I came up with this chocolate and peanut butter treat when I needed a unique, fast dessert for a special dinner. The filled tortillas take just minutes on the grill and get a chewy consistency from marshmallows. -Laurie Gwaltney, Indianapolis, Indiana

1/2 cup creamy peanut butter
4 flour tortillas (8 inches)
1 cup miniature marshmallows
1/2 cup miniature semisweet chocolate chips
Vanilla ice cream
Chocolate shavings, optional

Steps:

  • Spread 2 tablespoons of peanut butter on each tortilla. Sprinkle 1/4 cup marshmallows and 2 tablespoons chocolate chips on half of each tortilla. , Roll up, beginning with the topping side. Wrap each tortilla in heavy-duty foil; seal tightly. , Grill, covered, over low heat for 5-10 minutes or until heated through. , Unwrap tortillas and place on dessert plates. Serve with ice cream. Garnish with chocolate shavings if desired.

1/2 cup almond paste
4 (8 inch) flour tortillas
1 cup miniature marshmallow
1/2 cup milk chocolate chips
1/2 cup coconut flakes
whipped cream, for topping
vanilla ice cream, for serving

Steps:

  • Preheat a grill to low.
  • Spread almond paste evenly on each tortilla.
  • Sprinkle 1/4 of the marshmallows and 1/4 of the chocolate chips and 1/4 of the coconut on half of each tortilla.
  • Roll the tortilla up and wrap in heavy-duty foil; seal tightly.
  • Grill over low heat until heated through, about 5 to 10 minutes.
  • Remove foil and place on a plate.
  • Garnish with fresh sweetened whipped cream or prepared whipped topping.
  • Serve vanilla ice cream on the side.

1-1/2 teaspoons minced fresh basil
1-1/2 teaspoons olive oil
1-1/2 teaspoons molasses
3/4 teaspoon minced fresh thyme
1/8 teaspoon salt
1/8 teaspoon pepper
1 medium zucchini, cut lengthwise into 1/4-inch slices
1 medium sweet red pepper, cut into 1-inch pieces
1 medium red onion, cut into 1/2-inch slices
4 ounces whole fresh mushrooms, cut into 1/2-inch pieces
4 ounces fresh sugar snap peas
1/2 cup crumbled feta cheese
3 tablespoons reduced-fat cream cheese
2 tablespoons grated Parmesan cheese
1 tablespoon reduced-fat mayonnaise
4 flour tortillas (8 inches)
4 romaine leaves

Steps:

  • In a large shallow dish, combine the first 7 ingredients; add vegetables and turn to coat. Cover; refrigerate for 2 hours, turning once. , Drain and reserve marinade. Transfer vegetables to a grill wok or basket. Grill, uncovered, over medium-high heat for 5 minutes. Set aside 1 teaspoon marinade. Turn or vegetables; baste with remaining marinade. This recipe is from Paula Deen & friends. I love this recipe because of all the good stuff in it. Almonds are low in saturated fat and contain many other protective nutrients. I usually grind the Almonds myself, I like it to be slightly course.

1 1/2 cups shredded cheddar cheese
2 tomatoes (diced)
1 cup shredded lettuce (toppings)
1/2 cup sliced dill pickles (toppings)

Steps:

  • In a large skillet, brown hamburger until no longer pink.
  • Add ketchup, mustard, onion, Worcestershire sauce, and salt and pepper.
  • Cook for about 2 minutes, until all combined.
  • Take a tortilla and line the middle with a small amount of cheddar cheese.
