This is one of my favorite foods when I am feeling blah. It is sweet and comforting and full of mild protein. Use custard cups or one casserole bowl.

2 cups milk
2 eggs, beaten
½ cup white sugar
1 pinch salt
1 dash vanilla extract
1 pinch ground nutmeg

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Whisk milk, eggs, sugar, salt, and vanilla together in a bowl until completely combined. Pour egg mixture into 6 custard cups; sprinkle tops with nutmeg. Place cups in a baking pan and fill pan with enough hot water to reach halfway up the sides of the custard cups.
  • Bake in the preheated oven until custards are set, about 1 hour. Cool completely.

Custard is a warm, creamy sauce made with eggs, milk and cream and poured over hot puddings and crumbles for delicious Irish desserts.

1 cup heavy whipping cream
½ cup whole milk
1 teaspoon pure vanilla extract
4 large egg yolks
1½ teaspoons corn starch
¼ cup sugar

Steps:

  • In a large saucepan heat the cream to just below simmering point. Do not let the cream boil.
  • While the cream is heating whisk the eggs, vanilla, corn starch and sugar together in a medium bowl.
  • Continue whisking the egg mixture with one hand, while gradually pouring the hot cream into the bowl. Whisk continually to prevent lumps.
  • Return the custard to the saucepan used to heat the cream. Over very gentle heat continue to whisk the custard as it thickens, keeping it smooth with vigorous whisking. Allow to heat just to simmering point.
  • Serve hot, poured over your favorite pudding. Custard can be prepared in advance and stored covered in the refrigerator. Reheat in a double broiler over simmering water, whisking as it heats.

Comfort food good warm or cold. Can make as a pie as well. Baking time is reduced because milk is scalded beforehand.

1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
2 1/2 cups milk, scalded
nutmeg
1 unbaked 9-inch pie shell, if making pie.I use Pillsbury from the refrigerated section in the grocery

Steps:

  • Mix well: eggs, sugar, salt, and vanilla.
  • SLOWLY stir in scalded milk.
  • Butter small baking pan (I'm sorry, I can't tell you exactly what size as I always triple this recipe for my large family).
  • Pour mixture into pan.
  • Dash nutmeg over top.
  • Bake at 475F for 5 minutes; Then reduce heat to 425F and bake for 10 minutes longer, or until knife inserted in the center comes out clean.
  • If making a pie, pour into 9" pie shell. Let pie set.

  • In a heavy saucepan over low heat, cook and stir milk and sugar until sugar is dissolved. Remove from the heat. 1 (4- by 1-inch) strip fresh orange zest
3 large egg yolks
1/4 cup sugar
1/2 teaspoon vanilla

Steps:

  • Bring milk with zest to a simmer in a small heavy saucepan over moderate heat. Remove from heat and let stand, covered, 20 minutes.
  • Whisk together yolks, sugar, and a pinch of salt. Whisk in milk with zest, then transfer mixture to cleaned saucepan.
  • Cook over moderate heat, stirring constantly, until custard thickens enough to coat back of a wooden spoon (170°F on an instant-read thermometer). 2 large eggs

Steps:

  • Scrape seeds from vanilla bean into a 2- to 3-quart heavy saucepan with tip of a paring knife, then add pod and half-and-half and bring just to a boil. Remove from heat.
  • Whisk together eggs and sugar in a bowl until well combined, then add hot half-and-half mixture in a slow stream, whisking constantly. Transfer custard to saucepan and cook over moderately low heat, stirring constantly with a wooden spoon, until thickened and custard registers 175°F on thermometer, 5 to 10 minutes (do not let boil).
  • Pour custard through a fine-mesh sieve into a metal bowl, discarding solids. Set bowl in a larger bowl of ice and cold water and stir custard until cool. Chill in refrigerator, covered, until cold, at least 1 hour.

CREME ANGLAISE ( VANILLA CUSTARD SAUCE)

A rich silky vanilla custard sauce to serve with poached fruits, cakes and puddings, creme anglaise is very easy to make. But remember, once the egg yolks are added, the sauce must never come to a boil or the eggs will curdle. It is useful to have on hand a large bowl filled with ice cubes into which you can plunge the saucepan and stop the cooking immediately.

1 1/2 cups milk
1/2 cup heavy cream (or whipping cream)
1/2 vanilla beans, split legthwise or 1 teaspoon vanilla extract
4 large egg yolks
1/2 cup sugar

Steps:

  • Pour the milk and cream into to medium-sized saucepan.
  • If using vanilla bean, scrape the seeds into the pan and then add the bean itself.
  • Heat the milk until bubbles appear around the edge.
  • Remove the pan from the heat and set aside for 15 minutes to let the milk absorb the vanilla.
  • Remove and discard the bean.
  • Beat the egg yolks with the sugar and vanilla extract, if using, until light and foamy, about 3 minutes.
  • Starting with a few tablespoons, very gradually stir in the hot milk.
  • Return the mixture to the saucepan and cook over medium heat, stirring constantly with a wooden spoon, until the custard starts to thicken slightly.
  • Be very careful not to let the custard come to a boil or it will curdle.
  • Allow the custard to cool completely and refrigerate.
  • Variation: Flavor your custard with the grated zest of 1/2 lemon or orange instead of the vanilla.
  • Or add a TBS or so of Grand Marnier, kirsch, or Kahlua to the finish custard.

3 eggs, plus 1 yolk, lightly beaten
1 vanilla pod, split lengthways and seeds scraped out or 1 tsp vanilla bean paste
60g caster sugar
215ml whole milk
215ml double cream
nutmeg, to grate

Steps:

  • Heat the oven to 150C/130C fan/gas 2. Beat together the eggs, vanilla and sugar with a wooden spoon until combined. Mix in the milk and cream and pour into a medium-sized dish. Finely grate over a generous grating of nutmeg.
  • Half-fill a roasting tin with water to make a bain-marie. Place the dish in the tin so that the water comes about three-quarters of the way up the sides of the dish. Bake for 45-50 mins, or until just set with a slight wobble in the centre. Serve warm or leave to cool in the fridge overnight. Serve with poached fruit.

¾ cup white sugar
1 large egg
2 ½ cups all-purpose flour
4 eggs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease the bottom of a deep-dish pie plate.
  • Beat butter, sugar, and egg in a bowl until creamy. Blend in flour to form a dough, using your hands to knead it together at the end.
  • Roll pastry out on a lightly floured surface and place into the prepared pie plate so it covers the bottom and the sides.

My mother's recipe--eat on its own or pour over canned peaches or guavas or, my fave, bread pudding. If you are really grossed out by the possibility of flecks of egg white in your custard, you can either pass it through a fine-mesh sieve or substitute four yolks for the two whole eggs.

1/3 cup sugar
2 eggs, lightly beaten

Steps:

  • Have eggs ready in a bowl, and set aside where it will be within reach.
  • Using a whisk, combine milk, sugar and cornstarch in a medium saucepan over medium heat on stovetop. Allow milk to scald (heat to the point when tiny bubbles form around edges of pan). Whisk occasionally to prevent cornstarch from clumping on bottom edges of pan.

Pour mixture back into the saucepan and cook over medium-low heat, stirring constantly with a spatula, until slightly thickened and coats the back of the spatula, about 5 minutes. Pour into a medium bowl and set bowl in ice water bath. Let cool to room temperature, stirring occasionally. Stir in vanilla extract, if using.
  • Pour custard through a fine-mesh sieve into another bowl, cover, and refrigerate until serving.

CUSTARD

Custard is a British institution! Sponge puddings and crumbles just wouldn't be the same without it! This will make a custard of a pouring consistency. IMPORTANT: In order to have a smooth (not lumpy) custard, use a heavy-bottomed saucepan, and stir constantly! If you have to walk away from the stove, remove saucepan from heat.   • Pour custard into a jug or pitcher, and serve.
  • Tip: To prevent custard forming a skin as it cools, cover jug with plastic wrap.
