Homemade Spinach Fettuccine is made from scratch and is perfect with a creamy alfredo sauce or italian gravy. This homemade fettuccine pasta recipe is made with just three ingredients and has the brightest green color that is sure to be your new favorite.

3 ounces well drained cooked or frozen spinach (approximately 4 cups fresh spinach)
3 large eggs
2 - 2½ cups all purpose flour (plus extra for rolling and cutting)

Steps:

  • In a food processor, pulse the spinach until pureed.
  • Add the eggs and 2 cups of the flour and pulse until the dough just comes together. Add in more flour as needed until the dough forms a ball and is no longer sticky.
  • Remove dough from the food processor and turn out onto a floured surface. Cut dough into 8 equal pieces and form into rectangles. Let rest for 10 minutes.
  • Starting with the widest setting on your pasta roller (usually 1), run one of the rectangles of dough through the roller. Fold the dough in half and then in half again to make a smaller rectangle. Run the rectangle through the roller again and then repeat this process another three times until the dough is smooth. If the dough is sticking or if it starts to rip, sprinkle generously with flour and continue.
  • Then, move the roller to the next setting (2) and run the pasta sheet through once to thin it out. Continue to do this with the next settings, until the desired thickness is acheived. A 3 or 4 is recommended for fettuccine noodles. Repeat the rolling process with the remaining pieces of dough.
  • Next, run the rolled out pasta sheets through the cutter and separate the noodles. Add extra flour to the sheets if they are sticking together. Lay each set of cut noodles in nests on a sheet pan lined with parchment paper and let rest while preparing for cooking.
  • Fill a large pot with 4 quarts of water and 1 Tablespoon of kosher salt. Place on the stovetop over high heat and bring to a boil.
  • Add in fresh noodles to the boiling salted water, return to a boil and cook for 3-5 minutes or until noodles float to the top and are cooked through.
  • Drain noodles from the pasta water and toss with your favorite sauce.

2 eggs
1 ½ teaspoons extra-virgin olive oil
½ teaspoon kosher salt
2 cups all-purpose flour, or as needed

Steps:

  • Combine water and ice in a bowl. Preheat a skillet over medium heat; add spinach. Cook, stirring continuously, until spinach turns bright green, about 30 seconds. Plunge into ice water bath; remove when spinach is lukewarm. Squeeze out excess moisture with cheese cloth.
  • Combine spinach, eggs, olive oil, and salt in a food processor; blend until smooth. Add flour; blend until dough no longer sticks to the blades, adding flour as needed.
  • Roll dough into a ball; wrap in plastic wrap. Rest at room temperature for 20 minutes.
  • Remove plastic wrap from dough. Transfer to a work surface generously dusted with flour; cut dough into 4 pieces with a sharp knife. Roll out dough with a rolling pin to 1/4-inch thickness; shape into rectangles.
  • Dust pasta maker rollers with flour. Run the dough rectangles through a pasta maker on the widest setting. Repeat rolling dough through rollers, gradually reducing the setting to desired thickness. Change pasta maker's attachment to preferred noodle shape; cut pasta with pasta maker.
  • Bring a large pot of water to a boil. Lower pasta gently into water; use a spoon to keep noodles from sticking together. Cook until pasta is firm but soft, 3 to 6 minutes. Remove from the water with tongs; transfer to a bowl.

1 pound spinach fettuccine
2 carrots, peeled
2 medium zucchini
2 tablespoons extra-virgin olive oil
2 tablespoons butter
2 shallots, thinly sliced
2 cloves garlic, finely chopped
1 cup frozen green peas
1/2 cup dry white wine
1 cup vegetable or chicken stock
Freshly ground black pepper
1/2 cup grated Parmigiano-Reggiano, plus some to pass at table
1/4 cup chopped flat-leaf parsley, a generous handful

Steps:

  • Bring water for pasta to a boil. Salt the water add the pasta and cook to al dente, about 7 to 8 minutes. Use a vegetable peeler to make ribbons of carrot and zucchini. Keep the vegetables flat on counter and run the peeler the length of the vegetable. Drop the carrots and zucchini into the pasta water for the last 4 minutes of cooking time.
  • Heat a medium skillet over medium heat with extra-virgin olive oil and butter. Saute the shallots and garlic 3 to 4 minutes then add peas and heat through, 2 minutes, stir in wine, reduce for half a minute and stir in stock. Toss drained pasta and vegetables with the sauce, season with salt and pepper, and combine with cheese and parsley.

1 1/2 (12-ounce) packages spinach fettuccini, 18 ounces total
2 tablespoons butter
2 cloves garlic, finely chopped
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup cream
8 ounces Gorgonzola, cut into small pieces
A few leaves fresh sage, finely chopped
Freshly ground black pepper
4 handfuls baby spinach leaves

Steps:

  • Heat water to a boil for pasta, salt water and cook pasta to al dente.
  • Heat butter in a large sauce pot with butter, add garlic, cook 2 minutes then whisk in flour, cook 1 minute. Whisk in stock then cream, bring to a bubble and stir in Gorgonzola, about 2 minutes until melted. Stir in sage and a little pepper and cook 3 minutes more.
  • In a serving bowl toss hot pasta with sauce and fresh spinach to wilt in.

6 cups baby spinach (3 3/4 ounces)
3 large eggs plus 1 egg yolk
1 tablespoon extra-virgin olive oil, plus more for drizzling
2 1/4 cups all-purpose flour, plus more as needed

Steps:

  • Bring a large pot of salted water to a boil and fill a medium bowl with ice water. Add the spinach to the pot and cook until wilted, about 30 seconds; drain, then plunge into the ice water. Once chilled, remove the spinach to a kitchen towel and squeeze until dry.
  • Combine the blanched spinach, whole eggs and egg yolk, olive oil and a big pinch of salt in a blender and blend until smooth. Mound the flour on a work surface. Make a well in the center, 4 to 5 inches in diameter with high walls. Add the spinach mixture to the well and, using a fork, gradually mix flour from the inner edge of the well into the wet ingredients. Continue incorporating the flour until a rough sticky dough forms. Use a spatula or bench scraper to gather up any loose bits of flour and dough, then use your hands to gather and knead the whole thing together. (If the dough is too sticky, add a little more flour, 1 tablespoon at a time.) Knead until a smooth and slightly tacky bright green dough forms, about 6 minutes. Wrap the dough in plastic wrap and let rest at room temperature for at least 30 minutes.
  • Cut the dough into 4 equal pieces; press each into a rough rectangle. Cover 3 of the pieces and set aside. Lightly flour the remaining piece of dough and feed the dough through the widest setting on a pasta maker. Fold the strip in half and feed it through again. Move to the next setting and feed the dough through this setting twice without folding, lightly flouring as needed. Repeat until you are at the third-to-last setting. The dough will be thin but not transparent, about 1/8 inch thick. Lightly flour the pasta sheet, then transfer to a floured baking sheet; halve the sheet crosswise if it's hanging off the baking sheet. Repeat the process with the remaining 3 pieces of dough.
  • Attach a long noodle cutter to the pasta maker. Feed each sheet of dough through the cutter, gathering the pasta on the other side. Lightly sprinkle with flour and shape into a loose nest. Return to the baking sheet.
  • Bring a large pot of salted water to a boil. Add the pasta, gently separating the strands with tongs. Cook until just tender, 2 to 3 minutes. Reserve 1 cup cooking water, then drain. Toss with your sauce, adding the reserved cooking water as needed to loosen.

1 medium onion, thinly sliced
2 cloves garlic, minced
1 tablespoon olive oil

1/4 teaspoon crushed red pepper flakes (optional)
3 cups spinach, coarsely chopped
2 tablespoons parmesan cheese

Steps:

  • Cook pasta according to package directions.
  • Drain; keep warm.

But grate carrots, steam with water in microwave and then mash. Mash cooked sweet potatoes, use less water in sweet potatoes.

2 cups fresh spinach, washed, dried, stems removed. Press spinach down in cup when measuring
1/2 teaspoon salt
2 large eggs, beaten
2 tablespoons margarine
2 3/4 cups flour
1/3 cup water
1/4 cup flour

Steps:

  • Put spinach and salt in blender. Pulse a few times until finely chopped, not totally a clear liquid.
  • If cooked mashed carrots 1 1/2 cups, if cooked mashed sweet potatoes, 1 1/4 cups.
  • (The salt brings out the water in the spinach).
  • In large bowl, add flour.
  • Make a well in the middle, a deep hole.
  • Add beaten eggs, margarine and spinach mix (or carrot or sweet potato mix.).
  • Fold the flour in all four direction over the well.
  • Then add the water.
  • Keep folding the flour over and over.
  • If it is too wet, add 1/4 cup flour. Then use hands to mix.
  • Knead dough with the back of your palms until it becomes smooth. If it is sticky, add a little more flour.
  • Form into a large ball and place in a bowl.
  • Cover and let rest for about 10 to 15 minutes.
  • Divide dough, into 3 portions. Turn out each portion on a floured board, roll to.
  • about 1/4 inch thickness. Put through a pasta machine if you have one. If not, try to roll out to 1/8 inch thickness and cut.
  • Into 1/2 inch wide noodles. You can dry in the air, I prefer to dry on a tray in the oven at 200°F--it is faster. I turn the noodles a few times before they are dry.
  • Note: Some spinach has more water. If it has larger leaves it contains more water than smaller leaves.That is why you need the addition of more flour if needed.
  • Store in a air tight container.
