potatoes 1/2 inch thick. In a buttered 9 inch pie pan arrange layers of sweet potatoes and apples. Dot each layer with butter using about 1 tablespoon butter in all. Sprinkle over each layer this mixture made by combining: 1/2 tsp. cinnamon Pour over all 1/2 cup orange juice. Bake at 375 degrees for 15 minutes. Remove from oven and dot with an additional tablespoon butter. Return to oven and continue baking 15

SWEET POTATOES WITH CARAMELIZED APPLES

- Heat oven to 425 degrees. Bake potatoes until soft, 40 to 45 minutes. When cool enough to handle, peel and place flesh in a medium bowl; add salt, and mash with a fork.
- Meanwhile, slice apples into 1/8-inch-thick wedges and place in a medium bowl. Add lemon juice and toss to combine.
- In a medium skillet, melt 3 tablespoons butter over medium-high heat. Add 2 tablespoons brown sugar and cook, stirring, until sugar dissolves. Cook apple slices in the butter and sugar in 3 or 4 batches, until golden and caramelized, about 1 minute on each side. As they finish cooking, transfer to a plate and set aside.
- In a medium skillet, melt 3 tablespoons butter over high heat. Add 2 tablespoons brown sugar and cook until sugar dissolves. Stir in 4 tablespoons cream and the Calvados and cook until slightly thickened, about 1 minute. Remove from heat and add to sweet potatoes, mixing well to combine. Transfer potato mixture to a buttered 3-quart ovenproof casserole. Arrange apple slices over potatoes; set aside.
- In a medium skillet, melt remaining 3 tablespoons butter over medium heat. Add remaining 2 tablespoons brown sugar and cook until dissolved. Add remaining 2 tablespoons of cream and cook, stirring, for 30 seconds. Stir in orange juice and cook for 1 to 2 minutes, until thickened and dark brown. Pour over the apples and cover with aluminum foil.
- Bake until heated through, about 30 minutes. Remove from oven and serve immediately, or let stand at room temperature for up to 30 minutes before serving.

- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.

ORANGE-GINGER SWEET POTATO CASSEROLE
This is my version of a traditional Thanksgiving favorite. I love sweet potatoes, but find I don't need any sweetener, so I substituted orange juice. You'll find yourself serving this casserole quite often! You can cut the prep time on serving day by cooking the sweet potatoes up to two days in advance; simply remove their skins and store in the fridge in an airtight container until needed.

- Preheat oven to 450 degrees F (230 degrees C). Place oven rack in middle position. Lightly grease a 1 1/2 quart baking dish, and set aside.
- Line a rimmed baking sheet with foil. Pierce each sweet potato several times with a fork, and place on the prepared baking sheet.
- Roast the sweet potatoes in preheated oven until easily pierced with a fork, 1 to 1 1/2 hours.
- Remove sweet potatoes from the oven, and cool about 15 minutes. Lower oven temperature to 375 degrees F (190 degrees C).
- When sweet potatoes are cool enough to handle, cut in half, and scoop flesh into the bowl of a food processor. Discard potato skins. - Heat the oven to 400 degrees. Oil a 3-quart gratin or baking dish with walnut oil. Toss together the sweet potatoes, apples and pear in a large bowl. Season with salt to taste.
- In a small saucepan or in a microwave at 50 percent power, heat the honey (or agave nectar) and the walnut oil together just until warm. Add to the sweet potato mixture, add the orange zest and toss together well until the fruit and vegetables are well coated. Scrape into the baking dish, making sure to scrape out all of the honey and oil using a rubber spatula. Pour on the orange juice. Set the baking dish on a sheet pan and place in the oven.
- Bake 1 hour, setting the timer so that you remember to stir the mixture at 15-minute intervals. Cover the pan with foil and continue to bake for another 1/2 hour, or until the sweet potatoes are thoroughly tender and the liquid in the pan is syrupy. Allow to cool for about 10 minutes (or longer) before serving.
